POPCORN SNACK MIX (NO-BAKE RECIPE)



Popcorn Snack Mix (No-Bake Recipe) image

My easy Popcorn Snack Mix involves no baking and is super versatile using what you can find in your store cupboard. Popcorn, cornflakes, chocolate chips, salted nuts and marshmallows are all drizzled with melted chocolate. Its a delicious snack for kids and adults alike.

2 tsp Vegetable Oil
50 g Corn Kernels (Popping Corn)
75 g Salted Nuts
25 g Mini Marshmallows
30 g Cornflakes
50 g Dark Chocolate Chips (Bittersweet)
50 g Dark Chocolate (Bittersweet)
50 g Milk Chocolate

Steps:

  • Add 2 tsp Vegetable Oil and 50g Corn Kernels to a large saucepan. Put on a medium heat shaking the pan occasionally until the popping stops. Tip the popcorn out onto a large tray.
  • Chop 75g Salted Nuts. Keep some chunky, chop some a little smaller. It depends on what nuts you are using as to how much you want to chop. Don't got too small. Add the nuts to the popcorn.
  • Also add 25g Mini Marshmallows, 30g Corn Flakes and 50g Dark Chocolate Chips.
  • Mix everything together well and spread out on the tray.
  • Break up 50g Dark Chocolate and 50g Milk Chocolate into a small bowl or saucepan.
  • Melt in the microwave or on the hob and stir well.
  • Drizzle the melted chocolate over the snack mix.
  • Leave to cool then use your hands to break up any bigger pieces where the chocolate has stuck ingredients together. You can leave some clumps for variety.
  • Store in an airtight container or eat!

3 quarts popped popcorn
1 package (15 ounces) Corn Pops
1 package (15 ounces) corn chips
2 packages (10 to 12 ounces each) vanilla or white chips

Steps:

  • In several large bowls, combine the popcorn, Corn Pops and corn chips. , In a large saucepan over medium-low heat, melt chips; stir until smooth. Pour over popcorn mixture and toss to coat., Spread onto two 15x10x1-in. baking pans. Cool. Store in airtight containers.

1/4 cup melted butter
1 teaspoon Worcestershire sauce
1/2 teaspoon onion salt
1/8 teaspoon oregano
1/8 teaspoon dill weed

Steps:

  • Pour melted butter in a large mixing bowl.
  • Add the Worcestershire sauce, onion salt, oregano, dill and Corn Pops; mix well to coat the cereal.
  • Pour into a 12 x 9 pan and bake for 15 minutes at 350°, stirring every 5 minutes.
  • You may also add pecans or peanuts to this mix!

INDIAN SNACK MIX (CHEWDA)

There are entire shops dedicated to this snack mix in India, and it's one of our treasured snacks. The last time I was in India, we all walked to a neighborhood pub, ordered a pitcher of beer, and chowed down on a big bowl of Chewda. It usually consists of chickpea flour noodles, flattened flakes of dried rice, peanuts and seasonings. Here's my Americanized version. Careful. Once you start... it's really hard to stop!

2 cups corn cereal (recommended: Corn Flakes)
2 cups puffed rice cereal (recommended: Rice Krispies)
1/4 cup shelled, skinless peanuts
1/4 cup pepitas (pumpkin seeds)
2 tablespoons peanut oil
1 teaspoon brown or black mustard seeds
8 to 10 fresh curry leaves, optional
1/2 green serrano chile, minced
1/2 teaspoon turmeric
Small handful plantain chips, optional
2 tablespoons golden raisins
Kosher salt

Steps:

  • In a large wok over medium heat, toast the corn cereal, puffed rice cereal, peanuts, and pepitas until the cereals have crisped up, about 2 minutes. Remove from the pan.
  • Warm the oil in the same wok over medium heat. Add the mustard seeds (stand back, they'll pop!), curry leaves, green chile, and turmeric. Cook about 30 seconds. Turn the heat off.
  • Add the cereal mixture, plantain chips, if using, and raisins. Season with salt. Toss until well combined, and pour into a big bowl. Crack a beer and enjoy!

8 cups Corn Pops
1 cup salted peanuts
2 cups packed brown sugar
1 cup butter, cubed
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 250°. In a large bowl, combine cereal and peanuts; set aside. In a large heavy saucepan, combine the brown sugar, butter and corn syrup; bring to a boil over medium heat, stirring constantly. Boil for 5 minutes, stirring occasionally. , Remove from the heat. Stir in vanilla and baking soda (mixture will foam). Immediately pour over cereal mixture and toss to coat., Spread into two greased 15x10x1-in. baking pans. Bake 1 hour, stirring every 20 minutes. Cool completely on wire racks. Store in airtight containers.

This is similar to the Chex mix but I actually like it a little better. The original recipe calls for garlic and onion salt instead of powder and salted nuts, but I find that too salty.

3 tablespoons butter
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 teaspoons lemon juice
4 teaspoons Worcestershire sauce
7 cups Crispix cereal
1 cup unsalted nuts
1 cup pretzel

Steps:

  • Preheat oven to 250°F.
  • Melt butter in 9x13-inch pan in oven. Remove from oven and stir in garlic powder, onion powder, lemon juice, and Worcestershire sauce.
  • Add cereal, nuts, and pretzels stirring until coated.
  • Bake for 45 minutes, stirring every 15 minutes. Spread on absorbent paper to cool.
  • Microwave directions combine ingredients as above, placing in a glass container and microwave on full power 4 minutes stirring after 2 minute
  • Cool as above.

2 tablespoons canola oil
1-1/2 cups mayonnaise
1-1/2 teaspoons garlic powder

24 corncob holders
2 cups crumbled feta cheese
2 tablespoons seafood seasoning
1/4 cup minced fresh cilantro
Lime wedges, optional

Steps:

  • Brush all sides of corn with oil. Grill, covered, over medium heat, turning occasionally, until tender and lightly browned, 10-12 minutes. Remove from grill; cool slightly., Meanwhile, in a small bowl, mix mayonnaise, garlic powder and pepper. Cut each ear of corn into thirds. Insert one corncob holder into each piece. Spread corn with mayonnaise mixture; sprinkle with cheese, seafood seasoning and cilantro. If desired, serve with lime wedges.

2 cups honey graham cereal (such as Golden Grahams®)
2 cups peanut butter corn puff cereal (such as Reese's Puffs®)
2 cups popped popcorn, or more to taste
8 ounces candy-coated milk chocolate pieces (such as M&M's®)
1 cup salted peanuts
½ cup butter
2 tablespoons all-purpose flour
1 cup brown sugar
½ cup corn syrup
½ cup peanut butter

Steps:

  • Line a large baking sheet with waxed paper.
  • Combine crispy corn and rice cereal, honey graham cereal, peanut butter corn puff cereal, popcorn, chocolate pieces, and peanuts in a large bowl.
  • Melt butter in a large saucepan over medium heat; whisk in flour until smooth, 2 to 3 minutes. Add brown sugar and corn syrup; bring to a boil, stirring occasionally, until sugar is dissolved, about 1 minute. Stir peanut butter into sugar mixture until creamy, about 3 minutes; pour over cereal mixture and gently toss until coated.

2 (8 ounce) bags butter-flavored corn puff snacks

Steps:

  • Line a large baking sheet with waxed paper.
  • Place the white chocolate chips into a large microwave-safe bowl, and heat on low power for 30-second intervals until the chocolate chips have begun to melt.
  • Stir the chips until smooth.
  • Pour the corn puff snacks into the bowl with the white chocolate, and stir to coat the puffs with the chocolate.

Seriously the BEST snack you can make for parties or holidays or just for fun! But warning- they are VERY addicting! :) *NOTE: The corn pops are in the chip isle in the grocery store. They are the puffed corn pops (not the cereal) in a large bag (about a 2 lb bag), Get the original (because there is kettle flavor also). They are not a huge name brand, I think they are made from "Circus". But any brand will be fine.
