SLOW-COOKER CORDON BLEU CHICKEN ROLLS
Come home to this cheesy cordon bleu chicken and ham rolls recipe that's slow cooked for dinner - serve on a creamy sauce!

Steps:
- Spray 3- to 4-quart slow cooker with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; beginning in center of breast, gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
- Place 1/2 ham slice and 1/2 cheese slice on each breast. Roll up, folding in sides. Place rolls, seam sides down, in single layer in slow cooker. In medium bowl, mix remaining ingredients; spoon over chicken.
- Cover; cook on Low heat setting 3 hours 30 minutes to 4 hours 30 minutes.
- Remove rolls from cooker to cutting board. Beat sauce in cooker with wire whisk until smooth. Spoon about 1/3 cup sauce onto each of 6 plates. Cut each roll crosswise into thin slices; arrange on sauce.

Steps:
- Combine the first 5 ingredients.
- Make 8 thin patties.
- Place 1 piece of ham or bacon and 1 piece of cheese in the middle of each.
- Fold over and be sure the cheese and bacon are covered.
- Whip 2 eggs.
- Dip the beef rolls into the egg, then roll in the bread crumbs.
- Place into casserole dish.
- Bake 1 hour at 350 degrees or until done.
- Make gravy with milk, flour, and soup.
- Pour over rolls and bake until sauce bubbles.
- **I usually bake these as directed without gravy, cool, and then freeze in a ziploc bag. Defrost overnight and then add sauce and bake for 1 hour. OR bake from frozen for 1 hour and then top with sauce and back for an additional hour**.

QUICK AND EASY CHICKEN CORDON BLEU ROLLS
What makes this more special than the traditional cordon bleu rolls is the delicious combination of proscuitto and swiss. They complement one another perfectly. Serve this dish with rild rice and asparagus or a nice risotto for a quick - yet elegant - weeknight meal. I adapted this recipe from a crockpot cookbook I once had.

Steps:
- On each chicken breast, place one piece of prosciutto and cheese. Roll up each chicken breast and secure with a toothpick. Season each roll with salt and pepper. Place in the Crock-Pot slow cooker.
- In a small bowl, whisk together the soup, milk and white wine. Pour half of this mixture over the chicken breast rolls, placing the other half in the refrigerator for later. Cover and cook on Low for 4 to 6 hours or on High for 3 to 4 hours.
- Before serving heat up the remainder of your sauce and put over the chicken breast when serving (also tastes wonderful over rice or risotto).

- Prepare stuffing mixes according to package directions. Meanwhile, in a large bowl, combine soup and milk; set aside. Divide chicken between two greased 13 x 9 inch baking dishes. Sprinkle with pepper. Layer with ham, Swiss cheese, 1 cup cheddar cheese, soup mixture and stuffing. Sprinkle with remaining cheddar cheese.
- Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 350 degrees for 30 minutes. Uncover; bake 10-15 minutes longer or until cheese is melted.
- To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 degrees for 45 minutes. Uncover; bake 10-15 minutes longer or until heated through and cheese is melted.
- Each casserole serves 6.
EASY CHICKEN CORDON BLEU WITH MUSHROOM SAUCE
This is a great dish to serve to guests. This is also one of my husband's favorite dishes and it is treat to serve it to him as well.

Steps:
- Use a meat pounder to flatten the chicken breats.
- Place 1 slice of ham and 1 slice of cheese in the center of each breast.
- Roll up and place seam side down in a casserole dish.
- Securing with a toothpick if necessary.
- Bake, covered, for 20 minutes at 350 degrees or until the chicken is no longer pink and juices run clear.
- While it is baking, mix together remaining ingredients.
- Pour over cooked chicken and bake until sauce bubbles.
- I usually serve this over egg noodles.
