I was making a big ole batch of smoked pork when I realized I didn't have a sauce on hand. Well, in no time at all I whipped this great sauce together. It has the right consistency, just like the 'real' stuff.

1 1/4 cups ketchup
1 cup dark brown sugar
1/4 cup molasses
1/4 cup pineapple juice (or apple cider vinegar)
1/4 cup water
1 tablespoon Worcestershire sauce
2 1/2 teaspoons ground mustard
2 teaspoons smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper (optional)
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons cold water (optional)
1 tablespoon cornstarch (optional)

Steps:

  • Stir together all ingredients except for the water and corn starch in a medium sauce pan over medium-high heat.
  • Bring to a boil then reduce the heat to a simmer. Continue to simmer for 5 minutes, stirring often, until the brown sugar has dissolved.
  • If you want a thicker sauce, combine the water and corn starch in a small glass and slowly stir in to the sauce. Continue to simmer until the desired thickness is achieved.
  • If the sauce gets too thick add water, a very little bit at a time, and stir.

A copycat of the famous Sweet Baby Ray's Barbecue Sauce. In my experience there is little to no need for the cornstarch slurry, but it's there as an optional step in case you want your sauce thick. Personally I just use a little of the slurry because the 10-15 minutes simmering time would already reduce the sauce and it would continue to thicken while cooling.

1 1/4 cups ketchup
1 cup dark brown sugar
1/4 cup molasses
1/4 cup pineapple juice
1/4 cup water
1 tablespoon hickory liquid smoke
2 1/2 teaspoons ground mustard
2 teaspoons paprika
1/2 teaspoon garlic powder
1 pinch cayenne pepper
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
1 tablespoon cornstarch
1/8 cup cold water

Steps:

  • Whisk together all ingredients except cornstarch and cold water in a medium pot over medium heat. Bring to a boil.
  • Reduce heat and simmer for 5 minutes until sugar has dissolved.
  • Combine the cornstarch and cold water then mix well to create a slurry. Add slurry to the sauce to thicken. (optional).
  • Simmer for 10-15 minutes or until desired thickness, is achieved.

1 cup dark brown sugar
1/4 cup molasses (60 grams)
1/4 cup pineapple juice
1/4 cup water
1 tablespoon hickory liquid smoke
2 1/2 teaspoons ground mustard
2 teaspoons paprika
1/2 teaspoon garlic powder
pinch cayenne pepper
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
1 tablespoon corn starch dissolved in 2 tablespoons cold water (optional)

Steps:

  • Whisk together all ingredients (except the corn starch in water) in a medium pot over medium heat. Bring to a boil, then reduce heat and simmer for 5 minutes, until sugar has dissolved.
  • For a thicker sauce, add the cornstarch and water mixture. Then simmer for up to 15 minutes, until desired thickness is reached. Keep in mind that it may thicken slightly more as it cools.
  • Serve immediately or cover and store in the refrigerator.

1 1/2 cups water
11/2 Tbls. canned pineapple juice
1/2 heaping tsp. kosher salt
1/2 tsp. garlic powder
3/4 tsp. liquid smoke
1/4 cup white vinegar
3/4 Tbls. fresh squeezed lemon juice
4 Tbls. molasses
3 Tbls. light corn syrup
3 Tbls. brown sugar
3 Tbls. cold water + 1 Tbls. corn starch for slurry to thicken sauce

Steps:

  • In a medium size saucepan over medium heat, mix together all ingredients except for the slurry. Cook and stir til well combined and heated through. Allow mixture to boil, stirring often. Reduce heat to a simmer and let cook for 30 minutes, stirring occasionally. Then add in the slurry. Stir and cook about another 5 minutes. Remove from heat and let cool. Pour into glass jar and refrigerate until ready to use.
