BETTER THAN COSTCO MAC AND CHEESE
Costco Mac and Cheese-- quick, easy and just as good (or better) than the deli version. You can go ahead and throw that membership card out. :)

Steps:
- Preheat oven to 400 degrees.
- Cook pasta according to package directions to "Al Dente" doneness. Drain and place in a large bowl.
- Pour alfredo sauce and dijon mustard over the cooked pasta and stir. Add in 3/4 of the sharp cheddar and all of the Jarlsberg and parmesan cheese. Stir until well combined.
- Spray an 8"x 8" baking pan with non-stick cooking spray and spoon pasta into the dish.
- Sprinkle remaining sharp cheddar over the pasta. Bake for about 20 minutes, or until the cheese is melted and the sauce is bubbly.

COSTCO MAC AND CHEESE
Steps:
- Bring a pot of water to a boil - add cavatapi and cook according to directions on package. Drain water and set aside.
- Add butter to a large skillet and melt over low heat. Add heavy cream and milk and stir until combined.
- Slowly mix in cheeses over medium-low heat until it thickens. If it doesn't thicken, you can add in a mixture of 1 teaspoon cornstarch and 2 teaspoons cold water.
- Add seasonings to taste.
- Combine the pasta with the sauce and pour into a large baking dish.
- Top with shredded cheddar cheese
- Bake at 400 for 25-30 minutes or until heated through. Broil to caramelize cheese.

COPYCAT COSTCO MAC AND CHEESE
Super creamy, cheesy, and delicious, this Copycat Costco Mac and Cheese is the ultimate comfort food made with five different kinds of cheese.

- Preheat oven to 325 degrees.
- Fill a large pot with salted water and bring to a boil. Cook your pasta according to package directions until just 1 minute shy of al dente (mine was 5 minutes). Drain well, then return to the pot and toss with 1 tablespoon olive oil so it doesn't stick together in a clump while making the sauce.
- While the pasta is cooking, grate the cheeses. You are going to add the cheese in 4 stages, so it might be helpful to divide them into fourths now.
- In a large saucepan, melt the butter over medium heat. Once the butter is melted, add the flour and whisk well, cooking for one minute until completely combined and the roux begins to look a bit like wet sand.
- Slowly add the cream and 1 cup of the milk, whisking continuously, until smooth and completely combined. Add the remaining 2 cups of milk, whisking and cooking over medium heat until the sauce thickens a bit, about 3 to 4 minutes.
- Stir in the salt, pepper, paprika and garlic powder, then add 1/4 of each of the grated cheeses except the medium cheddar, which you will save just for topping the mac & cheese. Once the cheese has melted, add another 1/4 of the grated cheeses and stir until it also melts and incorporated into the sauce.
- Pour the sauce over the cooked pasta and stir to combine. Pour half of the pasta & sauce into a large 9x13" baking dish, then sprinkle another 1/4 of the grated cheeses over that layer, then repeat with the remaining pasta and sauce, the remaining cheese and finally sprinkle the grated medium cheddar over the top.
- Transfer the macaroni & cheese to the oven and bake, uncovered, for 15 minutes, until the cheese is completely melted and bubbly. Serve immediately.

COPYCAT COSTCO(R) DELI MAC AND CHEESE
Costco's mac and cheese that they sell in their deli section is so yummy, but they only sell it at a certain time of the year. I wanted to try to figure the recipe out so that when they don't have it, I can still make it myself. This recipe is what I came up with. It is very decadent and NOT low-cal. LOL

Steps:
- Cook cavatappi pasta according to package directions so it is al dente, drain, add 1 Tbsp of butter while still hot, and mix through; set aside to cool mostly.
- In a large sauce pan, melt butter into cream over low heat. Add garlic salt and pepper to taste.
- Stir in the pecorino romano and parmesan cheese over medium heat until melted; this will thicken the sauce. Remove from heat and allow to cool mostly.
- Once both noodles and sauce are just slightly warm, stir the sauce into the noodles. Add 3 cups of cheddar cheese and mix.
- Smooth into a 13x9x2 baking dish. Sprinkle top with the remaining cup of cheddar cheese. Bake at 350 degrees F for 30 minutes or until top starts to brown slightly.
THE BEST CHICK-FIL-A MAC AND CHEESE RECIPE (COPYCAT)
Steps:
- Preheat oven to 350 degrees F
- Bring a large pot water to a boil with salt.
- Boil noodles until al dente, drain and set aside (reserve about 1/2 cup of pasta water in case you need to thin up the sauce)
- Melt butter in a large sauce pan over medium heat.
- Whisk in flour and mix continuously for about 4-5 minutes over low heat.
- Slowly pour in the cream and whole milk and stir the whole time until it starts to thicken over low heat.
- Mix in the combination of cheeses until the cheese starts to melt and become creamy and season with salt and pepper to taste.
- If it becomes too thick, thin the sauce with a little bit of the reserved water.
- Mix in the macaroni noodles.
- Pour mixture into a large baking dish.
- Top with additional shredded cheddar cheese.
- Cook for five minutes.
- After five minutes, cook on a low broil for two minutes.
- Remove from oven and mix together so crispy cheese on top is incorporated throughout the dish
