EASY MASHED RUTABAGA
Creamy, slightly sweet, and a great low-carb alternative to mashed potatoes. The broth infuses the mashed rutabaga with wonderful flavor.

Steps:
- Place rutabaga in a medium pot and add enough chicken broth to cover. Bring to a boil; reduce heat, cover, and cook until tender, about 40 minutes.
- Transfer rutabaga to a colander and drain well. Place into a deep bowl; add evaporated milk and butter a little at a time until desired consistency is reached. Use an electric hand blender to get a creamy, non-fibrous texture. Season with salt and pepper.

Plain, simple and delicious. Guests have the option of mashing them in with their potatoes, on the side, or (yuck... rutabagas!!!) not at all. To me, it is not Thanksgiving or Christmas without them.

Steps:
- Carefully peel wax and skin from rutabagas.
- Slice into 1/2 inch rounds.
- Place stack of rounds on board and dice into 1/2 inch cubes.
- Bring water, rutabagas, and salt to a boil.
- Simmer gently 45 minutes to one hour.
- Drain and serve in warmed covered dish.
MASHED RUTABAGA
Boiled and mashed rutabaga is a favorite vegetable side in Ireland.

- Peel and cube the rutabaga. Add the diced rutabaga to a medium saucepan and cover it with cold water.
- Bring the water to a boil, then lower the heat and simmer for 40 to 50 minutes until the rutabaga is fork tender.
- Drain the boiling water once the rutabaga is cooked. Return it to the pot. Use a potato masher to break it up. Add 2 tablespoons of butter. Season with salt and white pepper and mash again.
- Add the sour cream, if using, and mix through the rutabaga mash.
- Add the brown sugar, if using, and mix through the rutabaga mash.
- Serve hot as a vegetable side dish for dinner.

A delicious southern dish! Rutabaga is a sweet root vegetable that is often seen on the menus of home-style cooking restaurants. It is of the turnip family. This vegetable goes well as a side dish with pork. Great use for leftover ham. Some people prefer it smashed, but we like it in small cubes. Tired of the same side dishes??? - Note: The ham will provide enough saltiness as it cooks.
- Peel rutabaga and cut into small cubes. Bring water to a boil Place rutabaga cubes and ham pieces in a large saucepan.
- Cover and simmer on low heat for approximately 1 1/2 hours. Do not let water boil out completely -- keep a watchful eye. If preferred, mash with a fork before serving.
- Enjoy!

- Peel the rutabaga. Trim the ends, and then cut into an even dice. I went with a 1/2 inch size, you can do larger if you like.
- Put the rutabaga in a large pot and cover with cold water. Add 1 tsp salt and bring to a boil. Cover, turn down the heat and cook until just tender, but not soft or mushy. Mine took only 10 minutes.
- Drain and return to the pan. Add butter, salt, and pepper to taste. Keep warm on the stove until needed.

- Wash the outside of the rutabaga to remove any dirt. Most American rutabagas are covered in a waxy film, so the dirt is usually removed before the application of this coating.
- Place the rutabaga on a cutting board. Using a sharp knife, slice the vegetable in half. I like to cut through the central stalk, to create two halves that are easy to lay flat on the cutting board.
