BAKED SALMON WITH CORIANDER AND THYME

Steps:
- Preheat oven to 350F degrees.
- Line a baking dish with parchment paper or foil, large enough to fold over and seal.
- Place the fillets in the middle off the dish and sprinkle with coriander and thyme.
- Grind a little sea salt over the fillets.
- Place one or two lemon slices on each fillet.
- The lemon peel can be a bit strong; if you wish, you can remove the peel with a paring knife before putting the slices on the fillets.
- Fold the parchment paper over the fillets and staple or paper clip, or fold the foil and crimp to seal.
- Bake for about 18 minutes.
- When salmon is done remove to a plate.
- Place a fresh slice of lemon on each fillet and a sprig of fresh thyme, and serve.
- Variations: Add some shrimp and scallops in with the salmon.
- Anoint the salmon with a tablespoon of dry white wine or dry vermouth prior to adding the seasonings.
PEPPER- AND CORIANDER-COATED SALMON FILLETS
Steps:
- Mix parsley and orange peel in small bowl. Mix coriander, brown sugar and black pepper in medium bowl. (Can be made 8 hours ahead. Cover separately. Chill parsley mixture. Store spice mixture at room temperature.)
- Sprinkle salmon with salt. Coat salmon on all sides with spice mixture. Melt 1/2 tablespoon butter and 1/2 tablespoon oil in heavy large skillet over medium-high heat. Add 3 salmon fillets. Cook fish until crust is golden and center is just opaque, about 4 minutes per side. Transfer fish to platter. Tent with foil to keep warm. Wipe skillet. Repeat with remaining butter, oil and salmon. Spoon parsley mixture atop salmon and serve.
CUMIN CORIANDER CRUSTED SALMON
When I saw this recipe in the March issue of Cooking Light I knew that this would be a hit....I was just suprised on how much! My DH and DD are not keen on cilantro, but they were really impressed with this recipe. It is fast, easy and I would definately serve this to company. I served this with garlic scented brown jasmin rice and roasted beets. Devine!!!

Steps:
- Combine cilantro shallots, oil, cumin, coriander, salt and pepper in a small bowl, stirring to form a paste. (can be made ahead of time).
- Place fish, skin side down, in a shallow baking dish. Coat with cilantro mixture. Cover and refrigerate for 1 hour.
- Preheat oven to 400.
- Arrange fish on the rack of a roasting pan coated with cooking spray. Bake at 400 for 10 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
- Serve with lemon wedges.
- Note: The recipe called for 2 tsp oil, but with the fish being as oily as it is, you can get away with 1 teaspoons.

- Preheat the oven to 425 degrees. In a small bowl, mix together olive oil, mustard, lemon juice, and 1/4 teaspoon each salt and pepper.
- Put salmon, skin side down, in a baking dish, and spoon mustard glaze over each piece of fish. Bake until salmon is just cooked through and no longer red, 6 to 8 minutes. Sprinkle with chopped dill, if desired, and serve.
SLOW ROASTED MUSTARD SALMON

- Preheat the oven to 300 degrees F.
- Place the slices of fennel in the middle of a rimmed baking sheet and drizzle with the olive oil. Place the fillet of salmon skin-side down on top of the bed of fennel and sprinkle it with the salt. Spread the mustard evenly over the top of the salmon and sprinkle with the fennel and coriander seeds. Press gently to help the seeds adhere.
- Roast until a fork inserts easily in the thickest part of the fish and the flesh flakes, approximately 1 hour. Remove the salmon to a platter. Sprinkle with the fennel fronds and drizzle with olive oil.

- Whip butter with an electric mixer until fluffy. Add the garlic, mustard, thyme, lemon juice, Old Bay, salt, pepper, and panko, and mix well. Line a small sheet pan with parchment paper or waxed paper and lay salmon, skin side down, on pan. Blot salmon with paper towels to remove any moisture. "Crust" the salmon while the butter is still soft, allowing a 1/4-inch crust. At this point, the salmon may be refrigerated (cover with plastic wrap after butter has hardened).
- Preheat the oven to 425 degrees F.
- Bake for approximately 10 minutes for a still slightly pink fish. Use 2 long flat spatulas, coming in from either end, to lift the salmon off the paper and transfer to a serving platter.

- Preheat the oven to 425°. In a spice grinder, combine the coriander seeds, mustard seeds and crushed red pepper and pulse until coarsely ground. Season the salmon with salt and pepper, brush with 1 tablespoon of the Dijon mustard and coat with the ground spices.
- In a large, ovenproof, nonstick skillet, heat 1 teaspoon of the olive oil. Add the salmon, coated side down, and cook over high heat until lightly browned, 2 to 3 minutes.
