BLACKBERRY CORN COBBLER



Blackberry Corn Cobbler image

This cobbler substitutes fresh, juicy kernels and corn milk for traditional heavy cream, taking advantage of the sweetness of seasonal corn and adding texture to a buttery crust. Grating two large ears of corn should produce enough liquid for the topping, but, if not, you can grate a third ear, or add cream or milk. The rich, crumbly crust also gets some of its moisture from the filling, which is extra syrupy from the mashed blackberries. Serve the cobbler warm with a splash of heavy cream, a dollop of coconut yogurt, or a scoop of vanilla ice cream. Finishing it all off with a drizzle of dark rum, while not necessary, is especially sweet.

4 tablespoons/60 grams very cold unsalted butter (1/2 stick), cut into cubes, plus more for greasing the pan
2 pounds/905 grams fresh, ripe blackberries (about 6 1/2 cups), lightly mashed with a potato masher
1 cup/200 grams granulated sugar, plus more as needed
1 1/2 cups/190 grams all-purpose flour
2 tablespoons fresh lemon juice
1 teaspoon kosher salt
2 large ears sweet yellow corn
1/3 cup/50 grams finely ground yellow cornmeal
1 1/4 teaspoons baking powder
2 tablespoons heavy cream
4 teaspoons turbinado sugar, for sprinkling

Steps:

  • Heat the oven to 375 degrees and grease the inside of a 9-by-9-inch square casserole dish with butter.
  • In a medium bowl, toss the mashed blackberries with ⅔ cup granulated sugar, ¼ cup flour, the lemon juice and ¼ teaspoon salt. Taste and add additional sugar, if necessary. Transfer the mixture to the baking dish in an even layer and set aside.
  • Using a box grater, grate the corn over a bowl to collect its meat and milk; discard the corn cobs or reserve for another use. Transfer corn mixture to a liquid measuring cup. (The grated corn mixture should measure a healthy ¾ cup; if not, supplement with extra corn, heavy cream or milk.) Set aside.
  • In a large bowl, whisk together the remaining 1¼ cups flour, ⅓ cup granulated sugar with the cornmeal, baking powder and ¾ teaspoon salt. Add the cubed butter, separating the cubes and tossing them individually to coat. Pressing the bits of butter between your thumb and the side of your index finger, break up the butter into the flour until evenly dispersed and butter pieces are roughly the size of peas.
  • Slowly pour the grated corn over the flour mixture, and, working gently with your hands, begin tossing everything together until the ingredients form a cohesive dough. Crumble the batter over the surface of the berries, and using a pastry brush, brush the top generously with the heavy cream. Sprinkle the batter evenly with the turbinado sugar.
  • Place the baking dish on a sheet pan to catch any potential overflow, transfer to the oven and bake until the crust is golden and the blackberries are bubbling and thick, 35 to 40 minutes. Allow to cool at least 10 minutes before serving.

Steps:

  • Heat oven to 375°F. Grease 8-inch square or round glass baking dish with shortening or cooking spray. In 12-inch skillet, melt 2 tablespoons butter over medium-high heat. Gently stir in remaining filling ingredients with wooden spoon. Cook about 5 minutes, stirring occasionally, until apples are tender. Pour into baking dish.
  • In medium bowl, stir together cornbread topping ingredients. Spread over apples, covering them completely.
  • Bake 20 to 25 minutes or until topping is golden brown.

Steps:

  • Heat oven to 400 degrees F. Melt butter in a 10-inch cast iron skillet or deep oven-proof skillet. Add onion and cook 5 minutes, stirring frequently. Add chicken and cook 6 minutes or until chicken is no longer pink inside. Remove from heat and stir in cream style corn and corn kernels.
  • Combine corn bread mix, milk and egg in a medium bowl. (Batter will be stiff.) Stir in 1/2 cup cheese. Using a large spoon, scoop batter into 6 mounds over the chicken mixture.
  • Bake 25 to 30 minutes or until bubbly and corn bread is golden brown. Remove from oven and top with remaining 1/2 cup cheese. Let stand 5 minutes for cheese to melt.
  • Arrange spinach evenly among 6 shallow bowls. Spoon one sixth of the chicken mixture and one corn biscuit over spinach in each bowl. Sprinkle evenly with bacon, if desired.

While thinking of a shortcut for what we Pennsylvania Dutch call "Corn Pie", I thought of using biscuit mix instead of pied dough. I tried my version on some friends who were visiting, and they scraped the dish clean!

Steps:

  • Preheat oven to 375°F. Toss together the peaches with sugar, cornstarch and lemon. Melt two tablespoons of butter in a 10 inch cast iron skillet by placing skillet in the oven for a couple of minutes.
  • In a large bowl, combine the cornmeal, flour, baking powder, brown sugar, salt and cinnamon.
  • Add the egg, melted butter and vanilla extract, stirring until dry ingredients are moistened. Add buttermilk, a little at a time until batter is wet but thick. You want a thicker texture than regular cornbread batter.
  • Transfer peaches to hot skillet and ladle dollops of cornmeal batter on top of the peaches, leaving some space between them, until all batter is gone. Bake for 45-50 minutes, or until top is lightly browned and edges are bubbling.
  • While cobbler is baking, beat together heavy cream, powdered sugar, cinnamon and vanilla extract with an electric hand mixer until stiff peaks form.
  • Serve cobbler warm with a dollop of cinnamon whipped cream.

1-1/2 pounds strawberries (, tops trimmed and strawberries quartered (about 4 cups))
3/4 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1-1/3 cups all purpose flour
1/2 cup cornmeal
2 tablespoons granulated sugar
2-1/2 teaspoons baking powder

Steps:

  • Preheat oven to 375 degrees F with rack in the middle position.
  • In a large bowl, toss together berries, 3/4 cup sugar, cornstarch, lemon juice, and vanilla extract. Transfer to a 13x9x2 baking dish set on a baking sheet (in case any fruit juices spill over).
  • Whisk together flour, cornmeal, 2 tablespoons sugar, baking powder, baking soda, and table salt.
  • Add cooled melted butter to chilled buttermilk. Stir until small butter clumps form. Stir butter and buttermilk mixture into the dry ingredients until just combined.
  • Drop biscuits over the fruit filling using heaping spoonfuls. Flatten just slightly with the back of your spoon to promote even baking. Topping will spread as it bakes.
  • Bake cobbler for 40-45 minutes, until filling is bubbling and topping is browned. Filling will thicken as it cools.
  • While cobbler is baking, melt together 1 tablespoon unsalted butter and the honey. Remove cobbler from oven and brush the biscuits with the honey butter mixture.
  • Let cobbler cool for 30-45 minutes, until just warm (cobbler is best served within a few hours of being made). Spoon into bowls and serve with vanilla ice cream or whipped cream.

145g ricotta
235g plain flour, plus extra for dusting
235g fine cornmeal or polenta
1½ tsp baking powder
1 tsp bicarbonate of soda
1 tsp caster sugar
115g cold butter, cut into small cubes
220ml buttermilk (or 120g yogurt mixed with 100ml milk if you can't find buttermilk)
1kg cherry tomatoes, halved
2 corn cobs, kernels cut away from the cobs
1tbsp balsamic vinegar
2½ tbsp extra virgin olive oil
2 large onions, roughly chopped
2 garlic cloves, grated
4 thyme sprigs, leaves picked
25g grated parmesan or vegetarian alternative

Steps:

  • Put the ricotta in a sieve lined with a piece of muslin, set over a bowl. Put in the fridge and leave to drain for a couple of hours - you want it to drain enough so it's no longer 'wet'.
  • Put the flour, cornmeal, ½ tsp salt, baking powder, bicarb and sugar in a bowl. Add the butter and rub it into the dry ingredients, as if you were making pastry. Make a well in the centre, pour in the buttermilk and, using a knife, gradually mix together. You should end up with a soft dough. Crumble over the ricotta and mix into the dough.
  • Turn the dough out onto a lightly floured surface and, using your hands, shape it into a rectangle, about 20 x 15cm. Fold the top third into the middle, then do the same with the bottom third. Press the mixture into a 20 x 15 rectangle again, and repeat the process two more times. You should end up with a dough that's about 2.5cm thick. Wrap and chill for 20 mins.
  • Heat the oven to 180C/160C fan/gas 4. Put the tomatoes in a baking dish (about 20 x 30cm) with the corn kernels. Add the vinegar, some seasoning and 1½ tbsp oil, and toss to coat. Set aside.
  • Heat the remaining oil in a frying pan over a medium heat, and cook the onions until golden and soft, about 12 mins. Add the garlic and cook for a few minutes more, then add the thyme and some seasoning. Spoon the onion mixture over the tomatoes and corn.
  • Lay the dough on a lightly floured surface and cut into rough circles or squares using a knife. Arrange the dough shapes over the veg, leaving some space between them. Sprinkle with the parmesan and bake for 45 mins until golden and bubbling (you should be able to see the tomatoes bubbling up from underneath the cobbler topping). Leave to cool a little - the tomatoes will be very hot when they come out of the oven - then serve.
