VENISON TENDERLOIN

Venison Tenderloin image

Marinate venison in a red wine based marinade for 12-36 hours depending on size of meat and age of deer. Then remove from marinade and grill or roast until meat is medium rare.

Provided by REDWINE48

Categories     Meat and Poultry Recipes     Game Meats     Venison

Time 13h35m

Yield 6

Number Of Ingredients 8

4 pounds venison tenderloin
1 cup red wine
½ cup apple cider vinegar
1 medium onion, chopped
2 cloves garlic, crushed
2 bay leaves
2 sprigs fresh thyme
2 sprigs fresh rosemary

Steps:

  • Combine the red wine, cider vinegar, onion, garlic, bay leaves, thyme and rosemary in a medium bowl, and mix well. Transfer to a large resealable bag, and put the venison tenderloin into the bag. Close tightly, pressing out as much air as you can. Place meat in the refrigerator to marinate, turning two or three times, for at least 12 hours.
  • Preheat the oven to 325 degrees F (165 degrees C). Remove meat from marinade, and place on a roasting rack in a roasting pan.
  • Roast in the oven for 2 to 2 1/2 hours or to your desired degree of doneness. For medium rare, the internal temperature of the roast should be at least 150 degrees F (65 degrees C) when taken with a meat thermometer. Let the roast stand for 15 to 20 minutes before carving.
  • While the tenderloin roasts, heat marinade in a saucepan over medium heat. Simmer until the liquid is reduced by 1/3. Serve with venison.

VENISON ROAST RECIPE

Venison Roast Recipe image

Slow-cooked in the oven, this mouthwatering venison roast with carrots, onion, potatoes is topped with homemade flavorful gravy. The whole family will love it!

Provided by meredith

Categories     Venison

Number Of Ingredients 15

4 pounds venison shoulder (or butt roast)
1/8 teaspoon kosher salt
1/8 teaspoon cracked black pepper
5-6 large carrots
1 medium yellow onion
4 garlic cloves
1/4 cup olive oil
1/3 + 1 1/2 cups quality beef stock
1 Tablespoon onion soup mix
1 fresh rosemary sprig
2 Tablespoons fresh parsley (chopped)
6 medium potatoes (peeled or unpeeled)
2 Tablespoons unsalted butter
3 Tablespoons flour
2 Cups Roast drippings and broth

Steps:

  • Generously season both sides of your thawed roast with kosher salt and cracked black pepper. Set it aside and turn on your oven to 250˚ F.
  • Peel and chop the carrots, slice the onion and peel the garlic cloves. In a large stockpot on the stove using medium-high heat, pour in 1/4 cup olive oil. When the oil is hot, lay down your onion rings and garlic cloves. Cook for 2 minutes on each side or until the onions are translucent and crispy brown edges are formed. Remove the onions and garlic and set aside in a large bowl.
  • Using the same method, sear your carrots for about two minutes per side. When the carrots start to show browning on both sides, pull them out and add them to your bowl of onions and garlic.
  • Make sure you still have some oil at the bottom of the pan before laying down one side of the seasoned meat into the pan. Place the roast in the stockpot to brown for one minute on each side before removing it to rest one more time.
  • Working quickly, whisk 1/3 cup of beef stock into the browned bits at the bottom of the stockpot and keep whisking until they are part of the stock. Turn off your heat.
  • Layer the bottom of the stockpot with the onions, carrots and garlic and top with the browned roast. Split the rosemary sprig in two and lay it on top of the meat followed by one tablespoon of onion soup mix per pound of meat. Also add the fresh chopped parsley and 1 ½ cups of quality beef stock.
  • Cover the pot and bake for 3 hours at 250˚ F.
  • At three hours, slide the pot out and carefully add the potatoes around the edge of the meat and on top of the carrots, onions and stock. Move the rosemary from the top of the meat and poke it down into the juices. Slide the covered pot back into the oven and bake for an additional 3 hours at 250˚ F.
  • When the six hours has ended, carefully remove the stockpot from the oven, take out the roast, and place it on a platter. Cover it with foil so it stays warm. Remove all of the vegetables and place them in a bowl and cover with foil. Strain the remaining stock using a fine mesh strainer or a gravy separator and pour it into a liquid measuring cup and set it aside.
  • To make gravy, add the butter to the same pot and allow it to melt. Whisk in the flour and form a paste. Allow it to cook for 1 minute and then whisk in your reserved stock and drippings. Whisk just until it is thickened and turn off the heat.
  • Shred the meat and serve with carrots, potatoes and gravy.

VENISON RECIPES FOR THE SLOW COOKER, OVEN, AND STOVETOP
venison-recipes-for-the-slow-cooker-oven-and-stovetop image
2020-08-05 The slow cooker is an excellent way to cook many cuts of venison, especially roasts and stews. The long, slow cooking breaks the meat down and makes it tender and juicy. If you prefer a stovetop method, most of these recipes can be braised in a Dutch oven over low heat or in a 300 F oven.

  • Preheat oven to 300 degrees. Pat venison dry with paper towels and generously sprinkle salt and pepper over the roast. In an enameled Dutch oven pot, heat about 1 tablespoon of oil over medium-high heat. Add venison roast to the oil and sear on all sides for a brown crust.
  • Add more oil as needed. Lower heat to medium. If there’s enough room around the roast, add sliced onion with a pinch of salt and sauté until soft and translucent (about 7 minutes), stirring often. Add smashed garlic and thyme and sauté for 1 minute. If there’s not enough room, remove the roast and return it to the pot afterward you’re done with the aromatics.
  • Pour in 8 cups of water and bring to a simmer. Cover the pot tightly and transfer to the 300-degree oven. Braise meat for about 2 to 3 hours or until venison becomes tender and shredable.
  • Remove the tender meat and skim/strain out onion, garlic, and thyme. Bring the liquid to a boil on the stove and season it with beef bouillon and Worcestershire sauce. Stir in the frozen egg noodles and cook for 20 to 30 minutes, stirring frequently.

  • Use only venison that has been field-dressed correctly. The longer the meat stays on the deer carcass after the animal was shot, the tougher it becomes.
  • Trim away all visible fat. Unlike beef fat, which imbues the meat with flavor and helps to keep the meat moist, venison fat does not taste good, and will do nothing for the texture of the meat.
  • Marinate the meat overnight before cooking it. Venison has a strong, gamey flavor that you can highlight or mask, depending on the cut and what you hope to do with it.
  • Substitute the removed deer fat with another fat source. Although the deer's own fat will affect the flavor of the venison adversely, venison lacks the "marbling" needed to keep it moist and tender, making it very easy to dry it out.
  • Match the cut to the cooking method. Different cuts are more appropriate for different cooking methods. Some are great cooked up as steaks, while others make better stew meats or candidates for venison sausage.
