These Copycat Shake Shack Burgers are exactly like the real thing. They're smash burgers, topped with special sauce, American cheese served on a potato bun.

1/2 cup mayonnaise (Hellmann's if you wanna be legit)
1 tablespoon ketchup
1 teaspoon pickle brine
1/4 teaspoon ground cayenne
Pinch paprika
2 tablespoons unsalted butter (melted)
Martin's Potato Rolls or White Hamburger Buns
1 pound sirloin (cut into 1-inch pieces)
1 pound chuck (cut into 1-inch pieces)
OR
2 pounds ground beef (85/25)
Sea salt
Freshly ground pepper
Vegetable oil
8 slices of American cheese
Roma tomatoes (cut into 1/2-inch slices)
Leafy Green Lettuce
Sliced pickles
Baked crinkle fries
Ketchup + Mustard

Steps:

  • Add the ingredients for the special sauce to a bowl and whisk until smooth. Transfer to a small bowl or squeeze bottle and set aside.
  • Brush the buns (top and bottom) with butter. Warm a pan over medium heat. When warmed, add the buns, toasting them for about 1 to 2 minutes. Repeat until you've worked your way through all of the buns
  • If you're grinding your own meat, add the cubed sirloin and chuck to a bowl and combine it. With the largest meat grinder attachment on your mixer or grinder, turn the speed to #4 and add the meat. Repeat until you've worked your way through all of the meat. Change the grinder attachment to the smaller attachment. Pass the meat through the grinder once more. Divide the meat into 4 ounce mounds. You should end up with 8 mounds of meat.
  • If you're using store-bought ground beef, no biggie. Divide the meat into 4 ounce mounds.
  • Form pucks that are about 2 inches tall and 2-inches wide. Sprinkle the tops with a few pinches of salt and pepper.
  • Place a cast iron skillet over moderately high heat. Add a few teaspoons of oil and when glistening and VERY hot, add the meat puck. Allow to cook for about 30 seconds and then smash it with a spatula until it's about 1/4-inch thick. Cook for about 1 minute and then add a few pinches of salt and pepper to the top. Then, flip. Add the slice of cheese and cook for an additional minute or so. Remove from the pan and repeat with the remaining pucks of meat.
  • Squeeze a bit of special sauce on both sides of the bun. Add a few pieces of leafy green lettuce, a few slices of tomatoes and then top with the burger patty. Add a few pickles and then add the other half of the bun on top. Repeat until you've made all of the hamburgers.
  • Serve with baked crinkle fries, ketchup and mustard on the side.

5 egg yolks
1/2 cup granulated sugar
1 1/2 cups heavy cream
1 1/2 cups whole milk
1/8 teaspoon fine salt
2 teaspoons pure vanilla extract

Steps:

  • Prepare a medium bowl, set over an ice bath. Have a fine mesh sieve nearby.
  • In a medium heavy-bottomed saucepan, off the heat combine the egg yolks and sugar and whisk until smooth. Whisk in the cream and milk. Cook stirring frequently over medium heat, until the custard reaches a temperature of 170 degrees F on an instant-read thermometer.
  • Strain the custard into the prepared ice- bath. Stir in the salt and vanilla.
  • Stir the custard frequently until it is no longer hot. Refrigerate custard until cold.
  • Churn the custard mixture in an ice cream maker following the manufacturer's instructions, until it is the texture of soft serve. Transfer the custard to a freezer-proof container, cover. Freeze until firm enough to scoop, at least two hours.

American-style ice cream uses no eggs, but this is the French style--with eggs! It's rich and creamy and, although traditionally served soft in cones, I prefer to freeze it firm then scoop it.

5 large egg yolks
⅔ cup white sugar
1 pinch salt
1 cup whole milk
2 cups heavy cream
2 ½ teaspoons pure vanilla extract

Steps:

  • Whisk egg yolks, sugar, and salt together until mixture changes from dark golden to pale yellow becomes fluffy.
  • Heat milk and cream in a heavy saucepan over medium heat. Stir occasionally to prevent sticking to the bottom. Cook just until mixture starts to simmer when little bubbles begin to appear on the surface, 5 to 8 minutes. Remove from heat.
  • Whisk a ladleful of milk-cream mixture into the egg yolk mixture. Add another ladleful and whisk thoroughly before adding the next (this will keep the eggs from cooking). Gradually add the remaining milk-cream mixture and whisk thoroughly. Whisk in vanilla. Cool completely (you can place the bowl in a larger bowl with ice water to cool it faster).
  • Pour cooled mixture into a pitcher; cover. Refrigerate until ice cold or overnight.
  • Pour custard mixture into ice cream maker and process (according to manufacturer's instructions) until custard reaches the consistency of soft ice cream, about 20 minutes. Quickly transfer to a plastic container. Place a piece of plastic wrap over the surface of the custard. Cover container and freeze until custard is firm enough to scoop, at least 3 hours.

6 large egg yolks
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 1/2 cups heavy cream
1 1/2 cups whole milk
1/8 teaspoon salt

Steps:

  • Set a fine mesh strainer over a large bowl, resting in a ice bath. Place chocolate in a medium heatproof bowl.
  • In a medium, heavy-bottomed pot, whisk together egg yolks, sugar, and cocoa powder until well combined. Whisk in cream and milk until yolk mixture is fully incorporated. Cook over medium heat, whisking frequently, until custard thickens enough that a finger swiped across the back of a wooden spoon leaves a clean line and the temperature reaches 170°F on an instant-read thermometer.
  • Pour mixture over chopped chocolate. Allow mixture to rest for 2 minutes until chocolate is melted, whisk until chocolate is completely incorporated into custard base.
  • Immediately pour chocolate custard through sieve into prepared ice bath. Stir salt and vanilla into the custard. Occasionally stir custard while it is in the ice bath. Once custard is at room temperature, transfer to refrigerator to chill fully.
  • Churn custard in ice cream maker, until the texture of soft serve, according to manufacturer's instructions. Transfer to an airtight container and freeze until firm enough to scoop, about two hours.

1/4 cup sugar
2 tablespoons light (clear) corn syrup
1 cup heavy cream
1/2 cup whole milk
1/8 teaspoon kosher salt
1/2 teaspoon vanilla extract

Steps:

  • In a heavy-bottomed saucepan, whisk together egg yolks, sugar, and corn syrup until well combined. Whisk in cream and milk until yolk mixture is fully incorporated.
  • Place pot over medium-low heat and cook, whisking frequently, until a custard forms on a spoon and a finger swiped across the back leaves a clean line, or until custard temperature reaches 170°F. Stir in salt and vanilla.
  • Strain custard through a fine mesh strainer and chill in either ice bath or refrigerator until it is very cold, about 40°F. Churn in ice cream maker according to manufacturer's instructions, then serve right away or transfer to an airtight container and chill in freezer for 1 hour to let custard firm up slightly. Serve custard within two hours of it being made.
  • Optional: To make concrete-style drinks, finely chop up ingredients like M&M's, heath bars, cookies, or pretzels and store in freezer, then add to ice cream machine during last two minutes of churning. Serve right away in a glass or cup with a straw and a long spoon.

  • FOR THE SALTED CARAMEL SAUCE: Put sugar and 1/3 cup water into a deep medium pot. Swirl the pot to moisten the sugar. Bring to a boil over medium-high heat, gently swirling the pot often to help dissolve the sugar into a clear syrup.
  • Boil the syrup until it smokes and just begins to turn a deed caramel brown, 5 to 8 minutes. The syrup will continue to brown very quickly. Be careful it doesn’t bun. When the syrup is uniformly brown, quickly and carefully add the cream, stirring until the sauce is smooth and returns to a boil, about 1 minute. Remove the pot from the heat. Stir in the salt. Caramel sauce will keep, covered and refrigerated, for up to 1 week.
