1/2 cup mayonnaise
1/4 cup half-and-half cream
1/4 cup sugar
1/2 teaspoon celery seed
1/2 teaspoon dill weed
3 medium cucumbers, sliced

Steps:

  • In a large bowl, combine the first five ingredients. Add cucumbers; toss to coat. Refrigerate until serving.

My family loves this salad! --- remember to use both mayo and salad dressing combined, the two dressings combined seem to spark up the taste, plan ahead this needs to be refrigerated overnight to blend the flavors.

1 lb elbow macaroni, cooked to eldente, drained and rinsed well
1 large cucumber, peeled and diced
1 large tomatoes, chopped with liquid included
1 small onion, chopped (more to suit taste)
1 large green bell pepper, seeded and chopped
2 -3 hard-boiled eggs, peeled cooled, and chopped (optional)
3/4 cup mayonnaise (Hellman's is best)
1/2 cup Miracle Whip
2 tablespoons prepared yellow mustard
2 teaspoons celery salt, to taste
2 teaspoons seasoning salt, to taste
black pepper

Steps:

  • In a large bowl, combine ALL ingredients; toss to coat (adding more mayo and/or salad dressing to taste).
  • Cover; refrigerate overnight to blend flavors.
  • Stir before serving.
  • Note: If you don't want to include the cooked hard-boiled eggs in the salad, I sometimes cook up 6-7 (or how many you desire), and just cut them into four pieces, and just lay them on top evenly around a large bowl with the pasta salad, so people have the option of having them or not-- and it makes for a nice presentaion-- if you are adding them into the salad, then 2-3 chopped should be enough.

2 cups uncooked macaroni noodles
2 (6 ounce) cans tuna, drained (can use 3 cans)
4 -5 green onions, chopped or 1 onion, finely chopped
1 small green bell pepper, seeded and chopped
1 stalk celery, finely diced
1 1/2 cups chopped sweet pickles (can use more or less, do not squeeze out any juice from the pickles)
1 cup mayonnaise (I use half of each) or 1 cup salad dressing (I use half of each)
1/2 cup sour cream
2 tablespoons sweet pickle relish (optional or to taste)
1 tablespoon garlic powder (yes 1 tablespoon or even 1-1/2 tablespoons!)
1 -2 tablespoon prepared yellow mustard
1 teaspoon seasoning salt (or to taste, or use white salt)
fresh ground black pepper (to taste)
1/2 teaspoon paprika
3 -4 hard-boiled eggs (quartered) (optional)

Steps:

  • Cook macaroni in a large pot of boiling salted water until just tender; drain then rinse well under cold water; place in a bowl then toss with 1 tablespoon oil to prevent sticking.
  • Add in tuna, onion, bell pepper, celery and sweet pickles; toss to combine.
  • In a bowl mix together mayonnaise with sour cream, sweet relish (if using) garlic powder, yellow mustard (start with 1 tablespoon mustard) and seasoned salt; add to the macaroni mixture; mix well to combine.
  • Season with black pepper to taste.
  • Arrange the cooked egg wedges around the inside of the bowl, then dust the top of the salad and eggs lightly with paprika.
  • Cover and chill at least 3 hours before serving (the longer chilling time the better!).

1 (16 ounce) package elbow macaroni
2 (5 ounce) cans white tuna, drained and flaked
2 stalks celery, minced
1 onion, minced
2 cups mayonnaise
1 (5 ounce) jar pimento-stuffed green olives, drained
1 pint grape tomatoes
salt and pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Transfer the macaroni to a bowl, and cool in the refrigerator.
  • In a large bowl, lightly toss the tuna with celery, onion, and about 1 cup mayonnaise until combined, then stir in the remaining mayonnaise, macaroni, olives, and grape tomatoes. Season to taste with salt and pepper. Let the salad chill in refrigerator 1 hour.

The amounts listed are for a family of 4 that will last a couple of days, but increase as much as you want for the summer get-togethers. DO NOT LEAVE OUT THE GREEN PEPPER, if you don't like them, pick around them, they really do make or break this recipe!

1 small green pepper, diced
1/2 small onion, finely chopped
1 (6 ounce) can tuna in water, drained
6 hard-boiled eggs
2 teaspoons paprika
Miracle Whip

Steps:

  • Combine macaroni, green pepper, onion, tuna, and 5 of the eggs. Stir together until blended.
  • Add Miracle Whip, paprika, salt and pepper.
  • Thinly slice the last egg and arrange on top of the salad.
  • Sprinkle the top of salad generously with more paprika.

1 (8 ounce) package rotini pasta (rotini pasta preferred, tri-color fun for summer) or 1 (8 ounce) package elbow macaroni noodles (rotini pasta preferred, tri-color fun for summer)
1 cup mayonnaise
1/2 cup Italian dressing (I think Good Seasons is superior to Wish Bone)
1 tablespoon prepared yellow mustard
2 tablespoons fresh dill weed, chopped fine or 1 tablespoon dried dill weed
2 cups cucumbers, peeled, halved lengthwise, seeded, then each half cut in two lengthwise again and then sliced thinly
1/2 cup green pepper, diced
1/4 cup scallion, chopped
2 celery ribs, chopped
1 teaspoon salt
1/4 teaspoon ground black pepper
2 (7 ounce) cans albacore tuna in water, well drained by pressing lid hard on tuna while holding can upside down over sink (Costco Solid White Albacore tuna is wonderful! Bumblebee albacore in water second)

Steps:

  • Prepare macaroni or pasta as directed on package. Combine mayonnaise, Italian dressing, mustard, and dill. Add pasta to dressing and mix well. Place vegetables and tuna in salad bowl. Sprinkle with salt and pepper. Add pasta and dressing mixture and toss all ingredients gently. Refrigerate, covered, at least 4 hours before serving.
  • NOTES: Good Seasons Italian salad dressing makes an easy, wonderful marinade for chicken on the grill. Place chicken pieces in Ziploc bag with ½ cup salad dressing for at least one hour. Be careful, remembering that the dressing is made with salad oil and will flare up at first as the oil ignites. It can also be used dry as a rub.
  • Good Seasons salad dressing is becoming harder to find as Kraft Foods moves toward higher end premium dressings.
