CORN CAKE
A very yummy, quick and easy and NOT low-cal recipe I got from the MyFoodDiary.com forums. Different from cornbread. This is soft and served out of the pan with a spoon. Too soft to cut into squares and eat out of hand. Eat with a fork.

Steps:
- Preheat oven to 350 degrees.
- Grease an 8 by 8 baking pan.
- Place the melted butter in a medium bowl and stir in the cans of creamed and whole kernel corn.
- Stir in the corn muffin mix and sugar.
- Cook in an 8 by 8 pan in the preheated 350 degree oven until the top is slightly browned. About 30-35 minutes.

Steps:
- Combine corn, onion, milk, with the beaten egg in a bowl.
- Combine flour, baking powder and salt in a separate bowl.
- Add corn mixture and mix just enough to moisten.
- Drop, by 1/4 cupfuls, onto a lightly greased griddle and fry until golden brown on both sides.
BAKED CORN CASSEROLE
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Prepare a 9-inch-square baking dish by spraying it lightly with pan spray or greasing it with a bit of extra butter.
- In a medium-sized saucepan over low heat, melt the butter.
- Add flour and whisk to create a roux.
- Slowly pour in the milk, stirring continually to incorporate the liquid.
- Add corn, sugar, salt, and pepper. Mix well, and cook for 5 minutes.
- Crack the eggs into a small bowl and whisk until they're well-beaten.
- Remove the pan containing the corn mixture from heat and add the beaten eggs. Pour into the prepared baking dish.
- Cook for 25 minutes, or until the center of the casserole is firm.

- Line two baking sheets with parchment paper or wax paper (or just spread a long sheet of it across the counter).
- In a large saucepan stir together sugar and corn syrup.
- Bring just to a boil over medium-high heat, stirring occasionally.
- Remove from heat immediately stir in peanut butter and vanilla.
- Add in cornflakes and potato chips and toss to coat well.
- Immediately scoop mixture out and drop by rounded spoonfuls (using two spoons or a cookie scoop) onto lined baking sheets.**
- Let set at room temperature. Store in an airtight container.

- In large bowl, combine flour, sugar, cornmeal, baking powder, and salt. Mix well with a fork and make a well in the center.
- In small bowl, whisk together milk, honey, oil, and egg. Pour mixture into center of dry ingredients and mix until just blended.
- Pour 1/4 cup batter onto griddle for each corn cake. Cook 2 minutes per side, until puffed up, golden brown and cooked through.

- Preheat oven to 375° F. Spray a 10'' cast iron skillet with cooking spray and set aside. You could also use a 9''x12'' baking dish, or something of similar size. Stoneware works well.
