1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
2 large tomatoes, finely chopped
1 large red onion, finely chopped
1/4 cup minced fresh cilantro
2 garlic cloves, minced
DRESSING:
2 tablespoons sugar
2 tablespoons white vinegar
2 tablespoons canola oil
1-1/2 teaspoons lime juice
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine the first 6 ingredients. In a small bowl, whisk dressing ingredients; pour over corn mixture and toss to coat. Cover and refrigerate at least 1 hour. Stir before serving. Serve with a slotted spoon.

1 can (15 oz) black beans, rinsed, drained
1 can (11 oz) whole kernel corn, red and green peppers, undrained
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
2 cups shredded Colby-Monterey Jack cheese (8 oz)
1 can (10 oz) Old El Paso™ enchilada sauce
8 flour tortillas (6 to 7 inch)*
Shredded lettuce, chopped tomatoes, chopped avocado, sour cream and salsa, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, mix black beans, corn, green chiles, 1 cup of the cheese and 1/4 cup of the enchilada sauce.
  • Spread 1/2 cup of the enchilada sauce over bottom of baking dish. Spoon 1/2 cup bean mixture down center of each tortilla. Roll up tortillas; place seam sides down in baking dish. Spoon remaining enchilada sauce over enchiladas. Sprinkle with remaining 1 cup cheese. Spray sheet of foil with cooking spray. Cover baking dish with foil, sprayed side down.
  • Bake 30 to 35 minutes or until thoroughly heated. Serve topped with lettuce, tomatoes, avocado, sour cream and salsa.

Wonderful Salsa With Black Beans and Corn image

I love Chic chi's Fiesta Style Salsa and was looking for a recipe on here that was similar and I couldn't find one. I canned Wonderful Salsa, recipe #9272 last year and LOVED it, so I created my own "Fiesta" Salsa. I would like to thank Jazze22 for sharing her Wonderful Salsa recipe. I will post the recipe as I made it, I did make a couple changes from the original recipe. I hope if you try it, that you like it as much as I do. To cut the heat remove the veins and seeds. Also, wear gloves when handling the peppers.

2 1/2 cups onions, chopped (I use sweet onions)
1 1/2 cups green peppers

1 teaspoon black pepper
1/8 cup canning salt
1/3 cup vinegar
1 (15 ounce) tomato sauce

  • Mix all together and bring to a slow boil for 10 minutes.

1 organic ear corn, cooked and cut from the cob
1 large organic tomato, chopped
2 green onions, sliced (white and light green parts)
1 tablespoon fresh cilantro, chopped
1 tablespoon fresh lime juice
2 teaspoons extra virgin olive oil
2 tablespoons onion, chopped
2 garlic cloves, minced
1 small jalapeño pepper, seeded and minccd
1/2 teaspoon ground cumin
1 15-ounce can organic black beans, rinsed and drained
1-1/4 cup low-sodium chicken broth
1 tablespoon fresh cilantro, chopped
4 free-range chicken thighs (bone in or boneless with skin)
2 cloves garlic, finely minced
3 tablespoons lime juice
1 teaspoon lime zest
2-1/2 tablespoons extra virgin olive oil
1 tablespoon honey
1/4 teaspoon paprika
fresh parsley, coarsely chopped for garnish
lemon slices for garnish

Steps:

  • Mix the garlic, lemon and lime juices, lemon and lime zest, olive oil, honey and paprika in a large plastic bag (or a bowl). Whisk to blend.
  • Add the chicken to the marinade and seal the bag (or place plastic wrap over the bowl).
  • Refrigerate the chicken for 2 hours or it can stay in the fridge over night.
  • Heat a grill over medium low heat
  • Add the chicken and grill on each side for about 5 - 7 minutes or until the juices run clear and the chicken is no longer pink on the inside
  • Heat the olive oil in a skillet
  • Sautee the onion over low-heat for 5-7 minutes or until lightly golden
  • Add the garlic and saute for another 1-2 minutes
  • Transfer the onion and garlic mixture to a blender
  • Add the jalapeno, cumin, black beans, chicken broth and cilantro
  • Blend until the mixture is blended but there are still whole pieces of bean
  • Return the mixture to the skillet and simmer on low heat for 3-5 minutes until heated through
  • Grill or boil corn on the cob. (or heat through frozen or canned corn)
  • Place all of the ingredients in a bowl and toss to combine.
  • Add sea salt and freshly ground black pepper to taste (if desired).

2 tablespoons extra-virgin olive oil
1 yellow onion (diced)
2 cloves garlic (minced)
1 lb. ground turkey
kosher salt (to taste)
black pepper (to taste)
15 oz. canned black beans (drained and rinsed (1.5 cups))
1 cup frozen corn
1.5 cups enchilada sauce ((homemade, or a 15 oz. can))
10-12 flour tortillas ((see notes for corn))
16 oz. shredded Monterey Jack cheese (or cheddar, pepper jack, etc.)
cilantro, red onion, sour cream, avocado, etc. (for serving (optional))

Steps:

  • Preheat oven to 375 degrees F.
  • Sauté the diced onion over medium-high heat in the olive oil in a large skillet until softened and starting to brown (about 3 minutes).
  • Add the minced garlic (2 cloves) and ground turkey (1 lb.), along with kosher salt and black pepper. Continue cooking over medium-high heat, breaking up the turkey into small pieces and stirring consistently, until turkey is just cooked through (about 5 minutes).
  • Turn the heat down to medium-low and add the black beans and corn. Stir and heat until ingredients are warmed through (about 1-2 minutes).
  • Add 1/4 cup of the enchilada sauce to the turkey mixture and stir together. Turn off heat.
  • Meanwhile, wrap the flour tortillas (10) in a damp paper towel and microwave for 30 seconds to a minute, to warm them up. This will make them more malleable and easier to roll.
  • Spread 1/4 cup of the enchilada sauce on the bottom of a 9x13 baking dish. Fill each tortilla with about 1/3 cup of the turkey mixture (just estimate, it doesn't have to be perfect), along with about 2 tablespoons of the shredded cheese. Fold the tortilla over to overlap the two sides, and place each seam-side down in the prepared baking dish.
  • If you have any leftover filling, just stuff along the ends of the prepared enchiladas in the baking dish (or use it for another purpose).
  • Cover the center of the enchiladas with the remaining 1 cup of enchilada sauce, and top with remaining cheese.
  • Bake covered with foil at 375 degrees for 20 minutes. Uncover and bake for 10 more minutes, until cheese is fully melted and ends of enchiladas are starting to brown a bit.
  • Serve topped with diced avocado, red onion, fresh cilantro, and sour cream, if desired.

1 (14-ounce) can black beans, drained
1 clove garlic
1/2 cup red onion
1/2 cup red pepper
1/2 cup corn kernel
1 egg
1/4 teaspoon chili powder
1/4 teaspoon chipotle chili powder
1/4 teaspoon oregano
1/2 teaspoon cumin
salt and pepper
1 cup bread crumbs
1 cup corn kernels
1/4 cup red pepper
2 green onions
10 teardrop tomatoes
juice of 2 limes
salt and pepper
1 avocado
1/2 cup sour cream
1 teaspoon cumin
1 Tablespoon lime juice

Steps:

  • Mix together garlic, onion, red pepper, corn, egg, chili powders, oregano, and cumin. Season with salt and pepper.
  • Mash the black beans a bit and add to the bowl.
  • Stir in the bread crumbs.
  • Form into patties, and chill in the fridge for 20 minutes or so. It helps keep the patties together.
  • Mix together all of the ingredients for the salsa while the black bean patties are chilling.
  • To make the avocado sauce, put the avocado, sour cream, lime, and cumin, in the blender. Blend until smooth. It is a very thick sauce, you can thin it with more lime juice or some water.
  • Heat a pan over medium heat. Pour in a few Tablespoons of olive oil and put the patties in the pan. Resist the urge to flip the cakes to soon. They will fall apart. Cook until they brown and then flip. Cook the other side.
  • I put mine on a bed of spinach leaves. Top with corn salsa and avocado sauce. Serve with lime wedges.

This relish (otherwise known as a salsa) has its roots all over Latin America and the Caribbean. Use freshly roasted sweet corn for best results, but canned or frozen corn can be used during those times when fresh corn is unavailable.

3 ears fresh sweet corn (or 1 cup frozen corn)
2 Tbsp butter
1 15-oz can(s) black beans, drained
2 tomatoes, seeded and chopped
2 scallions, finely chopped
3 Tbsp olive oil
1 Tbsp red wine vinegar
salt and freshly ground pepper, to taste

Steps:

  • 1. Carefully peel back the corn husks and remove the "silk" from inside. Soak the corn in a large bowl of cold water for 30 minutes. Drain the corn and pat dry.
  • 2. Rub the butter over the corn kernels and fold the corn husks back into place around the cob.
  • 3. Grill over hot coals or under a preheated broiler for 15 to 20 minutes, turning about every 5 minutes.
  • 4. Allow to cool, peel the husks and cut the corn off the cobs. Combine with the remaining ingredients in a mixing bowl and toss to combine.
  • 5. Chill for at least 1 hour before serving.
