- Prepare cake and bake according to package directions in a 9x13 inch baking dish. With a fork, poke holes all over top of cake.
- Combine 1 cup hot water and 1 cup cold water with one package of lemon gelatin. Stir until gelatin is dissolved, and pour mixture over cake. Chill in refrigerator until cool.
- In large bowl stir together milk, vanilla pudding mix and remaining package of lemon gelatin until powders are dissolved. Fold in whipped topping and spread mixture over cake. Refrigerate until serving.

LUCIOUS LEMON CAKE
This Lemon Cake Recipe is so luscious and fluffy. It's the perfect lemon cake full of lemon flavor, and you are going to love it!

- Grease three 9-inch pans. Line the bottom with parchment paper. Preheat an oven to 350 degrees F.
- In a large mixing bowl, use a hand mixer to cream the butter and sugar together.
- Use a fork to combine the eggs, buttermilk, lemon juice, vanilla extract, and lemon extract together in a bowl or 2 cup liquid measuring cup. Set aside.
- In another mixing bowl stir together flour, baking powder, and salt.
- Add ⅓ of the dry ingredients to the butter mixture and mix in until just combined. Add in half of the milk mixture and combine. Add in another ⅓ of the dry ingredients until combined followed by the remainder of the buttermilk mixture. Add in the remainder of the dry ingredients and mix with the hand mixer until just combined, using a rubber spatula to scrape the sides and bottom to make sure everything is mixed in. Gently fold in lemon zest.
- Divide the batter among the three prepared pans. Bake at 350 for 25 to 30 minutes. Let sit in pans for 5 minutes and then transfer to a wire rack to cool completely before layering and frosting.
- In a large mixing bowl use a hand mixer to beat together butter and cream cheese until creamy, about 2 minutes.
- Mix in lemon juice, vanilla extract, and lemon extract until just combined,
- Slowly mix in powdered sugar 1 cup at a time until desired consistency is achieved. Use to frost completely cooled cake.

COOL SUMMER LEMON CAKE
Came up with this refridgerated lemon dessert for supper last night and boy did it hit the mark on such a sweltering summer day!

- 1. Preheat your oven to 350F. Mix up the lemon cake mix as directed on box with electric mixer and pour in round spring form pan.Bake 30 to 35 minutes or til cake tests done in center.Remove from oven and let cool completely. Leave cake in pan after cooled.
- 2. Now mix up 2 small packages of instant lemon pudding. Whisk til thickened.Spread half of pudding over top of cake. Mix other half of pudding with whipped topping (cool whip) and spread over layer of lemon pudding and spread to edge of cake pan. Place fresh lemon zest over the top of cake and refridgerate for 2 hours. Before serving remove sides of springform pan. Enjoy!
SUMMER BLUEBERRY CAKE
This cake hits the spot in the summer, when you want a lighter dessert. I love it for the 4th of July, when I serve blueberries and sliced strawberries over the top for a red, white and blue theme. For busy moms, you can make your favorite white cake according to the box, use a can of blueberry pie filling (1/2 in the cake and 1/2 on top after baking) and a container of cool whip - which is how I used to make this cake back in the 1970's. They'll still love it.

- Make Filling: Put 1 cup of blueberries, sugar and 1 Tbsp water in a medium saucepan. Simmer over low heat until it becomes liquid. Mix remaining water and cornstarch and add to pan, cooking until it comes to a boil. Add the butter and cinnamon, stirring until the butter is melted, then add the rest of the blueberries. Cook for another minute, take off the heat and add the lemon zest. Set aside to cool.
- Make Cake: Preheat the oven to 350 degrees. Grease and flour a 9" x 13" cake pan (or use a cooking spray with flour).
- Put the cake mix, sour cream, milk, oil, eggs and vanilla in a large mixing bowl. Mix for 1 minute on low speed. Scrape down the bowl and mix on med-high speed for another 2 minutes.
- Pour cake batter into the prepared pan. Using 1/2 of the blueberry filling, put dollops of the filling on the batter and swirl lightly with a knife. Bake the cake until it is light brown and starts to pull away from the sides of the pan, 35-40 minutes.
- Cool cake and spread the rest of the blueberry filling on top.
- Make frosting: Using chilled bowl and beaters, whip the cream until soft peaks form. Add vanilla, then the sugar while continung to beat until stiff peaks form.
- Spread topping on cooled cake.
- Serve with additional berries, if desired.
