ROASTED CHILI CORN SALSA



Roasted Chili Corn Salsa image

Make restaurant quality burrito bowls at home with this easy, copycat Roasted Chili Corn Salsa recipe. It tastes just like the restaurant salsa!

Provided by Garnish With Lemon

Number Of Ingredients 9

1 large poblano pepper
2 cups corn kernels, (fresh or defrosted)
1 medium jalapeño pepper, (seeded and minced)
¼ cup chopped fresh cilantro
¼ cup chopped red onion
3 tablespoons fresh lime juice
1 tablespoon extra-virgin olive oil
1 teaspoon sugar
1 teaspoon salt

Steps:

  • Preheat broiler.
  • Slice stem off poblano and cut pepper in half. Remove seeds and membranes. Flatten pepper halves on baking sheet lined with foil and broil for 5-10 minutes or until charred. Remove from oven and wrap in foil from pan for at least 10 minutes. Carefully unwrap foil and use fingers to slide charred skin off pepper halves. Dice poblano pepper flesh and place in a mixing bowl.
  • Add the remaining ingredients to the bowl with the poblano pepper. Stir to combine and season to taste with additional salt. Cover and refrigerate for at least one hour before serving.

12 ounces frozen sweet corn, defrosted and drained
2 jalapenos, seeded and finely diced (if you enjoy the heat, add some seeds)
1/3-1/2 cup red onion, finely diced
3/4 cup fresh cilantro, chopped
2 limes, juice
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground

Steps:

  • In a large bowl, combine all ingredient and mix well.
  • Adjust salt and pepper, lime and jalapenos to your desired taste.

  • Preheat oven to 425 degrees. Run poblano pepper with vegetable oil. When the oven is hot, roast the pepper for 6 to 8 minutes on each side. Remove pepper from the oven. Allow it to cool slightly, remove the tough outer skin.
  • Chopped jalapeno very finely. If you do not like heat, remove seeds, before chopping. You may also want to start with 1 teaspoon of jalapeno before adding the second teaspoon. Finely chop the poblano pepper.
  • Add chopped cilantro, salt, peppers, and red onions. Stir in the lemon and lime juice Stir well to mix the salsa together. Refrigerate for a couple of hours before serving. This will allow the flavors to marry together.
