1 lb. (0.4 kg) tail-on jumbo shrimp, peeled and deveined
1/4 teaspoon salt or to taste
1 pinch cayenne pepper
2 tablespoons olive oil
4 cloves garlic, minced
3 tablespoons chopped cilantro, stems and leaves
1 tablespoon unsalted butter
2 tablespoons lime juice
fresh lemon wedges

Steps:

  • Season the shrimp with salt and cayenne pepper.
  • Heat up a cast-iron skillet, add the olive oil, garlic and lightly saute before adding the shrimp. Stir and cook until the shrimp is half cooked. Add the cilantro, butter, stir to combine well with the shrimp. Add the lime juice and continue to cook the shrimp. Turn off the heat when the lime juice dries up and the shrimp is nicely cooked and slightly charred on the surface. Serve immediately with some fresh lime wedges.

1 ½ pounds large or jumbo shrimp (peeled, de-veined, and tails removed if desired)
6 tablespoons butter (melted)
2 tablespoons low sodium soy sauce
1 tablespoon fresh squeezed lime juice
4 tablespoons honey
3 teaspoons minced garlic
¼ cup chopped cilantro

Steps:

  • Whisk together butter, soy sauce, lime juice, honey, and garlic.
  • Add shrimp to a large skillet over medium-high heat. Stir in garlic sauce.
  • Bring sauce to a boil, stirring shrimp occasionally, until shrimp is fully cooked and sauce has thickened, about 6-8 minutes.
  • Stir in cilantro and serve immediately.

1/2 cup fresh lime juice
1/4 cup orange marmalade
3 large garlic cloves, minced and mashed to a paste with
1 teaspoon salt
1/2 cup fresh coriander sprig, washed well, spun dry, and chopped fine
4 tablespoons olive oil
1 tablespoon soy sauce
1/2 teaspoon hot red pepper flakes
salt and pepper, to taste
1/2 lb large shrimp, shelled, leaving tail and first shell section intact, and if desired deveined (21 to 24 per pound)
2 oranges
2 heads endive
fresh coriander sprig, for garnish

Steps:

  • In a measuring cup whisk together lime juice, marmalade, garlic paste, coriander, 3 tablespoons oil, soy sauce, red pepper flakes, and salt and pepper to taste and reserve 1/2 cup mixture in a small bowl or ramekin for dipping.
  • In a large sealable plastic bag combine shrimp with remaining mixture and marinate, chilled, tossing occasionally to coat shrimp, 45 minutes.
  • Peel oranges and slice horizontally.
  • Wash endive leaves.
  • Arrange orange slices and endive on a plate.
  • Drain shrimp, discarding marinade and lightly pat dry between paper towels.
  • In a large non-stick skillet heat 1 1/2 teaspoons oil over moderately high heat until hot but not smoking and saute 1/2 of the shrimp until golden brown and cooked through, about 1 1/2 minutes on each side.
  • Saute remaining shrimp in remaining 1 1/2 teaspoons oil in same manner.
  • Place shrimp atop orange and endive salad.
  • Garnish with coriander sprigs and drizzle with reserved dipping sauce.

CHILI'S SPICY GARLIC & LIME SHRIMP

I have not had these shrimp at the Chili's restaurant, but have frequently made this recipe. We like to serve them as appetizers. However, they are equally as good tossed with some pasta (with or without alfredo sauce). The recipe came from Top Secret Recipes and has been a favorite at our house for quite some time.

2 tablespoons butter
1 clove garlic, pressed
24 fresh large shrimp, peeled (about 1 pound)
1 lime
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon dried parsley flakes
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon dried thyme
1/8 teaspoon onion powder

Steps:

  • Make the seasoning blend by combining all the spices in a small bowl.
  • Preheat a large skillet over medium heat.
  • Add butter to the pan.
  • When the butter is melted, stir in the pressed garlic.
  • Immediately, add the shrimp to the pan.
  • Cut the lime in half and squeeze each half into the pan over the shrimp.
  • Sprinkle the entire seasoning blend over the shrimp, and give it all a good stir.
  • Saute the shrimp for 5 to 8 minutes or until they begin to brown.
  • Be sure to cook both sides of all the shrimp.

1/2 lb large shrimp, peeled and deveined
1/4 cup olive oil
2 tablespoons honey
3 tablespoons lime juice
2 garlic cloves, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • In a large ziploc bag, combine all the marinade ingredients. When everything is well-combined, add the shrimp, squeeze as much air as possible out of the bag, and close it up. Place it in the fridge.
  • Let the shrimp marinate for 30-60 minutes, flipping the bag around once or twice during that time, so that all the shrimp stay evenly covered in the marinade.
  • When you're ready to cook, take the shrimp out of the fridge and let them sit at room temperature for about 10 minutes.
  • Heat a large skillet over medium-high heat; there is no need to add any oil or butter to the pan, as the marinade has enough oil in it to keep the shrimp from sticking to the pan. (If you would prefer to use the grill for these, you can thread them onto skewers and toss them on the grill at this point.).
  • Add your shrimp to the pan in a single layer, making sure they are not too crowded; you can always cook them in more than one batch.
  • Let them cook on one side for about a minute, until they curl up and start to turn pink.
  • Flip them over, and cook for another 30 seconds or so, until the shrimp are opaque.
  • Remove from the pan, and serve immediately!
