¼ cup mayonnaise
5 ears fresh corn
2 tablespoons heavy cream
2 tablespoons butter, softened
2 teaspoons fresh lime juice
1 ½ teaspoons Southwestern ancho chile seasoning (such as Penzeys Arizona Dreaming)
⅛ teaspoon cayenne pepper, or more to taste
⅓ cup crumbled Cotija cheese

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Grill corn, turning occasionally, until kernels are slightly charred, 15 to 20 minutes. Let cool until safe to handle, at least 15 minutes. Remove kernels from the cobs to get about 2 cups of corn.
  • Mix cream, butter, lime juice, ancho chile seasoning, and cayenne pepper together in a bowl. Fold in cotija cheese. Drizzle mixture over the corn kernels. Serve hot or cold.

This is Mexican street food at its finest. Anytime I visit El Paso or Mexico the craving of elote en vaso steps into high gear. Now anytime I crave this I whip it up at home, except I make it fancy by serving it in a pretty glass instead of the traditional Styrofoam® cup. No matter how you serve it the taste is sweet, crunchy, fiery, and juicy. This is a very loose recipe. Feel free to adjust the proportions of lime juice, crema, cheese, and spices to taste!

10 ears corn, shucked and kernels removed
1 ¼ cups butter
2 ½ cups lime juice
2 ½ cups crema Mexicana (Mexican cream)
1 teaspoon chili powder, or to taste
salt to taste
1 ¼ cups crumbled cotija cheese
1 dash hot pepper sauce (such as Valentina®), or to taste
10 wedges fresh lime

Steps:

  • Place corn in a saucepan and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 2 to 3 minutes. Drain and return corn to saucepan.
  • Spoon 3/4 cup corn into 10 serving bowls; add 2 tablespoons butter to each and stir until butter is melted. Mix 1/4 cup lime juice and 1/4 cup crema Mexicana into each bowl; sprinkle a generous amount of chili powder over each. Season with salt.
  • Top each serving with 2 tablespoons cotija cheese and hot sauce; garnish with a lime wedge.

1 Tablespoon salted butter (, softened)
1/3 cup diced onion (, (optional))
1 jalapeño or serrano pepper (, seeded, diced, (optional))
1/3 cup water
4 ears corn* (, husked, cut from the cob (about 3 cups))
salt and pepper (, to taste)
5 Tablespoons mayonnaise
5 Tablespoons Mexican sour cream
1/3 cup shredded cotija cheese or queso fresco*
Chili powder, Tajin, or hot sauce ( , to taste)
1 lime (, quartered)

Steps:

  • Add butter to a skillet over medium heat. Once melted, add onion and pepper and saute until tender. Add water and corn. Cover and cook, stirring occasionally, until corn is tender (about 5-8 minutes).
  • Season with black pepper and a little salt and divide among 4 cups.
  • To each cup add 1 heaping teaspoon of mayonnaise and 1 heaping teaspoon of Mexican crema (or sour cream). Stir to combine.
  • Sprinkle generously with grated cheese and chili powder, to taste. Serve with lime wedges to squeeze on top. Enjoy immediately.

1/4 cup sour cream
1/4 cup mayonnaise
1/4 cup shredded parmesan cheese (or feta cheese, cotija cheese or queso fresco)
2 tablespoons Lemon Juice
1 teaspoon Mexican Chili Powder
Cooking Oil Spray

Steps:

  • You will need an air fryer basket with relatively small holes in the basket. If your air fryer has a grid-shaped basket, you may need to make this in a heatproof pan that fits inside the air fryer basket.
  • Place frozen corn in the bottom of the air fryer basket. Spray with oil.
  • Set fryer to 350°F for 10 minutes. At the end of the cook time, pour the corn into a serving bowl. Add butter and mix well until the butter has melted.
  • Mix in sour cream, mayonnaise, shredded cheese, lemon juice, and chili powder, and serve.

  • Preheat grill to medium heat. Pull all husks back on corn except 1-2 thin layers, remove end husks. Grill corn about 20 minutes. Remove last layer of husks and grill for a minute or two until corn has charring. Remove from grill and let cool enough to handle.
  • Place glass upside down in the middle of a large bowl. Stand corn cob on the upside-down glass, and use a knife to cut kernels off of the cob so that they fall into the bowl (and not all over your counter!). Pour melted butter over corn, mix well. If you didn't use salted butter, lightly salt the corn now.
  • In a bowl mix spices and cheese together. In 8 oz cups Layer corn with crema, cheese and spices mixture, cilantro, and a squeeze of lime. Repeat.
  • Microwave about 30 seconds, just enough to really warm the serving bowls. Serve immediately.
