2 cups of all purpose flour
¾ cup Dutch-process cocoa or Hershey's Special Dark cocoa *See Note*
1 teaspoon baking soda
½ teaspoon salt
1 cup of unsalted butter (softened)
2 cups of sugar (plus a little for sugar coating)
2 eggs
2 teaspoons vanilla

Steps:

  • Heat oven to 350 degrees.
  • Combine flour, cocoa, baking soda, and salt. Stir and set aside.
  • Using a mixer combine the butter and sugar until creamed. Add eggs. Mix together. Stir in vanilla. Add flour mixture a little at a time until completely incorporated.
  • Wrap the dough in plastic wrap and chill until firm, 1-2 hours.
  • Roll the dough into 1 1/2 inch balls. Pour 1/3 cup sugar into a small bowl or rimmed dish.
  • Roll each ball in sugar to completely coat.
  • Bake for 11-12 minutes until set in the middle. Move to a cooling rack after 1-2 minutes.

1 teaspoon baking soda
1/2 cup hot water
1 cup butter
2 cups brown sugar, firmly packed
4 cups flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 dash ground cloves
1/2 teaspoon ground mace
3/4 cup blanched slivered almond

Steps:

  • Dissolve the baking soda in the hot water.
  • Mix together the butter, brown sugar and baking soda and water mixture.
  • In a separate bowl, mix together the flour, cinnamon, nutmeg, cloves and mace; combine with the butter mixture and stir in the almonds.
  • Roll dough into 2 loaves, each 3-1/2 x 10".
  • Chill overnight in the refrigerator.
  • When ready to bake, preheat oven to 350°.
  • Slice loaves into 1/4-inch slices on a cookie sheet abotu 2" apart for 10 minutes, or until slightly browned.

  • Mixture #3: Sour Milk. Combine the vinegar with enough milk to make 1/2 c (alternately, use buttermilk or real sour milk).
  • Mix It All Together! To the sugar+shortening+egg+molasses mixture, alternately mix in small amounts of the other two mixtures until everything is in one bowl.
  • Add More Flour. Bit by bit, mix in more flour as needed. For drop cookies, you might not add any more. We usually add about 1/2 cup extra flour, but if you like a more cake-like cookie, you can add up to an extra cup.
  • Form the Cookies. Plop some batter onto a greased cookie sheet. Using a bit of sugar to prevent sticking, squish the cookie with a glass. If you want to ruin a perfectly good cookie, push some walnut pieces into the top of the cookie.
