KATHY'S SOUTHERN CORN PUDDING
This is a wonderful side dish that goes great with ham or pork. It's wonderful for that big crowd at Thanksgiving and Christmas, and very quick and easy to make.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish; set aside.
- Beat eggs until fluffy in a large bowl. Stirring constantly, pour in melted margarine. Stir in sugar, whole kernel corn, and cream-style corn until well combined. Dissolve the cornstarch in the milk; combine with the corn mixture. Stir in vanilla. Pour the mixture into the prepared baking dish.
- Bake in the preheated oven until the pudding is puffed and golden, and a knife inserted into the center comes out clean; about 1 1/2 hours.

CORN PUDDING - MW
This is from The Cooking Book by the Junior League of Louisville (1979). It's called Peyton's Corn Mousse from Judy Hoge. What I love about it is that it's a microwave recipe. This is my go-to for a quick and easy side dish.

Steps:
- 1. Grease a 1 1/2 quart casserole (I use a 7x11 inch glass dish, but I've used round ones in the past).
- 2. Stir cornstarch into milk then blend in rest of ingredients. Pour into prepared dish and put dish into microwave.
- 3. Cook on HIGH 5 minutes, then stir. Cook on HIGH 5 minutes more, then stir. Cook on HIGH 5 minutes more. Let stand 5 minutes before serving.
- 4. Alternatively, you can bake this in a 375°F preheated oven for 45-60 minutes; stirring every 15 minutes.
GRANDMA'S CORN PUDDING
This corn pudding is definitely comfort food.

- Preheat oven to 400 Degrees F (200 degrees C). Grease a 2 quart casserole dish.
- In a large bowl, lightly beat eggs. Add melted butter, sugar, and milk. Whisk in cornstarch. Stir in corn and creamed corn. Blend well. Pour mixture into prepared casserole dish.
- Bake for 1 hour.

- In an ungreased 2 quart microwave-safe dish, beat the eggs. Stir in corn, milk, flour, sugar, butter, salt & pepper. Cover and microwave on high for 9 minutes, stirring after 5 minutes. Uncover and sprinkle with paprika. Microwave an additional 15 minutes or until knife inserted in the center comes out clean. Let stand for 5 minutes before serving. Makes 7 servings.
