3-1/2 cups peeled chopped tomatoes (about 4 large)
1 large green pepper, chopped
1 medium onion, chopped
1 serrano pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
1 tablespoon sugar
2-1/4 teaspoons salt
1 garlic clove, minced
3/4 teaspoon ground cumin
1 can (6 ounces) tomato paste
1/4 cup white vinegar
2 tablespoons lemon juice
Baked tortilla chip scoops

Steps:

  • In a large saucepan, combine the first nine ingredients. Stir in the tomato paste, vinegar and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring frequently. Cool to room temperature. Cover and refrigerate until chilled. Serve with chips.

6 medium fresh tomatoes , 1/4-inch diced
1 medium sweet onion , chopped
3 green onions, sliced thin with green tops included
1 serrano chile or jalapeño, seeds removed, diced
2 tablespoons fresh cilantro , loosely packed, finely chopped
8 ounces tomato sauce (canned)
4 ounces mild green chiles (canned, chopped)
2 tablespoons red wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/4 teaspoon cumin powder
1/4 teaspoon garlic powder
Salt , to taste
Pepper, to taste
Tortilla chips, for serving

Steps:

  • Gather the ingredients.
  • In a large bowl, combine all of the ingredients and mix well.
  • Taste for seasoning. Place in an airtight container in the fridge for at least 2 hours to let the flavors blend.
  • Serve in a medium-size bowl alongside chips.

¼ cup all-purpose flour
¾ cup more as necessary milk
1 cup grated Queso Blanco
1 cup grated American Cheddar cheese
1 cup grated Monterey Jack cheese

Steps:

  • In a medium-sized saucepan, combine the oil, onion, pepper, tomatoes, cayenne, sugar, paprika and garlic powder. Saute briefly.
  • Meanwhile, mix the flour and milk in a small bowl until combined. Slowly pour into the crockpot.
  • Stir until the mixture becomes thick and smooth.
  • Add the shredded cheeses, stirring to prevent sticking.
  • Cook the sauce on low heat for 5 to 10 minutes, or until well blended. You may need to add more milk as necessary.
  • Season to taste with salt and pepper. Adjust accordingly.
  • Serve with tortilla chips.

5 pounds tomatoes
5 cups chopped onions (about 3 large)
5 cups chopped green peppers (about 4 large)
2-1/2 cups chopped sweet red peppers (about 2 large)
2 habanero peppers, seeded and finely chopped
1 cup white vinegar
1 can (6 ounces) tomato paste
3 teaspoons salt

Steps:

  • Fill a Dutch oven two-thirds with water; bring to a boil. Score an "X" on the bottom of each tomato. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds. Remove tomatoes and immediately plunge in ice water. Discard peel; chop tomatoes., In a stockpot, combine the remaining ingredients. Stir in tomatoes. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, for 15-20 minutes or until desired thickness., Carefully ladle hot mixture into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 15 minutes in a boiling-water canner.

Number Of Ingredients 8

28oz can whole peeled tomatoes, undrained
1/2 red or white onion, roughly chopped
1 handful cilantro leaves, roughly chopped
2 cloves garlic, roughly chopped
1 jalapeno, seeded and roughly chopped (leave in seeds for a spicier salsa)
1 teaspoon salt
juice of 1/2 - 1 whole lime
1 teaspoon sugar*

Steps:

  • Add ingredients - whole tomatoes through salt - to a food processor. Add the juice of half a lime, plus the sugar if your canned tomatoes do not contain sugar (if sugar is listed as an ingredient on your canned tomatoes, omit the sugar.)
  • Pulse ingredients until desired consistency is reached then taste and add more lime juice and/or salt if necessary. Refrigerate overnight for best results then serve.

1 jalapeno (membrane and seeds removed, chopped)

1/2 cup fresh cilantro (chopped)
1 lime (juice)
1/2 teaspoon salt
1/2 teaspoon ground cumin
1 tablespoon olive oil

Steps:

  • Place all ingredients in a food processor and pulse 5 times for chunky salsa or up to 10 times for restaurant style.
  • Makes about 5 1/2 cups.
  • Keep refrigerated.

3 tbsp unsalted butter
3⁄4 cup diced yellow onion
1 finely diced large jalapeño pepper
4 cloves minced or pressed through a garlic press garlic
3 tbsp all purpose flour
2 cups half & half
4 oz grated sharp cheddar cheese
4 oz grated pepper jack cheese
1⁄4 tsp cumin
1⁄4 tsp salt
2 tbsp finely diced, use only the flesh, no seeds or juice tomatoes
1⁄4 tsp crushed, optional for more heat red pepper flakes
freshly chopped, optional for garnish cilantro

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add the onions and jalapeños and cook, stirring frequently, for about 5 minutes until the onions are soft and translucent.
  • Add the garlic and cook for 30 seconds more. Add the flour and cook, stirring constantly, for about 1 minute.
  • Add half and half to the pot and whisk until the flour dissolves. Bring to a simmer and cook for a few minutes until thickened.
  • Turn the heat down to low and gradually add the grated cheese, whisking and letting it melt, until all of the cheese is incorporated.
  • Add the cumin, salt, and tomatoes. Taste and adjust seasoning if necessary; for more heat, add the optional red pepper flakes.
  • Transfer to a bowl and serve hot with tortilla chips. Enjoy!
