CRISPY ROASTED POTATOES
As a kid growing up, I always loved these slightly spicy, yet crispy, roasted potatoes. If only I had known then how easy they were to make!

- Preheat the oven to 325 degrees F (165 degrees C). Grease a large baking pan.
- Place potatoes into a large bowl.
- Whisk oil, onion powder, garlic salt, pepper, and paprika together in a small bowl. Pour over potato cubes, hand-tossing to coat. Place potatoes into the prepared pan, spreading them so that they are evenly dispersed.
- Bake in the preheated oven for 45 minutes. Stir. Continue to bake until potatoes are crispy brown and tender, 10 to 20 minutes.

CRISPY ROASTED POTATOES
Crispy oven roasted potatoes with a garlic and herb infused olive oil and dusted with parmesan. Crispy on the outside, soft and pillowy on the inside.

Steps:
- Preheat oven to 425F
- Place potatoes in an oven safe dish with 1/2in of water, cover with plastic wrap and poke holes, then microwave for 10min till they can be pierced with a fork. Drain and let cool. (You can also boil in a pot of water for 8 minutes)
- While potatoes are cooking, in a small sauce pan over medium heat, add the olive oil, garlic, rosemary, oregano, red pepper flakes, salt and pepper. Stir and cook for 3 minutes. Remove from heat, strain olive oil into a dish, and keep garlic mixture to the side.
- After draining the potatoes, add them to a large bowl. Sprinkle the corn starch on them and mix until coated. Add the olive oil to the potatoes and stir/toss them until they have developed a coating.
- Spread them onto a sheet pan in one layer and put on the lower rack. Allow to cook undisturbed for 20 minutes. Remove from the oven and using a spatula, flip and move them around. Add them back into the oven for 20 minutes. Remove from oven again and add the parmesan on top, using the spatula flip and move around. Put back into the oven for 10-15 minutes until desired crisp has been achieved.
- Place into serving dish and top with garlic herb mixture and fresh parsley.

SWISS POTATO ROESTI - COOK'S ILLUSTRATED
Published in Cook's Illustrated magazine, March - April 2007. This is a traditional swiss potato dish made from grated potato. Serve with a traditional Swiss dish like geschnetzeltes (Zurich-style veal or pork with gravy).

Steps:
- Run potatoes through the large shredding disk of a food processor. (If using a box grater, shred potatoes lengthwise so you are left with long shreds.).
- Place potatoes in a large bowl and fill with cold water. Using hands, swirl to remove excess potato starch, then drain in strainer.
- Transfer half of potatoes from strainer to the center of a clean kitchen towl. Gather ends together and twist as tightly as possible to expel maximum moisture.
- Wipe bowl dry. Transfer potatoes to bowl and repeat process with remaining potatoes.
- Sprinkle salt, cornstarch, and pepper to taste over potatoes. Using hands or fork, toss ingredients together until well blended.
- Melt half of the butter (2 tablespoons) in a 10-inch nonstick skillet over medium heat. When foaming subsides, add potato mixture and spread into even layer. Cover and cook 6 minutes. Remove cover and, using spatula, gently press potatoes down to form round cake. Cook, occasionally pressing on potatoes to shape into uniform round cake, until bottom is deep golden brown, 4 to 6 minutes longer.
- Shake skillet to loosen roesti and slide onto large plate. Add remaining 2 tablespoons butter to skillet and swirl to coat pan. Invert roesti onto second plage and slide it, browned side up, back into skillet. Cook, occasionally pressing down on cake, until bottom is well browned, 7-9 minutes. Remove pan from heat and allow cake to cool in pan for 5 minutes. Transfer roesti to cutting board, cut into 4 pieces, and serve immediately.

PERFECTLY ROASTED POTATOES
Steps:
- Place a rack in the lowest position in your oven and preheat to 425°F. Halve potatoes lengthwise.
- Arrange potatoes, cut side down, on a large rimmed baking sheet, spacing evenly. Pour in 1 1/2 to 2 cups water-enough to cover the surface in a thin layer but not so much that it spills the second you move the sheet.
- Cover baking sheet with a double layer of foil, crimping sides very tightly to seal well. This will trap in steam and prevent water from sloshing out if you accidentally jostle the sheet.
- Bake until a fork or a skewer slides easily through the potatoes, 25 to 30 minutes. The foil will be puffed; pierce it with the fork or skewer and poke around for a couple of potatoes to test.
- Let potatos cool, still covered, 5 minutes. Use tongs to peel back foil about 1 inch at on corner. Carefully tip sheet and pour off water (its job is done). Crank up oven to 500°F or as high as it goes.
- Remove foil. Drizzle olive oil over potatoes. Season generously with kosher salt and freshly ground pepper. Let potatoes cool to the point that you can handle them, then toss to coat.
- Arrange potatoes cut side down and roast, uncovered, until skins are golden, cut sides are deeply browned and crisp, and you can see the edges frying and sizzling in the oil on the sheet, 20-25 minutes.
- Let potatoes cool for a minute or two, then use a spatula to unstick them from the baking sheet. Serve them exactly as they are because these potatoes need absolutely nothing else.

- Place a baking sheet in oven and preheat oven to 450 degrees (it is essential that the baking sheet is in the oven for this step).
- Fill a large pot with water. Place the potato discs in the pot and bring to a boil. Lower the heat and simmer for 5 minutes, until the potatoes are almost-tender (a fork should offer some resistance when poked into the center).
- Drain the potatoes and place them in a large bowl. Toss the potatoes with 1-2 Tablespoons of the olive oil to coat. Use a spatula to stir the potatoes for about 2 minutes (don't skip this step because this is what will help them crisp up!) Season liberally with salt, pepper, and fresh rosemary.
- Remove the baking sheet from the oven. Brush the sheet with 1 Tablespoon of olive oil. Place the potatoes on the sheet in one layer (you don't want any on top of each other). You should hear a sizzle when the potatoes hit the hot baking sheet. Bake for 20 minutes. Remove the sheet from the oven and flip the potatoes. Bake for an additional 20 minutes. Remove and serve immediately.
