Steps:

  • Wrap each ear of corn with a bacon strip; place on a piece of heavy-duty foil. Sprinkle with chili powder. Wrap securely, twisting ends to make handles for turning., Grill corn, covered, over medium heat 20-25 minutes or until corn is tender and bacon is cooked, turning once.

Corn is my three boy's favorite vegetables, so we eat a lot of it. This recipe has been a favorite for years. My husband, Bob, and the boys really enjoy it.

6 bacon strips
1/2 cup chopped onion
2 tablespoons all-purpose flour
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup sour cream
3-1/2 cups fresh or frozen whole kernel corn
1 tablespoon chopped fresh parsley
1 tablespoon minced chives

Steps:

  • In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoon of drippings. Crumble bacon; set aside. , Saute onion in drippings until tender. Add flour, garlic, salt and pepper. Cook and stir until bubbly; cook and stir 1 minute more. Remove from heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well. , Pour into a 1-qt. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Sprinkle with chives.

2 tablespoons unsalted butter
2 strips bacon, chopped
1/2 jalapeno, seeded and minced
2 cups canned sweet corn
Kosher salt and freshly ground black pepper
1 clove garlic, minced
2 scallions, thinly sliced
2 tablespoons condensed milk
2 tablespoons mayonnaise
1/2 cup mozzarella cheese

Steps:

  • Place a 5-inch cast-iron skillet in the oven; preheat the oven to broil.
  • Heat a wok or saute pan over high heat. Add the butter and bacon and cook until the bacon is crisp, about 20 seconds. Toss in the jalapeno and corn, season with a pinch of salt and pepper and cook until the corn kernels start to char a little bit, 20 to 30 seconds. Add the garlic and half of the scallions. Add the condensed milk, mayonnaise and 1/4 cup of the mozzarella and cook until the cheese is melted and the ingredients are well mixed, another 20 seconds. With a towel, grab your hot skillet from the broiler and carefully pour in the corn-cheese mixture. Sprinkle the remaining 1/4 cup mozzarella over the top and set under the broiler until golden brown, 30 to 45 seconds. Garnish with the remaining scallions.

1/4 cup onions (finely diced )
1 tsp sugar
2 tbsp butter
salt and pepper to taste

Steps:

  • In a large cast-iron skillet, cook the bacon over medium-high heat. Cook until nice and crisp.
  • Remove the bacon from the skillet leaving the bacon grease in the skillet. Chop the bacon into bite-sized pieces.
  • Add the onions to the skillet and cook for 2-3 minutes or until translucent.
  • Add the corn, sugar, butter, salt, and pepper, and cook for 10 minutes. Stirring occasionally.

4 cups corn kernels
1 teaspoon sugar
salt and pepper to taste
2 tablespoons chives (sliced)

Steps:

  • Place the bacon in a large pan. Cook over medium high heat until browned and crisp.
  • Remove the bacon from the pan with a slotted spoon and set on a paper towel to drain.
  • Drain grease off pan until approximately 1 tablespoon remains.
  • Add the onion to the bacon grease. Cook for 2-3 minutes or until translucent.
  • Add the corn, sugar, salt and pepper to the pan.
  • Cook for 8-10 minutes, stirring occasionally, until corn starts to caramelize and brown on the edges.
  • Stir the bacon back into the corn. Top with chives and serve.

Crust:
1 cup unbleached all purpose flour
3/4 cup fine-grind whole grain cornmeal
1/2 teaspoon salt
1/4 cup (1/2 stick) chilled unsalted butter, cut into 1/2-inch cubes
3 tablespoons chilled solid vegetable shortening (preferably with no trans fats), diced
3 to 4 tablespoons ice water
Nonstick vegetable oil spray
Dressing
1/2 pound bacon, coarsely chopped
1 1/2 cups chopped sweet onion (such as Vidalia or Maui)
1 cup chopped red bell pepper
1 12-ounce package frozen corn kernels (2 1/2 cups), thawed, patted dry
1 1/2 cups half and half
3 large eggs
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper
1 cup chopped green onions
1 1/2 cups (packed) coarsely grated Gruyère cheese (about 6 ounces)

Steps:

  • For crust:
  • Whisk first 3 ingredients in large bowl. Using back of fork, cut in butter and shortening until mixture resembles coarse meal. Add 3 tablespoons ice water. Toss until dough comes together in moist clumps, adding more water by teaspoonfuls if dough is dry. Shape dough into disk. Wrap; chill at least 30 minutes.
  • Preheat oven to 400°F. Spray 9-inch-diameter glass pie dish with nonstick spray. Place large piece of parchment paper on work surface. Place dough in center; cover with second sheet of parchment. Roll out dough to 12-inch round. Peel off top parchment. Using bottom parchment as aid, turn dough over into prepared pie dish. Carefully peel off remaining parchment. Fit crust into dish, sealing any tears. Fold excess dough under and crimp edges, forming highstanding rim. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • For filling:
  • Cook bacon in large skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towels to drain. Pour off all but 1 1/2 tablespoons drippings. Add onion and pepper to skillet. Sauté until almost tender, about 8 minutes. Add corn; sauté until very tender, about 3 minutes longer.
  • Whisk next 6 ingredients in large bowl to blend. Mix in green onions, then corn mixture. Sprinkle bacon, then cheese over bottom of crust. Pour in egg mixture.
  • Bake pie until filling is golden and just set in center, about 55 minutes. Let pie cool at least 30 minutes and up to 1 hour. Serve slightly warm.

  • Place the uncooked corn on the cob on a plate, upright. Us a sharp knife or a corn on the cob gadget to remove the kernels from the cob. Place the fresh corn kernels in a medium size saucepan. Place any corn milk (the white liquid) from slicing the corn off of the cob in the pan as well.Fry four slices of thick slab bacon in a medium size fry pan. Place the bacon on paper towels to cool and drain. After the bacon has cooled, cut the strips into one inch pieces. Add the bacon pieces to the saucepan with the corn kernels. Add a 1/4 cup butter to the pan with the corn and bacon. Season with black pepper to your taste. Cook the fresh corn kernels and bacon under medium heat for about 10 - 15 minutes or until hot and cooked through, serve immediately.
  • My husband and I didn't need to season the corn with salt. The bacon added enough salt to the corn so that wasn't necessary. Taste the corn before salting, you may find you don't need it.
