2 cups masa harina
1 can (14-1/2 ounces) chicken broth
2 tablespoons butter, melted
1 large egg, lightly beaten
2-1/2 pounds boneless pork loin roast, cut into 1/2-inch pieces
1 medium onion, chopped
1 can (16 ounces) refried beans
2 dried Anaheim chilies, chopped
2 dried Ancho chilies, chopped
2 ounces Mexican or semisweet chocolate, grated
1/3 cup orange juice
2 tablespoons lime juice
1 tablespoon garlic powder
2 teaspoons Gustus Vitae spicy chocolate cinnamon cane sugar
3 teaspoons cumin seeds, toasted and crushed
3/4 cup minced fresh cilantro, optional
2 cups shredded cheddar cheese

Steps:

  • Drain corn, reserving liquid; set corn aside. Place masa harina in a large bowl. In a small bowl, combine the broth, butter, egg and reserved corn liquid; stir into masa harina just until moistened. Set aside., In a large skillet coated with cooking spray, cook pork and onion over medium heat until pork is no longer pink. Add the beans, chilies, chocolate, orange juice, lime juice, garlic powder, spicy chocolate cinnamon sugar, cumin, reserved corn, and cilantro and jalapeno if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes., Transfer to a greased 13x9-in. baking dish; sprinkle with cheese. Spread masa harina mixture over cheese. , Bake, uncovered, at 325° for 50-60 minutes or until golden brown. Let stand for 10 minutes before serving.

GREEN CHILI "TAMALE" CASSEROLE



Green Chili

It's Hatch chili time here and I was mulling over what to do with some of the bushel of roasted peppers we bought and this is what I came up with. It's super easy and darn yummy.

2-3 lb pork shoulder roast
1 can(s) hatch chili (4 oz) (or one fresh roasted if you have it)
3-4 clove garlic
1 large onion
1/2 c water
GREEN CHILI
3 Tbsp oil (olive/veg)
6 Tbsp flour
5 c reserved broth from pork then water to make up the difference
1 can(s) diced tomatoes -15 oz (can use rotels for extra flavor)
2 Tbsp cumin
2 Tbsp chili powder
2 c roasted green chili - fresh (it's super easy to do at home!)
1 tsp salt
OTHER
package of corn tortillas. i used an 18 count medium size package
"mexican" style cheese (suggested 2 cups)

Steps:

  • 1. Slice onion fairly thick and lay at the bottom of a crock pot. Add the water, then the pork shoulder. Crush/slice the garlic onto of the pork, then add the can of chili. Set on low and let it go for overnight (I let mine go for about 16 hours. Needless to say, it didn't need that long, but it certainly doesn't hurt it!) Save liquid.
  • 2. In a large pot, add oil then flour when combined, slowly add the reserved pork stock and water, stirring avoid lumps. Add canned tomatoes and seasonings.
  • 3. If you can, blend half the roasted green chilies till smooth and chop the rest. If that's too much of a pain, you can skip that and just chop the whole lot and add them to the sauce.
  • 4. Next shred your pork and add that to the sauce. Cook on low heat for an hour to blend. Stir when needed.
  • 5. Pre-heat oven to 350. In a 9 x 13 pan place a triple layer of corn tortillas. Then add a layer of the chili on top of that add a layer of the cheese. Then add another layer of tortillas then meat. Bake in the oven for 30 minutes uncovered, then add a final layer of cheese. Bake another 10-15 minutes till the cheese is melted. (You could easily use a smaller baking dish and freeze the rest of the chili) Serve with sour cream/lettuce/salsa/green onions and whatever other toppings you enjoy.
  • 6. Note: You'll want to serve this in bowls as it's a loose dish. Also, don't be afraid to play around with the ingredients. If you want more heat you can saute (or roast!) some jalapeno and add them to the sauce.

2 cups instant masa harina flour, Maseca
2 cups corn, fresh roasted and cut off the ear
1 teaspoon baking powder
1 teaspoon salt
1/3 cup lard
1/3 cup butter, softened
1 cup cream
3/4 cup chicken stock
2 cups green chilies, fresh roasted, peeled and seeded
2 cups corn, fresh roasted and cut of the ears
1/4 cup butter, melted
1/2 cup cheddar cheese, shredded
1 teaspoon salt
1 teaspoon cumin
1 teaspoon black pepper
2 dozen corn husks

Steps:

  • Do all prep work with the corn and green chilis.
  • Clean and rinse the corn husks. Place in a large bowl and soak in hot water for about 30 minutes.
  • Make the masa by mixing together all of the masa ingredients with a mixer. The consistency should end up similar to a chocolate chip cookie dough, slightly wetter.
  • Make the filling by stirring together all of the filling ingredients in a large bowl.
  • Spread masa in center of each corn husks. Sometimes you may need to use two corn husks to make it wide enough. I like my tamales to be very thick and large, so you want to spread it into a rectangular shape approximately 6 inches by 3-4 inches, depending on the shape of your corn husks.
  • Place a spoonful of the filling in the center of the masa in each corn husk.
  • Roll like a burrito, ensuring the filling is sealed on all sides with masa.
  • Place in a steamer and cook the batch together for approximately 45-60 minutes. You want the masa to be cooked but not overcooked. It will still appear a bit wet when tested, but not stick to the corn husk.
  • Serve with a bit of shredded cheese, fresh scallions, and cilantro -- and sour cream if you desire!
  • Enjoy!

This recipe came to The Times in a 2006 magazine article about the 75th anniversary edition of The Joy of Cooking, the soup-to-nuts cookbook found on practically every home cook's shelf since its first publication in 1931. Like many of the book's beloved recipes, this dish is a crowd-pleasing, homespun classic that is incredibly simple to put together. First, make a quick chili of beef, black beans, corn, green pepper and onion seasoned with chile power and cumin. Spread that in a baking dish, top with a simple cornbread batter and pop it into the oven. In about a half hour: tamale pie. Serve with hot sauce, a dollop of sour cream and a few slices of avocado. If you're trying to eat less red meat, ground turkey or chicken would make a fine substitute for the beef.

My hubby likes for me to spice this up sometimes, so I will use a 14-ounce can of tomatoes and green chiles in it or just use a Mexican-style cornbread mix sometimes.

1 1/4 cups shredded Mexican cheese blend (5 oz)
1/3 cup milk
1 egg plus 1 egg white, beaten (about 1/4 cup eggs)
1 teaspoon ground cumin
1 pinch red pepper flakes
1 can (14.75 oz) cream-style corn
1 box (8.5 oz) corn muffin mix
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 can (10 oz) Old El Paso™ mild green chile enchilada sauce
3 cups shredded or chopped deli rotisserie chicken
1 tablespoon Old El Paso™ taco seasoning mix (from 1-oz package)
Chopped green onions, chopped fresh cilantro and sour cream, for topping, if desired

Steps:

  • Heat oven to 400°F. Generously spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In large bowl, stir 1/4 cup of the shredded cheese, the milk, eggs, cumin, red pepper flakes, cream-style corn, cornbread mix and chopped green chiles until just combined. Spread evenly in baking dish.
  • Bake 15 to 20 minutes or until corn mixture is just set and edges are lightly golden brown.
  • Use fork to poke holes in top of corn mixture. Pour enchilada sauce evenly over top.
  • Toss chicken with taco seasoning mix, then sprinkle over the top. Sprinkle remaining 1 cup shredded cheese on top of chicken.
  • Bake about 15 minutes or until cheese is melted. Let stand 5 minutes before serving.
  • Top with chopped green onions, chopped cilantro and dollops of sour cream.
  • To freeze: Cool completely after baking, then cover tightly with plastic wrap and foil before freezing. When ready to bake, remove plastic wrap and foil. Heat oven to 400°F. Cover dish with just foil. Bake 40 to 45 minutes or until heated through. Tip: If you plan to freeze your dish, I'd suggest baking it ahead of time in a non-glass dish--otherwise, you'll want to let the dish thaw for a bit before placing it in the oven so the glass doesn't run the risk of shattering.
