RAINBOW FRUIT DELIGHT
From "Cooking with Carnation Evaporated Milk" cookbook. I have not tried this yet, but it sounds good, and the picture looked delicious! Cooking time = chill time.

Steps:
- Coat 9x5-inch loaf pan with non-stick cooking spray.
- For mandarin orange layer: Dissolve orange gelatin in 1/2 cup boiling water in small bowl. Let stand for 10 minutes. Place dissolved gelatin, mandarin oranges and 1 cup evaporated milk in blender; cover. Puree for 10 seconds or until well blended. Pour into loaf pan. Refrigerate 30 minutes or until set.
- For pineapple lemon layer: Follow process for mandarin orange layer substituting lemon gelatin for the orange and pineapple for the mandarin oranges. Pour mixture over mandarin orange layer. Refrigerate 30 minutes or until set.
- For strawberry layer: Follow process for mandarin orange layer substituting strawberry gelatin and strawberries. Pour over pineapple lemon layer. Refrigerate at least 4 hours or overnight.
- To unmold: Run point of knife around top of pan. Dip pan into a large bowl of warm water. Place serving platter on top of pan. Invert mold and platter together; shake gently to loosen. Gently remove mold. Cut into slices and serve.

Steps:
- Place sour cream in a small lidded bowl and stir in half the pudding mix. Slowly add the remaining mix and stir in.
- Thickness will vary by the sour cream used; thin to desired consistency with milk or water. Make it thinner for a dip; moderately thick for a parfait and thicker still as a topping.
- Mixture will be slightly grainy; cover and refrigerate 30 minutes, stir briskly and it will be smooth.
COOL FRUIT DELIGHT
This recipe came from a magazine ad for Kraft Marshmallows printed in the late 1980s. It is easy to prepare and everyone that I have served it has loved it!

- Combine graham cracker crumbs, sugar and melted butter until crumbly.
- Press into the bottom of a 9 inch springform pan.
- Combine marshmallows, fruit cocktail and sour cream and pour over graham cracker crust.
- Chill until set.

- In a large mixing bowl, beat cream cheese until smooth.
- Add the baby food, ginger and nutmeg; mix well.
- Stir in the pie filling, fruit cocktail, oranges and pineapple.
- Fold in whipped topping, marshmallows and nuts.
- Cover and refrigerate overnight.

Steps:
- mix together in 8"x8" pan the flour, margarine, and nuts.
- bake this for 25 min @ 350 degrees F.
- in a mixing bowl cream together the cream cheese, powdered sugar, and whipped topping.
- when the crust is cool to the touch scoop the cream cheese mixture onto the crust.
- top with the pie filling or fresh fruit.
- cool in refrigerator for about 1 hour or freezer for about 30 minutes to set.
