ONE POT CHEESY SPINACH CORN
This dish is an easy to prepare one pot cheesy corn spinach with Italian flavors.

Steps:
- Boil the corn cobs in water for 15 to 20 mins. When they warm or when they cool down, remove the kernels from the cob with a knife. Keep aside.
- Rinse the spinach in water thoroughly. Chop them and keep aside.
- Chop the scallions and garlic. Reserve the greens for garnishing.
- Heat the olive oil in a pan. Now add the scallions and garlic to it.
- Saute for 2 mins and then add the chopped spinach. Saute the spinach for 4 minutes.
- Add the black pepper and salt now
- After 2 mins add the red chili flakes and the oregano seasoning/italian seasoning/mixed herbs
- The spinach would have softened and considerably cooked after 3-4 mins. Now add the boiled corn kernels.
- Mix the corn with spinach and spices. Saute for 2-3 minutes more. Check the salt and seasonings and add more if required. Serve hot with warm or toasted bread.

- Heat a large skillet over medium heat and add the butter. When the butter is hot, stir in the corn and the starchy liquid scraped from the cobs. Cook for 5 minutes, then stir in the garlic and season with salt and pepper, to taste. Cook for 2 to 3 minutes more, then add the cream and nutmeg, stirring occasionally, until very creamy, about 15 minutes. Add the spinach and stir until wilted. Season with salt and pepper, if needed. Transfer to a serving bowl and serve.

SAUTEED SALMON WITH SWEET CORN

- Remove the stems from the mushrooms, and reserve them from the sauce. If the mushrooms are large, halve or quarter them.
- Skewer the garlic clove securely onto the tines of a fork. Heat 2 tablespoons of the olive oil in a large saute pan over medium heat. When the oil just begins to smoke, add the spinach. Cook, stirring with the fork, until wilted. Season with salt and pepper, and place in a colander to drain.
- In the same pan, melt 3 tablespoons of the butter. Saute the mushrooms, stirring with the fork, until softened, 1 to 2 minutes. Add the corn, and cook until heated through, 1 to 2 minutes. Season with salt and pepper.
- Arrange the spinach in the center of 4 plates. Surround the spinach with the corn mixture. Keep warm. Heat the remaining oil and butter in the pan over high heat. Season the salmon with salt and pepper, and saute until medium-rare, about 2 minutes per side.
- Place a salmon fillet atop the spinach on each plate. Spoon the sauce over the salmon, garnish with chives, and serve immediately.

This was a quick and easy vegetable when my fridge was near empty. This was also really good. My oldest son ate 2 helpings and my youngest gobbled his up after he saw his brother's empty plate.

Steps:
- 1. Cut bacon into pieces. Fry bacon in medium saute pan over medium high high. Cook til crisp. Re move bacon from pan. Drain off all but 1 T. grease.
- 2. Add corn to reserved bacon grease. Saute 8-10 min til pan is dry.
- 3. Add drained and strained spinach to corn.
- 4. Add glove of minced garlic.
- 5. Stir in cream. Add salt and pepper. Cook 5-10 min til liquid is absorbed.
- 6. Put bacon back in the pan and stir until heated through. Season to taste.
