Steps:
- Preheat oven to 350 degrees F.
- In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.
- Pour into a greased casserole dish. Bake for 45 minutes, or until golden brown.
- Remove from oven and top with Cheddar.
- Return to oven for 5 to 10 minutes, or until cheese is melted.
- Let stand for at least 5 minutes and then serve warm.

Steps:
- carefully remove the corn from the cob with a knife and put in a food processor.
- transfer to a large bowl.
- coarsly puree with salt, pepper,and nutmeg.
- in a saute pan, add the oil and the onions and saute until translucent.
- add the onions to the corn mixture.
- add the beaten eggs, milk,and half of the grated cheddar and combine.
- use 2 teaspoons of oil to coat a 13x9-inch baking dish.
- transfer the corn mixture to the dish and top with the rest of the grated cheddar.
- place the dish in the oven and bake for 30 to 40 minutes or until the top of the casserole is golden brown in a preheated 350 degree oven.

CORNHUSKER CORN CASSEROLE

- Preheat the oven to 350 degrees F. Lightly oil or butter a baking dish or casserole.
- In the baking dish, stir together the hominy and corn leveling off the top of the mixture with a rubber spatula. Top with the garlic and cheddar.
- Whisk together the milk, eggs, salt, and cayenne in medium bowl, and pour this mixture over the top. Bake for 50 to 60 minutes, or until the casserole is set and the top is bubbling. Remove from the oven, let rest for 5 to 10 minutes, and serve hot.

This is a wonderful side dish for Holidays and potlucks. I make it alot and it is always devoured! Hope you enjoy! I usually triple the recipe for a 9X13 casserole!

- Melt butter in skillet, add flour.
- Blend well, add milk and sugar.
- Stir constantly until mixture is bubbly.
- Remove from heat.
- Place back on heat and boil 1 minute.
- Stir in corn and egg, mix well.
- Pour into a well greased casserole dish.
- Mix crackers with butter and sprinkle over top.
- Bake uncovered in 350 oven for 30-35 minutes.
- For a 9X13 pan I triple the recipe.
- I use two bags of the frozen corn and triple everything but the salt and topping.

- Coat the inside of a 9-inch square baking pan with cooking spray.
- Melt butter in a medium saucepan over medium heat; add in onion and chipotle; saute about 2 minutes, until the onion begins to soften.
- Add in the flour; whisk until white bubbles form on the vegetables.
- Cook the flour for about 2 minutes, being careful not to burn the chipotle.
- Gradually add the milk and sugar and bring to a boil, whisking constantly.
- Add in corn; stir to blend.
- Pour the mixture into the prepared dish; sprinkle cheese over the top.

- Preheat the oven to 450 degrees F. Melt the butter in a skillet over medium-high heat. Add the corn and 1/2 teaspoon salt and cook until tender, 5 to 6 minutes. Add the scallions and cook until soft, about 1 minute.
- Spread the chili in an 8-inch-square baking dish. Top with half of the cheese followed by half of the corn mixture. Lay the polenta rounds on top, then sprinkle with the remaining corn and cheese.
- Bake until the casserole is heated through and the top is golden, about 20 minutes. Let stand 5 to 10 minutes before serving.
- Toss the beef with 1 tablespoon each brown sugar and salt in a large bowl. Heat the vegetable oil in a large skillet over medium-high heat. Cook the beef in batches until browned on all sides, 4 to 5 minutes (do not crowd the pan). Transfer to a 5-to-6-quart slow cooker.
- Reduce the heat to medium, add the onion to the skillet and cook until soft, about 5 minutes. Stir in the garlic, chiles, cumin and chili powder and cook 3 minutes. CORN PASTA WITH SUN-DRIED TOMATOES

- In a large skillet, melt the butter over medium heat. Add the coriander and garlic and let it toast until you smell it, 30 to 45 seconds. Add half of the corn and cook for a couple of minutes to soften. Add the sugar, scallions and a pinch of salt. Cook for 2 to 3 minutes. Add the heavy cream and simmer until the cream reduces slightly, 3 to 5 minutes.
- Pour the mixture into a blender and puree until smooth. If the corn is "stringy" or the sauce grainy, strain through a fine-mesh sieve. Transfer the sauce to a large skillet and stir in the sun-dried tomatoes. Keep warm.
- In a large pot, bring 6 quarts of water to a rolling boil. Add a generous amount of salt. The pasta water should taste like sea water. Add the pasta to the pot and stir so it doesn't stick to the bottom as it cooks. Cook the pasta until al dente (chewy but not hard or raw tasting), 8 to 10 minutes. Reserve a little of the pasta cooking liquid in case you need it later, then drain the pasta in a colander.
- Toss the pasta in the skillet with the sauce and remaining corn. Add some basil leaves and salt and pepper. Scoop into bowls and top with Parmesan and more basil leaves.
