Kerikeri New Zealand Corn Salad image

Kerikeri, from earliest days a fertile growing area, was where the first plough was used in New Zealand in 1820. It is interesting to note that the Maori gardeners in the Bay of Islands grew garlic as a trading crop before the Treaty was signed. --From keewee's corner.

Number Of Ingredients 9

2 cups cooked sweet corn
1 cup cooked green peas
1 cup diced cucumber
2 tablespoons chopped green onions or 2 tablespoons chives
1 garlic clove, minced
1/4 cup salad oil
2 tablespoons vinegar
salt & pepper
cayenne pepper

Steps:

  • Drain the cooked vegetables well and mix with the cucumber.
  • Shake the oil & vinegar together in a screw top jar with salt & pepper, cayenne pepper, minced garlic and green onions and dress the vegetables with this, tossing lightly until all are coated.
  • Serve cold.

This is my mum's, so the BEST pie ever! It is fantastic served with ketchup and in my opinion is probably better cold. Great for picnics.

Number Of Ingredients 6

2 sheets puff pastry
6 -8 slices cooked bacon (fried or grilled)
8 eggs (reserve one yolk for brushing pastry)
4 teaspoons milk or 4 teaspoons double cream
1 onion (not too big)
parsley

Steps:

  • leave the pastry out for 20 minutes at least to stop it from tearing when using.
  • Cut the rinds of the bacon and chop bacon.
  • Whisk eggs putting one yolk to the side.
  • Whisk in the milk or cream.
  • Chop onion.
  • Lay one sheet of pastry in a casserole dish and make sure it comes just over the sides of the dish.
  • Prick the base with a fork.
  • Sprinkle the onion all over the base.
  • Chop the parsley (one whole packet).
  • Mix the parsley and bacon in with the egg mixture.
  • Pour into the dish.
  • Cover with other sheet of pastry and crimp together and cut of any excess pastry.
  • Decorate the top if you want.
  • Cook for 25 minutes and check its not burning.
  • If so, place some tin foil over and place back in the oven for another 5-10 minutes until cooked.

TAMARILLO AND DATE CHUTNEY (NEW ZEALAND)

This chutney is our favourite and is a great tasty accompaniment to cold cuts of meat such as chicken and beef and is also vert tasty with cheese and crackers especially Brie and Camembert. I compiled this recipe myself with experimenting with tamarillos.

24 tamarillos
4 apples, cored and chopped
4 large onions, chopped
400 g pitted dates, chopped
500 ml malt vinegar
1 kg brown sugar
2 teaspoons mixed spice

Steps:

  • Slice tamarillos in half lengthwise and place in microwave dish and cook for five minutes.
  • This enables one to remove skins with ease.
  • (Depending on size of dish this will take several lots to microwave the 24 tamarillos).
  • Place all ingredients in a large pot or preserving pan and bring to the boil stirring frquently.
  • Simmer covered stirring frequently for approximately 2 hours or until thick.
  • Pour into hot sterilised jars and cover when cold.
