DAD'S CREAMY CUCUMBER SALAD
This was my Dad's recipe and one of our family's all-time summer favorites.

Steps:
- Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
- Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
- Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
- Cover bowl with plastic wrap and refrigerate at least 2 hours.

My grandmother used to make cucumber salad with cucumbers, onions, sour cream, vinegar, sugr salt and pepper. I always loved this salad and one day came up with this light variation of her delicious salad.

- 1. In a medium size bowl, combine all of the dressing ingredients. Mix well and set aside.
- 2. In a large bowl, combine all of the salad ingredients. Add the prepared dressing and toss gently to combine.
- 3. Transfer to a large bowl. Cover and refrigerate at least one hour.

- Place cucumbers and bell peppers into a colander and allow liquid to drain for 4 hours. While vegetables are draining, place yogurt into a separate colander lined with paper towels and let stand for 4 hours to allow excess whey to drain from the yogurt.

- Wash cucumbers and then peel if desired. Peeled cucumbers will be a bit softer while unpeeled will be a bit crisper. If using pickling cucumbers, you'll definitely want to peel as the skin is too thick.
- Very thinly slice cucumbers and onion (cut in half), about 1/16" or 1.5mm thick, where you can almost see through the slices. A mandoline makes really easy work of this.
- Place cucumbers and onion in strainer and sprinkle with about 1 teaspoon salt and toss to coat. Let sit over a bowl or clean sink at least 30 minutes, but preferably an hour or more, so excess water can drain. If you don't do this the cucumbers won't soften as they should, and your salad can end up very watery.
- Once cucumbers and onions have softened, lightly rinse (can skip if you like a saltier salad) and squeeze out any excess water, allowing to drain on a paper towel or clean kitchen towel while you make the dressing.
