COOKING RED RICE
I found these basic instructions for cooking Bhutanese red rice at Sugat.com. Goes very well with Zesty Corn and Beans.

Steps:
- Rinse red rice in water.
- Heat oil in a pot, add rice and stir for 2 minutes.
- Add water and bring to a boil.
- Lower heat and cover pot. Cook for 45 minutes or until liquid is absorbed.
- Remove from heat and let rest for 10 minutes.
CHARLESTON RED RICE
This is pure southern soul food. Its been made for generations in my family since the early 1900's. Every area of the south has a version of red rice but I saw that Zaar did not have a recipe quite like this one. I cannot get enough of this southern delight and thought you might like it as well.

Steps:
- Fry bacon and remove from the pan:.
- Saute'onions and peppers in the bacon grease;.
- Add tomato paste water salt sugar and pepper.
- Cook uncovered slowly about 5 minutes and then add the rice another 5 minutes until mixture is bubbly then pour into the top section of a rice steamer or you can use a very large Pyrex dish.
- Pour mixture in and add the sausage and crumble up the bacon and mix into the rice mixture.
- Cover and bake for 35- 45 minutes in a preheated oven at 350 degrees or steam in steamer.
- I bake it now days but the family recipe says to steam it.
RED RICE
Red rice gets its color from annatto seeds, also called achiote, a word that comes from Nahuatl, the Aztec language. Achiote comes from a plant native to Mexico, and it gives this rice a subtle vegetable flavor. This goes well with Poulet a la Creole. It can be kept warm, covered, in a warm spot, for 20 to 30 minutes before serving.

- Melt the butter with the annatto oil in a medium saucepan over medium-high heat. Add the Scotch bonnet and garlic, stir, and cook for 15 seconds. Add the onion, carrot, celery, and bay leaves and stir well. Allow the vegetables to cook, stirring frequently, until well-glazed, about 10 minutes.
- Stir in the rice, salt and pepper. Add the chicken stock, stir once and bring to a simmer, the immediately turn the heat down to very low. Cover and cook until the rice has absorbed the stock, 12 to 15 minutes. Cover and let stand for 5 minutes, then serve.
- Toast the annatto seeds in a heavy saucepan until they just start to smoke. Add the olive oil. When the oil begins to simmer, remove from the heat and allow to cool. Strain the oil and store in an airtight container in a cool, dark place for several months.

- Peel the outer layer of the lemongrass stalks, chop them into 2-inch pieces with diagonal cuts and lightly smash them with the flat part of your knife. Break the kaffir lime leaves into individual lobes (they are double-lobed leaves).
- Add the lemongrass pieces and the kaffir lime leaves to water in a deep, wide pot and bring it to a boil. Add the red rice and bring it to a boil again on high heat. Then simmer for 20 to 25 minutes until cooked thoroughly but not mushy. (note 3) Drain the rice in a colander. Remove the lemongrass stalks and the lime leaves.
- Spread the drained red rice on a large tray or plate and allow it to cool. Once cooled, keep the tray of rice in the refrigerator for 20 minutes or freezer for 10 minutes. This will help remove extra moisture from the rice to give you the best fried rice.
- Mince galangal (or ginger) and garlic. Slice the onions, bell peppers and carrot. Boil the green peas and keep aside.
- Heat the oil in a large pan or wok on high flame, add the minced galangal and garlic and stir-fry until you get an aroma, but not browned. Add the onions and chili and stir-fry until translucent. Stir in the grated carrots, cooked peas and soy sauce. Stir-fry for 5 minutes before adding the rice. Fry for 5 more minutes and turn off the heat.
- If you're using eggs, beat them with a few dashes of salt and pepper. Make space in the middle of the pan by moving the vegetables to the sides. Add the eggs and scramble them until almost done. Mix in the rice when the eggs are semi-cooked and stir well. Turn off the heat.
- Garnish with chopped cilantro and serve with lime wedges.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 2-quart baking dish.
- Bring the rice, water, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and most of the liquid has been absorbed, 20 to 25 minutes.
- While the rice is cooking, cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Reserve about 1 tablespoon of bacon drippings in the pan. Reduce heat to medium. Drain the bacon on a plate lined with paper towels; crumble the bacon once cooled enough to handle.
- Cook and stir the onions in the reserved bacon drippings until translucent, 5 to 8 minutes.
