Homemade Spicy Beef Jerky image

You can make homemade jerky that is perfectly spicy. Please read the entire recipe before preparing the recipe.

4 pounds lean rump roast (sliced 1/8" thick by 2 - 2 1/2" wide strips)
1/2 cup soy sauce
1/4 cup teriyaki sauce
1/2 teaspoon garlic salt
1 1/2 teaspoons liquid smoke
2 tablespoons sweet chili sauce
1/4 cup brown sugar
1 teaspoon black pepper

Steps:

  • Mix together all ingredients and pour over sliced beef.
  • Cover and marinate in the refrigerator overnight.
  • If you are using a food dehydrator follow the manufacturer's directions.
  • If you do not have a dehydrator you may use your oven.
  • Turn the oven on low to 150 -175 degrees. The temperature should not go over 175.
  • Place the marinated beef strips on a wire rack that has been set in a jelly roll or sheet pan. The pan will collect the liquid and the cooling rack will let the air circulate for better drying. Do not overcrowd the pieces when placing the strips on the cooling rack.
  • Turn the strips two or three times during drying. This method will take 6 to 8 hours depending on the thickness of the meat.

I have been making jerky for years. This is my recipe concocted by trial and error. Everyone who has tried it says it is the 'best jerky' they have ever had! My dehydrator is designed for jerky. It takes me about 4 hours to dry the meat. This could also be done in the oven or using other dehydrators. Please check your manual for correct times as each machine is different. I hope you enjoy this jerky as much as me and my family do.

2 pounds beef round steak, cut into thin strips
¼ cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons liquid smoke
2 tablespoons brown sugar
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon meat tenderizer
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika

Steps:

  • Place beef strips in the bottom of a large bowl. Pour soy sauce, Worcestershire sauce, liquid smoke, brown sugar, salt, pepper, meat tenderizer, garlic powder, onion powder, and paprika over beef. Mix to assure all the meat is evenly coated. Cover and marinate in the refrigerator for 8 hours or overnight.
  • Remove meat from bowl and place between two pieces of plastic wrap; pound to 1/8-inch thickness.
  • Arrange the meat strips on the tray of a dehydrator and dry at your dehydrator's highest setting until done to your liking, at least 4 hours. Store in an airtight container or resealable bags.

¾ cup Worcestershire sauce
¾ cup soy sauce
1 tablespoon smoked paprika, or to taste
1 tablespoon honey, or more to taste
2 teaspoons freshly ground black pepper
1 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
2 pounds beef top round, thinly sliced

Steps:

  • Whisk Worcestershire sauce, soy sauce, paprika, honey, black pepper, red pepper flakes, garlic powder, and onion powder together in a bowl. Add beef to bowl and turn to coat beef completely. Cover the bowl with plastic wrap and marinate in the refrigerator, 3 hours to overnight.
  • Preheat oven to 175 degrees F (80 degrees C). Line a baking sheet with aluminum foil and place a wire rack over the foil.
  • Transfer beef to paper towels to dry. Discard marinade. Arrange beef slices in a single layer on the prepared wire rack on the baking sheet.
  • Bake beef in the preheated oven until dry and leathery, 3 to 4 hours. Cut with scissors into bite-size pieces.

1 lb thinly sliced beef steak (sirloin steak, round steak) Note 1
½ cup Worcestershire sauce
½ cup soy sauce
1 tbsp honey
1 tsp onion powder
½ tsp chili flakes, optional, or add more for spicy jerky

Steps:

  • Mix all the marinade ingredients together in a bowl.
  • Cut beef slices into strips or squares.
  • Add the beef strips to the marinade, ensure that all surfaces of the beef are covered by the marinade.
  • Cover the bowl and place in the refrigerator overnight or for at least 3 hours.
  • Remove beef from marinade and pat dry with paper towels.
  • Place beef strips in air fryer basket in a single layer - ensure it is not overlapping.
  • Air fry beef strips until completely dehydrated. Set to air fry at 210°F (100°C) for two hours, then check the jerky. If it is not completely dried out continue to air fry for 15-20 minute intervals until it is ready. It needs to reach 160°F/71°C [Note 2].
  • When the jerky is ready, allow to cool and store in an air tight container.

This Peppered Beef Jerky recipe is packed with classic jerky flavor with a black pepper kick. It's the perfect recipe to try if you're making beef jerky for the first time. While I prefer to dehydrate my beef jerky on my smoker, I've included adaptations in this recipe so you can make it in an oven or classic dehydrator as well.

2 pounds eye of round roast (sliced thin against the grain)
4 cloves garlic (minced)
1 cup soy sauce
1/2 cup Worcestershire sauce
1/2 cup brown sugar
2 teaspoons onion powder
2 teaspoons red pepper flakes
2 Tablespoons black pepper
1 cup beer or beef stock

Steps:

  • In a large zip top bag, combine all ingredients for the marinade. Mix well to dissolve the sugar.
  • Add the sliced eye of round to your marinade and toss gently in the bag to coat all sides of the meat with the marinade. Refrigerate 8 hours, or up to 24 hours. The longer it marinates, the saltier and stronger the flavor will be.
  • Remove the strips of marinated beef from the bag and place on paper towels. Pat dry.
  • Preheat your smoker, oven (with the door cracked), or dehydrator to run at around 170 degrees F. Transfer the strips to the grill grate, jerky rack, or cooling rack and season the top with additional black pepper, if desired.
  • Smoke/cook for 2-3 hours (depending on the thickness of your slices, some thicker pieces can take 4-5 hours). Check often after the first hour to be sure your jerky is drying evenly. You are looking for jerky that is firm and still slightly pliable, but not soft. If you bend your jerky and it breaks, you've cooked it a little too long
  • Place the finished jerky in a gallon zip top bag while it is still warm. Don't seal closed all the way. The jerky will steam in the bag slightly and this step will make the jerky moist. If you added the curing salt, the jerky will last a couple of weeks on the counter. If you did not add in the curing salt, it will last a couple of weeks in the refrigerator.

3/4 Cups Worcestershire Sauce
3/4 Cup Low Sodium Soy Sauce
1 Tbsp Smoked Paprika (or to taste)
1 Tbsp Honey (or more to taste)
2 Tsp Ground Black Pepper
2 Tsp Crushed Red Pepper Flakes
1 Tsp Garlic Powder
1 Tsp Onion Powder
2 lbs Boneless Beef Top Round (thinly sliced)

Steps:

  • With a very sharp knife, trim any fat or connective tissue off the meat.
  • Slice the beef into 1/4 inch thick slices against the grain.
  • In a bowl, whisk together the Worcestershire sauce, soy sauce, paprika, honey, black pepper, red pepper flakes, garlic powder, and onion powder.
  • Add the sliced beef to the bowl and turn to coat the beef completely with the marinade. Cover the bowl with plastic wrap and marinate in the refrigerator for a minimum of 3 hours, preferably overnight. Alternatively, you can place the sliced beef and marinade in a large freezer bag.
  • Preheat the oven to 175ºF. Line a baking sheet with aluminum foil and place a wire rack over the foil.

This Original Beef Jerky recipe really does taste like good ol' fashioned jerky you got from your parents when you were a kid.

1 lb Beef Eye of Round or Venison
1 1/2 tsp pickling salt (or sea salt)
1 1/2 tsp brown sugar
1 1/2 tsp ground black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp coriander (ground)
1/2 cup cold water
1/4 tsp Prague Powder #1 (curing salt)
1/2 tsp liquid smoke (mesquite)

Steps:

  • Trim all visible fat from the beef and place in freezer for an hour or two to partially freeze.
  • While the meat is in the freezer, combine the pickling salt, curing salt, coriander, onion powder, garlic powder, liquid smoke, black pepper, sugar, and cold water in a medium size bowl or ziplock bag. Mix well.
  • Remove the meat from the freezer and slice 1/4" strips with the grain. Or skip the freezing phase and use a jerky slicer for evenly sliced strips.
  • Tenderize the beef strips with a tenderizing mallet to prevent the jerky from being too tough.
  • Add sliced beef to the mixture and marinate for 6-24 hours in the refrigerator.
  • After the meat has finished marinating, remove from refrigerator and pat dry with paper towels.
  • A Dehydrator was used with this recipe and dried for 7 hours at 160 degrees. You can also use a smoker or your oven.
