COPYCAT CHICKEN SALAD
This recipe is incredibly easy to make, and your family will love it. The sweet pickle relish gives it its signature taste. I like to use a thick, crusty oat bread for this sandwich. -Julie Peterson, Crofton, Maryland

- If you're starting with raw chicken breasts, place them in a large saucepan. Add a dash of salt and cover the breasts with chicken broth. Bring the liquid to a boil over medium-high heat before reducing the heat to a simmer. Cook until the chicken registers 165 degrees Fahrenheit, about 10 minutes. Remove the chicken from the poaching liquid (saving it for another recipe) and let the chicken cool completely before chopping into cubes.
- To make the dressing, combine the mayonnaise, apple cider vinegar, poppy seeds, honey, sugar, kosher salt, and white pepper in a small bowl. Whisk until the ingredients are well combined. The dressing can be made in advance and stored in an airtight container in the refrigerator for up to a week.
- In a large bowl, combine the cooked chicken, celery, cranberries, pecans, and prepared dressing. Toss the ingredients together until everything is well coated in the dressing.

- Season chicken breasts with salt, pepper, and garlic powder while skillet is heating up on medium high heat.
- Pan roast chicken breasts for 8 minutes on the stove top (four minutes per side) on medium high heat. Move the skillet to a 350 degree oven for 15-20 minutes. Check the temperature of the chicken to make sure it is done. An instant-read thermometer is a great tool to have in the kitchen for checking meat temps.
- Shred the cooked chicken with a food processor (or with a paddle in a stand mixer). It only takes 8 to 10 pulses. This is much easier than shredding by hand.
- Chop the celery into a fine dice. (You could also do this while the chicken is finishing up in the oven.)
