FRIED CABBAGE

Steps:
- In a large skillet, melt butter over medium heat. Stir in the sugar, salt, pepper flakes and pepper. Add the cabbage and water. Cook for 5-6 minutes or until tender, stirring occasionally.

SWEET AND SPICY JERK PORK
Steps:
- Preheat oven to 400F
- Wash, rinse, and drain the pork pieces with salt and lemon juice.
- Use a paper towel to pat the meat dry. Transfer meat to a large bowl, add jerk seasoning, onions, scallions, ginger, cilantro, accent, parsley, and browning sauce.
- Using gloves or a mixing spoon combine all ingredients and place the seasoned meat into a baking pan.
- Cover with aluminum foil and bake for about 2 hours or until meat is fork-tender.
- Sweet Jerk Glaze
- Combine the sauce ingredients, and add to a saucepan, simmer on low heat until sauce the thickens. If the sauce isn't thick enough combine cornstarch with water and add to the sauce.
- Drizzle unto Jerk Pork, combine and serve.

SOUTHERN FRIED CABBAGE WITH SAUSAGE
This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

- Slice the cabbage in half to create 2 portions. Slice the core/stem out of both. Then slice each piece in half. You should have 4 smaller chunks of cabbage. From there, slice each into smaller strips. Set the cabbage aside.
- Heat a skillet on medium-high heat and add the chopped bacon. Cook for 3-4 minutes or until the bacon is crisp.
- Add the onions, green peppers, and red peppers to the skillet. Saute' for 2-3 minutes until the onions are translucent and fragrant. Add in the minced garlic and stir.
