Raw Corn and Radish Salad With Spicy Lime Dressing image

This recipe originally came from Food and Wine Magazine's website, but my friend, Kendra, changed it up a little bit. It is so fresh and delicious tasting.

2 tablespoons lime juice, fresh
1 small jalapeno, seeded and coarsely chopped
1 (1 g) packet Splenda sugar substitute
1/4 teaspoon cumin
1/4 cup vegetable oil
1/4 teaspoon cayenne pepper
kosher salt & freshly ground black pepper, to taste
4 cups corn kernels (about 4 ears)
6 medium radishes, halved and thinly sliced crosswise
1/2 cup cilantro, coarsely chopped

Steps:

  • In a bowl, blend lime juice, Splenda, cumin.
  • Add the oil to the mixture and then season with salt and pepper.
  • In the meantime, boil corn cobs for about 5 minutes (if you'd like you can leave them raw.).
  • Cut kernels off of corn cob and put in a bowl.
  • Add radishes, cilantro, and dressing to the corn.
  • Season with more salt and pepper, if necessary.

Garden-Fresh Corn Salad image

This fresh corn salad recipe features raw sweet corn, fresh herbs, cucumber, radishes, jalapeño, tomato and more! It's the perfect summertime salad. Recipe yields 4 to 6 salads.

3 cups raw corn kernels (from about 4 cobs)
1 medium tomato, chopped (about 1/2 cup)
3/4 cup chopped green onion
1 cup quartered and thinly sliced cucumber (preferably English cucumber)
1/2 cup chopped fresh leafy herbs (choose from basil, dill, mint, parsley and/or cilantro)
1/2 cup chopped radishes
1 medium jalapeño, very thinly sliced (omit if sensitive to spice)
1/4 cup extra-virgin olive oil
1 tablespoon red wine vinegar or white wine vinegar, to taste
2 medium cloves garlic, pressed or minced
½ teaspoon fine sea salt, to taste
Freshly ground black pepper, to taste
1/3 cup crumbled feta cheese or 1 ripe avocado, diced

Steps:

  • In a large serving bowl, combine the corn, tomato, green onion, cucumber, herbs (don't skimp on the herbs!), radishes, and jalapeño.
  • In a liquid measuring cup or small bowl, combine the olive oil, vinegar, garlic, salt and several twists of black pepper. Whisk until blended, then pour it over the salad. Toss to combine.
  • Add most of the feta or avocado (reserve some for garnish), and gently toss. Taste, and add more vinegar for more tang (I usually add another full tablespoon), or salt for more overall flavor. Garnish with the remaining feta or avocado.
  • Serve promptly, or chill for later. This salad keeps well for 3 to 4 days in the refrigerator, covered.

FAVA BEAN, RADISH, AND CORN SALAD



Fava Bean, Radish, and Corn Salad image

Any side dish or salad that includes corn is pretty, but fava beans and striking-looking breakfast radishes-with their elongated shape, rosy red color, and creamy-looking root ends-make this dish more appealing and appetizing than most. Like most chefs, I love favas, but if you can't find them or think they are too much trouble, replace them with lima beans.

1 1/2 cups shucked fava beans
2 tablespoons extra-virgin olive oil
1 shallot, minced
1 1/2 cups corn kernels
8 breakfast radishes, sliced on the bias
2 tablespoons chopped chives
1 tablespoon chopped fresh basil
1 tablespoon fresh lemon juice
Salt and freshly ground black pepper

Steps:

  • Method:
  • Cook the fava beans in a pot of simmering salted water for 2 to 3 minutes or until cooked al dente. Drain in a colander and shock immediately in a bowl of ice water to stop the cooking. Drain and place in a medium mixing bowl.
  • Place 1 tablespoon of the olive oil in a preheated sauté pan. Add the shallots and cook over medium heat for 1 minute or until the shallots are translucent. Add the corn to the pan and cook for 3 minutes or until the corn is just cooked. Remove from the heat and cool to room temperature.
  • Add the corn, radishes, chives, basil, lemon juice, and remaining olive oil to the bowl with the fava beans. Mix until thoroughly combined, then season to taste with salt and pepper.
  • Assembly:
  • Equally divide the salad between four bowls and enjoy. The salad can be served at room temperature or chilled.

4 ears corn
6 radishes, trimmed, halved, and thinly sliced
1 jalapeño chile, finely chopped (ribs and seeds removed for less heat, if desired)
2 tablespoons fresh lime juice
1 tablespoon olive oil

Steps:

  • In a large pot of boiling salted water, cook the corn until fragrant and tender, 8 to 12 minutes. Remove the ears, and hold under cold water until completely cool. Working in a large bowl, slice the kernels from the cobs (to yield about 2 cups). Toss with the radishes, jalapeño, lime juice, and olive oil. Season generously with salt. Serve chilled or at room temperature.

6 slices bacon (about 6 ounces), coarsely chopped
4 ears corn, husks and silk removed, snapped in half
Kosher salt and freshly ground pepper
4 scallions, trimmed and cut into 1-inch pieces
1/2 small clove garlic
4 anchovy fillets in oil
1/2 cup packed fresh basil leaves
1/4 cup mayonnaise
1/4 cup sour cream
4 teaspoons distilled white vinegar
2 avocados, peeled, pitted, and cut into a 1/2-inch dice
5 radishes, halved and thinly sliced (1 cup)
3 hearts of romaine, cut into bite-size pieces (12 cups)

Steps:

  • Cook bacon in a skillet over medium heat until crisp, 6 to 8 minutes. Transfer to paper towels. Meanwhile, cook corn in a large pot of generously salted boiling water just until crisp-tender, about 2 minutes. Drain. When cool enough to handle, cut kernels from cobs; let cool completely.
  • In a food processor, pulse scallions, garlic, anchovies, and basil until finely chopped. Add mayonnaise, sour cream, vinegar, 2 tablespoons water, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; purée until smooth. Transfer to a large bowl. Add avocados, stirring to fully coat in dressing. Top with corn and radishes, then romaine and bacon. Cover and refrigerate up to 8 hours. Toss to combine and evenly coat in dressing (or shake vigorously, if using a bowl with a resealable lid) just before serving.
