HOME-STYLE YEAST BREAD
Everyone likes the tender texture and slightly sweet taste of this homemade bread. When I'm in the mood to bake, I usually double the recipe and share loaves with friends. The dough also makes lovely rolls. -Launa Shoemaker, Landrum, South Carolina

- In a large bowl, dissolve yeast in warm water. Add the sugar, butter, salt, eggs and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; turn onto a floured surface. Divide in half. Shape into loaves and place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 45 minutes., Bake at 350° for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool.

- In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

- Proof the Yeast. Yeast feeds on sugars and starches in the dough. And when it grows, it produces carbon dioxide that makes your dough rise. Yeast is a living organism; it's also very sensitive.
- Combine Ingredients and Mix Well. Combine the liquid and proofed yeast at the bottom of a mixing bowl. Add flour and salt. Some of the best breads are "lean doughs," consisting simply of flour, water, yeast, and salt.
- Knead the Dough until Smooth and Soft. Using a plastic bowl scraper, wooden spoon, or your hands, scrape the dough onto a liberally floured work surface.
- Let the Dough Rise until Doubled. Set the dough aside until it has doubled in size -- this can take between 45 minutes and two hours, as enriched doughs take longer to rise.
- Place Bread in a Greased Loaf Pan. Or for a round loaf, on a baking sheet. If you're topping loaves with seeds, now is the time to do it. Cover with a damp towel and let the dough rise again until nearly doubled while you preheat the oven.
- Bake the Bread. Most bread is baked in a moderate oven, 350 degrees F (175 degrees C). Bake for 40 to 50 minutes, or until the crust is golden brown and the bottom of a loaf sounds hollow when tapped.
- Cool the Bread. This is the most overlooked step in the bread-making process. Cool the loaves in their pans for about ten minutes before removing the pans.

- Proof the yeast. Proofing yeast is the first step to any yeast bread recipe. To do this, add the package of yeast to the warm water. Stir in a half-teaspoon of sugar.
- Make the bread dough. Next, in the bowl of your stand mixer (or in a very large mixing bowl), whisk together the remaining sugar, salt and three cups of flour.
- Knead. Remove the dough from your mixing bowl and place it on a lightly floured surface like a countertop or table. Make sure you have plenty of room to work.
- Let the dough rise. After all that work, it’s time to let the dough rest while the yeast does its thing. To proof bread dough, grease your container with a bit of oil or cooking spray and cover the dough with a damp cloth.
- Punch down and shape. Once your dough has doubled in size, it’s time to give it a quick check with your fingertips. When you poke the dough, it should slowly spring back.
- Proof again. Once shaped and in the pan, it’s time to proof the bread for a second time. Just like last time, cover the dough with a towel and place in a warm, humid part of your kitchen.
- Bake. Finally, it’s time to bake! Pop the loaves into a 375º oven and bake for 30 to 35 minutes. The loaves should be golden brown. If you want to be sure they’re baked through, use your thermometer to check the internal temperature of the bread.
