1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
BROWNIE LAYER:
1/2 cup butter, melted
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup baking cocoa
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
12 Oreo cookies, crushed
8 Oreo cookies, coarsely chopped

Steps:

  • In a small bowl, beat the cream cheese, sugar, egg and vanilla until smooth; set aside. For brownie layer, combine the butter, sugars and cocoa in a large bowl. Beat in eggs and vanilla. Combine flour and baking powder; gradually add to cocoa mixture. Stir in crushed cookie crumbs., Pour into a greased 11x7-in. baking pan. Spoon cream cheese mixture over batter. Sprinkle with coarsely chopped cookies. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs. Cool completely on a wire rack. Cut into bars. Store in the refrigerator.

When I was eight, chocolate brownies were my life. I scoured the local stores on my Raleigh bike, looking for gainful employment to support my chocolate brownie habit. The wife of the hardware dealer took pity on me and offered me a job paying $1 an hour to iron their smalls and sheets. After two hours I had enough cash to buy a couple of brownies, plus change for some sherbet lemons on the way home. It was worth every crease!

Number Of Ingredients 12

11 3/4 tbsp/5 1/2 oz/165g butter, plus extra for greasing
7 squares/7oz/200g dark chocolate, grated or finely chopped
3 eggs
2 egg yolks
Seeds of 1 vanilla bean or 2 tsp vanilla extract
Generous 3/4 cup/5 1/2 oz/165g soft light brown sugar, solidly packed
2 tbsp all-purpose flour
1 tbsp unsweetened cocoa
Pinch of salt
5oz/154g package of Oreo cookies (about 13 cookies), broken into quarters
Confectioners' sugar, for dusting
Special equipment: 8in (20cm) square baking pan

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C) with the middle shelf ready. Grease the baking pan, then line with parchment paper with the paper overlapping the sides a little.
  • Melt the butter in a pan over medium heat. When the butter has melted, remove the pan from the heat and add the grated chocolate. Let stand for a few minutes until the chocolate goes soft, then stir together. Alternatively, you can put the chocolate and butter in bowl and melt in the microwave in 25-second blasts, stirring well each time.
  • Whisk the eggs, egg yolks, and vanilla together in a large bowl until they begin to get light and fluffy. Add the sugar in two additions, whisking between each. Pour it around the side of the egg mix so as not to knock out the air that has been whisked in to it. Keep whisking until the mixture becomes stiffer. Once the egg mixture is ready, pour the chocolate into it, again around the sides so as not to knock the air out.
  • Sift the cocoa into a large bowl and add the flour, salt, and a third of the Oreos. Stir until fully combined, then pour the mixture into the prepared pan. Scatter the remaining Oreos over the top, pressing them in slightly. Bake in the oven for 25 to 30 minutes. The middle should be very so slightly gooey.
  • Let the brownies cool in the pan. The top will sink and crack a little. Pull the brownies out using the overlapping paper and cut the brownies into squares. Dust with confectioners' sugar.
  • Cook's Note: Substitute Oreos for toasted walnuts or pecans or sprinkle the brownies with honeycomb.

4 large eggs
1-1/2 cups chocolate syrup
1 cup all-purpose flour
6 mint creme Oreo cookies, chopped
MINT CREAM:
1/2 cup butter, softened
2 cups confectioners' sugar
1 tablespoon 2% milk
1/4 to 1/2 teaspoon mint extract
2 drops green food coloring
Additional mint creme Oreo cookies, crushed

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in chocolate syrup, then flour, just until blended. Fold in the chopped cookies. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool completely on a wire rack., For mint cream, in a small bowl, cream butter and confectioners' sugar until light and fluffy. Beat in the milk, extract and food coloring. Frost brownies; sprinkle with crushed cookies. Cut into squares.

1 package Betty Crocker™ Supreme chocolate chunk brownie mix
3 tablespoons water
1/2 cup vegetable oil
2 eggs
2 to 3 teaspoons instant espresso coffee (dry)
1 package (3 ounces) cream cheese, softened
2 tablespoons butter or margarine, softened
1/4 cup sugar
2 tablespoons coffee liqueur, if desired
1 egg

Steps:

  • Heat oven to 350°F. Grease bottom only of rectangular pan, 13x9x2 inches.
  • Stir brownie mix, water, oil, 2 eggs and espresso powder in medium bowl about 50 strokes or until well blended. Spread 2/3 of the batter in pan.
  • Beat remaining ingredients in small bowl with electric mixer on medium speed until smooth and fluffy. Spread over batter in pan. Drop remaining batter by tablespoonfuls onto cream cheese mixture; swirl lightly with spatula for marbled effect.
  • Bake 30 to 34 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean. Cool completely for easier cutting. For 18 brownies, cut into 6 rows by 3 rows. Store tightly covered.

1/3 cup vegetable oil
16 ounces duncan hines creamy home style classic vanilla frosting

Steps:

  • Preheat oven to 375.
  • Grease cookie sheet.
  • Combine brownie mix, egg, water and oil in large bowl.
  • Stir until well blended and soft dough forms.
  • Drop by level measuring tablespoons about 2 inches apart onto greased cookie sheet.
  • Bake at 375 for 7-8 minutes or until cookies are set in center. Do Not Overbake.
  • Cool 1 minute before removing to cooling rack.
  • Cool completely before assembling.
  • Spread frosting on half the cookies. Top each frosted cookie with another cookie.
  • Gently press together.

  • Preheat oven to 350°F (177°C). Line the bottom and sides of a 9×13 baking pan with parchment paper, leaving an overhang on the sides to lift the finished brownies out (makes cutting easier!). Set aside.
  • Prepare brownie batter. Spread into prepared baking pan. My homemade brownie batter is very thick, so do your best to spread it to the edges. Doesn’t have to be perfectly neat. Press 24 Oreos down into the top of the brownie batter; you want 6 rows of 4 Oreos.
  • Bake for 32 minutes, then test the brownies with a toothpick. Insert it into the center of the pan. If it comes out with wet batter, the brownies are not done. If there are only a few moist crumbs, the brownies are done. Keep checking every 2 minutes until you have moist crumbs. My homemade brownies with Oreos on top take about 35 minutes.
  • Remove from the oven and place on a wire rack to cool completely in the pan. Once cool, lift the parchment paper out of the pan using the overhang on the sides. Do not cut into squares yet. (TIP: It’s helpful to place the whole slab of brownies (parchment paper still underneath) on a baking sheet because you will need to chill the layers. The baking sheet makes transporting to the refrigerator easier!)
