COOKING DRIED BEANS - CROCK POT
Buying dried beans is so much less expensive than canned. Cook the beans in the crock pot and then freeze - inexpensive and easy. Found this recipe on a blog - thanks whoever wrote it. Preparation time is initial soaking time.

Steps:
- Rinse beans.
- Pour beans into crock pot and add enough water to cover beans an additional 2 inches.
- Let beans soak for 6 hours or overnight. DO NOT turn crock pot on.
- Drain and rinse beans. Return to crock pot and cover with fresh water as above.
- Cook on low for 8 hours.
- When beans are cool you can package them in zip lock bags. 1 2/3 cups equals about a can's worth.
- These freeze beautifully.

SLOW COOKER PINTO BEANS
These beans turn out fabulous in the slow cooker! I developed this recipe after finding too many hard beans after cooking with a pot on the stove.

Steps:
- Cover pinto beans with water in a large bowl; allow beans to soak overnight.
- Place onion, green bell pepper, celery, garlic, Black Forest ham, soaked pinto beans, cumin, oregano, bay leaves, and lard in a slow cooker.
- Pour enough chicken broth into the slow cooker to cover the other ingredients.
- Cook on High until beans are very tender, 5 to 6 hours.

- First, sort the beans. Just quickly look through the beans and make sure there aren't any tiny rocks or bits of anything else in there with them.
- After the beans are sorted, pour them into the crock-pot. You don't want your beans to fill the pot more than about a third full. They will expand greatly as they cook. Now, fill the pot most of the way with water and cover with lid.
- Soak the beans for 8-24 hours. I try to soak mine 24 hours most of the time. When you are ready to cook them, just drain the water, refill with clean water and turn the Crock-pots on to low or high depending on what works best for you.
- I recommend cooking beans on low. I get the best results when cooking on low. However, I have cooked them on high numerous times if I needed them to be finished in time for dinner that night. Either way works, just stay aware of how close to finished they are. It's easy to overcook when the beans are on high.
