1 cup powdered sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon vanilla extract or 1/4 teaspoon almond extract
food coloring

Steps:

  • Stir the powdered sugar and the milk until smooth.
  • Beat in corn syrup and vanilla until icing is smooth and glossy.
  • If it's too thick, add more corn syrup.
  • Divide icing into separate bowls and stir in food coloring as desired.
  • You can dip the cookies, paint them with a paint brush or spread them using a knife or the back of a spoon.

This cake frosting is named for the length of time it must be beaten in the final stage.

Number Of Ingredients 3

3/4 cup plus 2 tablespoons sugar
1 tablespoon light corn syrup
3 large egg whites, room temperature

Steps:

  • In a small, heavy-bottom saucepan, combine 3/4 cup sugar, corn syrup, and 4 tablespoons water. Place over medium heat, stirring occasionally, until sugar has dissolved, about 4 minutes. Rub a bit of the mixture between your fingers, making sure any graininess has disappeared. Raise heat, and bring to a boil without stirring. Continue boiling, occasionally washing down the sides of the pan with a pastry brush dipped in cold water to prevent sugar from crystallizing, until a candy thermometer registers 230 degrees, about 5 minutes. (Depending on the humidity, this can take anywhere from 4 to 10 minutes.) Remove the syrup from heat (temperature will keep rising).
  • Meanwhile, in the bowl of an electric mixer, whisk the egg whites on medium speed until soft peaks form, about 2 1/2 minutes. Gradually add remaining 2 tablespoons sugar. With mixer on medium-low speed, pour syrup in a steady stream down side of bowl (to avoid splattering).
  • Beat the frosting on high speed until cool, about seven minutes. It should be thick and shiny. Use immediately.

This traditional frosting is fluffy, white and almost meringue-like in texture. It's easy to make, and takes 7 minutes to cook.

  • Combine all ingredients except vanilla in top of double boiler.
  • Place water in bottom pan of double boiler. Cook over high heat 3-4 minutes or until water boils. Place egg white mixture in top of double boiler over rapidly boiling water (water should not touch bottom of pan); beat at highest speed with hand mixer 7 minutes or until mixture forms stiff peaks. (Do not overcook.) Remove from heat; add vanilla.
  • Continue beating 2 minutes or until frosting holds deep swirls.

BASIC GLAZE ICING

3 (1 pound boxes) confectioners' sugar
1 cup water
5 tablespoons light corn syrup
1 tablespoon pure vanilla extract
Food coloring, as desired (see suggested colors below)

Steps:

  • Put the sugar in an electric mixer fitted with the paddle attachment. With the mixer on the lowest speed, slowly add the water, the corn syrup and vanilla extract. When the sugar is sufficiently moistened (it won't fly out of the mixer), raise the speed to high, and beat for 2 minutes until completely smooth and glossy.
  • Divide and color, as desired. Store at room temperature, covered with plastic wrap directly on the surface of the icing, to prevent forming a skin.
  • For cupcakes: Dip the surface of the cupcakes into the icing, allowing excess to drip into bowl. Clean any excess from the sides. Alternately, use a knife or a spreader to apply. Whisk as needed to keep icing glossy and smooth while using.
  • For Light Blue Icing: Combine 2 to 3 drops of blue food coloring to 1 cup of Basic Glaze Icing.
  • For Deep Yellow Icing: Combine 4 to 5 drops of yellow food coloring to 1 cup of Basic Glaze Icing.
  • For Purple Icing: Combine 4 drops of red and 5 drops of blue food coloring to 1 cup of Basic Glaze Icing.

Steps:

  • Prepare the Square Pan - Generously dust the square pan with powdered sugar.
  • Make the Gelatin - In a small mixing bowl, combine the gelatin with eight tablespoons of cold water.
  • Heat Granulated Sugar and Vanilla - In a large saucepan over medium heat, add the granulated sugar and 1/2 cup of cold water. Cook the mixture, stirring regularly until the sugar is dissolved.
  • Add the Gelatin - Add the gelatin to the sugar water. Bring the mixture to a boil and then remove the mixture from the heat. Carefully for the mixture into a large mixing bowl and allow it to partially cool.
  • Add the Salt and Vanilla Extract - To your mixture, add the salt and vanilla extract, mixing together until combined. You may substitute the vanilla extract for another flavor if desired.
  • Beat Marshmallow Mixture With an Electric Mixer - Using an electric mixer, beat the marshmallow mixture. Beat the mixture for about 10-15 minutes, or until it has reached a soft texture and has doubled in volume.
  • Pour Into Pan and Let Set - Carefully pour your marshmallow into the prepared pan. It should be about 1/2 inch thick. Let the marshmallow sit so it can fully cool.
  • Cut and Serve - Once the marshmallow does not stick to your fingers, it is ready to serve. Cut it with a sharp knife into about 1 1/2 inch squares. Roll the marshmallow squares around in powdered sugar and serve.
