AIR FRYER CORN NUTS
Crunchy, salty, addictive corn nuts made easy and healthier thanks to the air fryer. This is my basic recipe, but feel free to add additional flavors such as Cajun seasoning, ranch powder, BBQ seasoning, chili powder, taco seasoning, etc.

Steps:
- Place corn in a large bowl, cover with water, and let sit 8 hours to overnight to re-hydrate.
- Drain corn and spread it in an even layer on a large baking sheet. Pat dry with paper towels. Air dry for 20 minutes.
- Preheat air fryer to 400 degrees F (200 degrees C).
- Place corn in a large bowl. Add oil and salt. Stir until evenly coated.
- Place corn in batches in the basket of the air fryer in an even layer. Cook for 10 minutes. Shake basket and cook another 10 minutes. Shake basket and cook 5 additional minutes and transfer to a paper towel-lined plate. Repeat with remaining corn. Let corn nuts cool until crisp, about 20 minutes.

- Place popcorn in a large bowl; set aside. , In a large heavy saucepan, combine brown sugar, butter, corn syrup and salt. Cook over medium heat, stirring occasionally, until mixture comes to a rolling boil. Cook and stir until candy thermometer reads 238° (soft-ball stage). Remove from heat; stir in baking soda (mixture will foam). Quickly pour over popcorn and mix well; stir in nuts. , Transfer to two greased 13x9-in. baking pans. Bake at 200° 45 minutes, stirring once. Remove from pans and place on waxed paper to cool. Break into clusters. Store in airtight containers.

AIR FRIED CORN NUTS
This simple and really tasty snack recipe for Air Fried Corn Nuts is easy and is gluten free, vegan, and low in fat. Share this simple snack with others!

- Prepare your corn (hominy) as described above by soaking them in water overnight. Then allow the corn to dry out on paper towels or a kitchen towel for about a half hour, padding them down as needed.
- Preheat your air fryer to 400. I like to give my basket a quick spray with nonstick as well.
- In a large bowl, whisk or use a fork to mix together your seasoning and the oil. Then transfer the kernels to the bowl, tossing them in the oil and seasonings. Use a large spoon to transfer spoonfuls of the kernels to the air fryer basket and then spread them evenly into a flat layer in the basket.
- Bake the kernels for ten minutes. Shake the basket and continue to bake for another 10-12 minutes or until done. Tip: shake a third time if needed to prevent burning. While your kernels are baking, you can line a baking sheet with a couple of layers of paper towels or clean lint-free kitchen towel. When the kernels are done baking, transfer them to the towels and allow them to cool.

- Whisk the honey, vinegar, and ½ teaspoon salt in a small bowl. While whisking, add the oil in a slow, steady stream until emulsified.
- Pulse the corn nuts in a food processor until finely chopped.
- Arrange the tomatoes in serving dishes in a single layer and sprinkle with ½ teaspoon salt. Top with the watermelon and onion and drizzle with the dressing. Crumble the goat cheese and pluck the tarragon leaves on top. Sprinkle on the corn nuts and serve immediately.

- Soak the dried corn overnight in water for at least 12 hours, drain in a colander and let sit for a while and dry on a paper towel lined sheet pan in only layer for at least an hour plus pat them dry, you want these really dry before frying them to avoid splatter flare ups in the oil.
- Heat the oil to 350 degrees in a heavy Dutch oven if you have one, I used a 5 quart size but a 4 quart will also work
- Fry the corn in two batches for approximately 8 to 10 minutes or until a deep golden brown, lay on a paper towel lined sheet pan
- Season with my Sweet & Spicy BBQ seasoning or my Vegan Nacho seasoning or plain kosher or sea salt while hot, if you don't want to make my seasoning recipes, look in your pantry, I'm sure you have lots of options there like taco seasoning, ranch mix or Cajun seasoning... season to taste, you don't want these too salty.

- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Drain the chickpeas well by pouring them into a colander (you might want to save the liquid, called aquafaba, for use in another recipe!). Do not rinse.
