CREAMED CORN FRITTERS
Make these creamed corn fritters in a jiffy with canned creamed and canned sweet corn kernels. It's a simple snack that kids and adults will love. Fluffy and light, these are great to serve at brunch, with a salad, or as an appetizer for dinners.

Steps:
- Place the flour, baking powder, coriander, and cumin into a large mixing bowl. Use a spoon or whisk to mix the dry ingredients until well combined.
- Make a well in the center of the flour, add the corn, milk, eggs, and chives.
- Stir until the ingredients are well combined and there are no lumps.
- Season to taste with salt and pepper.
- Heat the oil in a frying pan until hot. The oil is ready when you drop a little of the batter into the oil and it starts to bubble around the edges.
- Drop heaped tablespoons of the batter into the pan, spaced about 2 cm (0.7 inches) apart, flatten the tops of the fritters with the back of a spoon. See note 2
- Fry for about 2 minutes on each side or until light and golden on both sides and cooked through. Lower the heat, if the fritters are browning too quickly to avoid burning.
- When cooked remove from the pan and drain on absorbent paper.
- Best eaten hot or warm.

QUICK AND EASY CORN FRITTERS

- In a large bowl, stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Stir in the eggs and heavy cream until the batter is well-combined.
- Line a plate with paper towels. Coat the bottom of a large sauté pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.
- Garnish the corn fritters with scallions and serve them with sour cream or garlic aioli for dipping.

- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

- In a large bowl add the ingredients.
- Mix well.
- In a large skillet, heat a half cup of oil (or until entire skillet is covered with a thin layer) over medium-high heat.
- Spoon 2 tablespoons of mixture to form each fritter into the hot oil.
- Flip after about a minute and a half or when you can see the edges beginning to brown. Repeat for other side.
- Serve with a dollop of sour cream and chives.

- Dry ingredients: Whisk the flour, sugar, salt, and baking powder together in a large mixing bowl. Add the corn and stir to coat in the flour mixture.
- Batter: Mix the cream and eggs together, then pour into the mixing bowl. Stir everything together until a wet batter forms. It should be a thick batter. See recipe notes.
- Fry: Add enough vegetable oil to fully coat the bottom of your skillet. You'll have to do this in batches. Drop 2-4 quarter cup portions of batter, as many as your skillet can handle, and cook for 2-3 minutes over medium heat or until the bottom turns golden brown. Flip and cook for another 2-3 minutes. Adjust the heat as necessary. Repeat with remaining batter.
- Serve: Serve sprinkled with chives and a dollop with sour cream.

- Combine flour, cornmeal, egg, onion, and smoked paprika in a bowl. Add salt to taste. Stir in corn and cheese.
- Add milk a little bit at a time if needed to make a moist mixture that can still hold its shape. You may not need all of the milk.

- Sift flour, baking soda, salt and pepper together.
- In a seperate bowl add all eggs and lightly beat.
- Combine dry and wet ingredients together and mix until you have a pancake mix consistency.
- Add corn and stir until blended.
- Add chopped chives and blend.
- Preheat girdle to 350 degrees F.
- Drop mixture by tablespoons fills onto pre-heated girdle. Cook on one side for 4 - 5 minutes or until golden then flip to do the other side for 4 - 5 minutes.
- Turn heat down to 200 and flip again for 1 minute on each side.

HIGH PROTEIN CHEDDAR CORN FRITTERS

- In a large mixing bowl sift your Kodiak Cake Power Flour then add in the rest of your dry ingredients: baking powder, salt, garlic powder, cayenne pepper, onion powder, shredded cheddar & chives. Take a fork & whisk until full incorporated

- Place 2/4 cup of sweet corn into a blender with the all-purpose flour, eggs, and shredded Parmesan cheese.
- Blend the mixture on high for 10 seconds.
- Get a chopping board, and chiffonade the parsley and chives, and set aside.
- Pour the mixture into a mixing bowl, then add 3/4 cup of sweet corn, followed by the salt, paprika, chopped chives, and chopped parsley.
- Mix everything together with a spoon until it's well incorporated.
- Get a lined air fryer tray, spray the olive oil spray on the parchment paper, and place 3 corn fritters onto the tray. Then, spray more olive oil on top of the corn fritters.
- Bake the corn fritters for 12 minutes, turning them over at 6 minutes.

- Prepare the corn by husking and removing the silk from the cob. Rinse under water before cutting. Cut the corn off the cob by standing it upright and then by slicing the blade down the side. Next, milk the corn by scraping the cut cob with the side of your knife to remove the milky juices.
- Throughly mix together all of the ingredients except for the oil. Let the batter sit for 5 minutes and then gently stir before beginning to fry.
- In a frying pan heat the oil over medium heat. Measure 1/8 C of batter into the pan for each fritter. Cook 2-3 minutes and then flip once the bottom of the fritter starts turning golden-brown. Cook for another 3 minutes until both sides are golden-brown.
