COSTA VIDA SWEET PORK WITH COSTA VIDA RICE

Costa Vida is a Mexican Restaurant style of food. This is my copy cat recipe. With the sweetness of this pork it pairs well with extra spicy salsa or top it off with extra sliced jalapeno's.

Ingredients

PORK
5 lb pork roast
3 c coke
8 oz can tomato sauce
1/2 c brown sugar
1 Tbsp cayenne pepper
6 clove garlic
2 large carrots grated
2 small jalapeno pepper seeded and diced
1 medium onion chopped
1 cup coke and 1/2 cup sugar
COSTA VIDA RICE
2 c jasmine rice
32 oz chicken broth
1 Tbsp better than bouillon chicken bouillon
1 c cilantro chopped
4 green onions chopped
2 limes juiced
salt to taste

Steps:

1. For the pork Place all the ingredients except for the last 1 cup of coke and 1/2 cup sugar in crock pot. cook on high 6 hours. Remove pork and shred with two forks. Add pork back to pot and add the last cup of coke and 1/2 cup sugar to pot. Cook on low 3 more hours
2. For the rice Place the broth and bouillon in a large pan. Bring to a boil. Add the rice and simmer covered for 20 minutes. Remove from heat and add the cilantro, green onions, and lime juice. Let sit covered for 10 more minutes. Season with salt.
3. Serve the rice with the pork in flour or corn tortillas. Garnish with desired condiments.

I think this chain is mostly out west but I went to the one in Portland, ME with my sister and am now a huge fan. This is very similar to the rice that they use in the burritos and salads. Yummy!

2 tablespoons lime juice
2 -3 garlic cloves, minced
1/2 cup cilantro, fresh
1 (2 ounce) can green chilies
2 teaspoons salt (may omit if using salty broth)
1 onion, medium
1 tablespoon butter
1 1/2 cups rice, white long grain
3 cups chicken broth

Steps:

Chop veggies/herbs coarsely and then fry in 1 T butter or oil.
Add rice and stir to coat and then add broth, salt and lime juice. Bring to rapid boil, turn down as low as possible, cover and simmer about 20 minutes - do not stir! Fluff with fork.

3 cups water
4 cubes chicken bouillon (or just replace water with chicken broth)
1 can green chilies
1 1/2 cups rice
4 tsp minced garlic
1/2 bunch cilantro, chopped
1/2 cup green onion, chopped

Steps:

Add all together, bring to a boil, turn down temperature and simmer 10-15 minutes. Serve with Pork Barbacoa and Sweet Black Beans.

Combine all the seasoning ingredients together in a small bowl. Measure out 2 tablespoons of the mixture and save for later.
Cut the pork roast into large chunks (4-6 inches) and rub the remaining seasoning mixture (not the reserved 2 tablespoons) evenly over all sides of the pork.
Pressure cooker: add the root beer/cola soda and the 1 cup green salsa/enchilada sauce to the insert of an electric pressure cooker. Stir to combine. Add the seasoned pork. Secure the lid, set the valve to seal and cook on high pressure for 55-60 minutes. Let the pressure naturally release for 10 minutes and then quick release the remaining pressure.
Transfer the pork to a cutting board or pan and shred. Discard all but 1/2 cup of the cooking liquid in the pressure cooker. Add the pork back to the pressure cooker. Add the 2 tablespoons of reserved spices, red enchilada sauce, brown sugar, green chiles and green salsa/enchilada sauce and stir/toss to combine. Heat through using the saute function (stir often to avoid sticking) or slow cooker function (high for 30 minutes or so). Keep warm until serving.
