Copycat Mellow Mushroom Spinach Dip Recipes

MUSHROOM AND SPINACH DIP

Steps:

• In a large skillet or heavy bottomed pan saute the onions and butter on high heat for 2 minutes.
• Add the garlic powder and mushrooms and cook for five minutes, stirring frequently.
• Add the spinach, and continue cooking for about 10 minutes. Stir frequently. The mixture won't get 'dry', but you don't want it to be really wet.
• Add the cream cheese. Mix well until it all dissolves.
• Taste the mixture and add salt and pepper, if desired.

HOT CREAMY MUSHROOM AND SPINACH DIP

Steps:

• Preheat the oven to 350°F.
• Heat the butter in a skillet over medium-high heat. Stir in the mushrooms and onions, and sauté until the mushrooms have softened and browned and the onion is translucent, and any liquid that has been released is evaporated, about 7 minutes. Stir in the spinach, season with salt and pepper and continue cooking until the spinach has wilted, about 3 minutes. Stir in the goat cheese until it is melted and blended evenly into the vegetables. Stir in the sour cream, then spread the mixture into a shallow 3 or 4 cup baking dish.
• Bake until the dip is bubbling and hot, 15 to 20 minutes.

SPINACH AND ARTICHOKE DIP

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 1 quart baking dish.
• In a medium bowl, mix together artichoke hearts, spinach, mayonnaise, Parmesan cheese and 2 cups Monterey Jack cheese. Transfer mixture to the prepared baking dish, and sprinkle with remaining 1/2 cup of Monterey Jack cheese.
• Bake in the center of the preheated oven until the cheese is melted, about 15 minutes.

MELLOW MUSHROOM "MAGICAL MYSTERY TOUR" PIZZA (COPYCAT)

Steps:

• Prepare the Focaccia recipe as instructed (Recipe #27968).
• Slice the mushrooms.
• Crumble the Feta.
• Shred the Mozzarella Cheese.
• Slice the Jalapeno.
• Have the Spinach ready and cleaned.
• After the dough is prepared, roll it out and place in on a pizza pan.
• Spread the pesto (I use about half a small jar per pizza).
• Top the pizza with mushrooms first then with the Spinach, Mozarelle, Jalapenos and then Feta.
• Place in the oven at about 400'F for about 20-30 Minutes. and Enjoy.
• **(optional--chop 2 cloves of garlic and mix with melted butter then brush on the crust of the pizza when it comes out of the oven and then sprinkle the crust with parmasan cheese).
