Quick and Easy Corn Fritters image

Celebrate summer with a quick and easy recipe for corn fritters that can be made with fresh or frozen corn kernels.

3 cups corn kernels (See Kelly's Note)
1 cup all-purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
2 large eggs, lightly beaten
3/4 cup heavy cream
Vegetable oil, for frying
Sliced scallions, for serving
Sour cream or garlic aioli, for serving

Steps:

  • In a large bowl, stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Stir in the eggs and heavy cream until the batter is well-combined.
  • Line a plate with paper towels. Coat the bottom of a large sauté pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.
  • Garnish the corn fritters with scallions and serve them with sour cream or garlic aioli for dipping.

vegetable oil for frying
3/4 cup cornmeal
1/2 cup all purpose flour
2 teaspoons baking powder
salt and pepper to taste
1/2 teaspoon sugar
3/4 cup milk
1 egg - beaten
2 cups freshly scraped corn ((frozen corn can be used as well))

Steps:

  • Place vegetable oil into a heavy bottom pot to a depth of about 3 inches.
  • Using a thermometer, heat oil to 350 to 355 degrees.
  • Combine dry ingredients in a large bowl.
  • Whisk together milk and egg, then pour into the dry ingredients. Add a little more milk if needed. Batter should be thick but smooth.
  • Stir in corn.
  • Drop fritters into hot oil using a 2 teaspoon scoop (2 spoons work as well.)
  • Cook fritters until golden brown, turning once, about 3 to 4 minutes per batch. Do not over crowd pot and adjust heat to keep temperature consistent.
  • Drain on paper towels and sprinkle with kosher salt.
  • Serve immediately or keep warm in oven.

15 ounces corn (drain and reserve juice)
2 medium eggs
1/2 teaspoon salt
1 cup flour
1 teaspoon baking powder
1 teaspoon sugar
bacon grease (for frying) or margarine (for frying)

Steps:

  • Drain the liquid from the the canned corn. Measure 1/4 cup of it, and discard the rest.
  • In a medium sized bowl combine the corn juice you've just measured and the eggs.
  • Use a whisk to beat them smooth.
  • Add the salt, flour, baking powder and sugar. Mix really well, until there are no lumps.
  • Add the drained corn and mix again.
  • Heat about 2 tablespoons of bacon grease or margarine in a large iron skillet over medium high heat.
  • When the fat is hot, it's time to drop in the fritters. I drop about 1/4 of a cup of batter for each fritter, cooking about 3 or 4 together in the same pan. Fry them just like pancakes, turning them, after the under side is crispy brown. They cook a little slower than pancakes, because they are thicker.
  • After they have browned on both sides, transfer them to a plate to keep warm.
  • Add more fat to the pan as necessary.
  • This recipe makes about 8 or 9 fritters. I usually double it because they are so popular.
  • I serve the fritters with applesauce, or Pancake Syrup or just plain with more margarine for the kids. They can take the place of both starch and bread in a meal. For lunch, or a light supper, make Scalloped Tomatoes, Corn Fritters, and serve fruit and yogurt for dessert. Delicious!

½ teaspoon salt
2 cups vegetable oil for frying

Steps:

  • Remove all silk from corn and cut raw corn from the cob over a large bowl. Scrape the juice from the cobs into the bowl as well. Discard cobs. Stir in the eggs, flour and salt to form a batter the consistency of thin pancake batter.
  • Heat oil in an electric skillet to 325 degrees F (165 degrees C). If using a large skillet on the stove, preheat oil to medium high heat. There should be enough oil in the pan to cover the fritter.
  • Use a large serving spoon to make 4 pancake sized fritters at the same time. Fry for about 5 minutes on each side or until golden brown. Drain on paper towels and serve warm.

1/4 cup flour (, plain / all purpose)
1/4 cup cornflour / cornstarch
1/4 tsp baking soda ((or 3/4 tsp baking powder))
1 egg
2 tbsp milk ((any type))
2 cups fresh corn kernels (, raw (2 cobs) (canned or frozen also fine - Note 1))
1/2 cup parmesan (, finely grated)
3/4 cup green onions (, sliced)
1/2 cup coriander/cilantro (, roughly chopped (sub more green onion))
1/2 cup vegetable oil
Oil spray
Avocado sauce
Sour cream, ketchup ((don't judge until you've tried it!))

Steps:

  • Preheat oven to 120°C / 250°F and set a wire rack on a baking tray.
  • Place flour, cornflour and baking soda in a bowl, mix to combine.
  • Add egg and milk, mix until incorporated (batter will be lumpy and thick).
  • Add corn, parmesan, green onions and coriander. Mix until all the corn is evenly coated in batter.
  • Add enough oil into the skillet so it just covers the base. Heat over medium high heat.
  • Spray the underside of a spatula with oil (so batter won't stick when you flatten).
  • Place 1/4 cup batter into skillet (ice cream scooper with lever is handy), then flatten to 1cm thick. Repeat with 2 or 3 more, but don't crowd the skillet.
  • Cook 3 minutes until deep golden and crisp, then flip and cook the other side for 2 - 3 minutes.
  • Transfer to rack and keep warm in oven. Repeat with remaining fritters, using more oil as necessary.
  • Serve with sauce of choice for dunking!

½ cup milk
1 (15.25 ounce) can canned whole kernel corn
1 (14.75 ounce) can canned cream-style corn
1 teaspoon lard or other cooking fat

Steps:

  • In a medium bowl, stir together the flour, baking powder, salt and pepper. Make a well in the center, and pour in the egg, milk, whole kernel corn, and cream-style corn. Mix until all ingredients are combined.
  • Heat the lard in a skillet over medium-high heat. Drop tablespoon-sized dollops of batter onto the hot skillet, and fry for 2 to 3 minutes on each side, or until golden brown. Serve with butter and salt, and a cold glass of milk.

2 tsp olive oil
1 cup fresh corn kernels ((or frozen corn kernels that have been thawed))
1/4 cup finely diced onion
1/4 cup finely diced green pepper
1/2 tbsp minced garlic
7 tbsp all purpose flour
1 tbsp yellow corn meal
1 3/4 tsp granulated sugar
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp cayenne pepper
1/3 cup buttermilk
1 large egg
1/4 cup shredded cheddar cheese

Steps:

  • Heat olive oil in a medium skillet over medium heat. Add corn, onion and green pepper and cook until softened (about 4-5 minutes) then add garlic and cook for an additional 30 seconds. Set aside.
  • In a large bowl, add flour, corn meal, sugar, baking powder, salt and cayenne pepper and whisk until combined.
  • Next add buttermilk and egg and combine with dry ingredients. Fold in sauteed corn and veggies and then add cheese.
  • Heat enough oil to cover the bottom of a cast iron skillet or dutch oven skillet and heat until about 365 degrees.
  • Scoop 2-3 tablespoons of fritter batter to the skillet and spread out like a small pancake and fry until golden brown (about 2 minutes or so) then flip and do the same. Remove from oil and drain on paper towels and sprinkle with salt and serve.

1/2 tsp baking powder
1 tsp salt
1/2 tsp garlic powder
3 cups whole kernel corn
1/2 cup chopped green onion
2/3 cup heavy cream
2 large eggs

Steps:

  • In a medium mixing bowl, sift together the cornmeal, flour, sugar, baking powder, salt and garlic powder. [If using plain cornmeal, increase the baking powder to 1 tsp]
  • Add the corn and chopped green onion.
  • In a separate bowl, whisk together the heavy cream and eggs. Pour into the mixing bowl, and stir until the ingredients are evenly moistened.
  • Rest on the counter for 10 minutes.
  • In a heavy bottomed skillet, heat 1/4 inch of vegetable oil.
  • Use a 4 oz ice cream scoop to divide the batter into the pan. Fry in batches until golden and cooked through, around 3-4 minutes on each side.
  • Remove to paper towels to drain.
  • Serve immediately with honey or maple syrup.
