- Peel garlic and place in a mortar and pestle. Season with salt and pound into a thick paste. Add chiles; pound until smooth. Add as many tomatillos as you can fit in your mortar; pound until chunky. Transfer salsa to a bowl. Repeat with remaining tomatillos, mixing them into the bowl of salsa in batches.

Steps:
- Place the tomatillos, chiles, garlic cloves, and onion in a dry, cast iron pan. Toast, turning occasionally over medium-high heat until the husks of the tomatillos have blackened and their skins turn translucent. The goal is to soften the tomatillos by blackening the skin without allowing them to split. Remove from pan, and allow to cool slightly.
- Remove the husks from the tomatillos and the stems from the peppers. Place into the bowl of a food processor with the cilantro and salt to taste; process to desired consistency. Pour the salsa into a saucepan, and cook over medium heat for about 5 minutes to mellow the flavors and remove the raw taste.

COOKED TOMATILLO SALSA WITH ARBOL CHILES
When tomatillos are in season they can be easily cooked by peeling off the paper-like covering and then simply boiling the fruits in several inches of water until softened. We also freeze cooked tomatillos for use in the cold months. This salsa has great flavor and a little heat. It can be made with pre-cooked, frozen and defrosted tomatillos, as well as canned or fresh cooked tomatillos.

Steps:
- You will need a large skillet or heavy saucepan and either a blender or food processor.
- Heat the oil in a large heavy skillet or saucepan over medium high heat. Add garlic and onion and cook, stirring occasionally, until onion is transparent. Add chiles and cook for one minute more. Add tomatillos, then pour in broth and add sugar and salt. Bring to a boil, lower heat and gently simmer uncovered for thirty minutes. Remove from heat and let cool. Taste for salt and adjust if necessary. You can either mash the tomatillos with a fork to produce a coarse-textured salsa, or transfer the sauce to a food processor or blender to be briefly processed to a smooth texture. Transfer sauce to a serving dish and just before serving, stir in coriander leaf.

- After peeling and washing the tomatillos, transfer them to a pot and cover with water, To the pot also add the onion and serrano peppers without the stems. Bring up to a boil, reduce to a simmer and continue cooking for 7-10 minutes. Remove from heat.
- In a small skillet, add the dried chile de arbol and the peeled cloves of garlic. Heat to just below medium. Add 1 tsp of oil. After a few minutes the ingredients will begin to sizzle and become aromatic. Toss in the hot oil for 2-3 minutes, then remove from heat.
- Using a slotted spoon, transfer the tomatillos, serranos and onion to the blender. Add only the garlic at this time. Pour in 1/2 cup of the cooking water in. Add a big handful of freshly washed cilantro to the blender. Season to taste with salt. Blend on high until smooth. Now add the chile de arbol and pulse to blend. I like to see the red chile flakes in the salsa.
- Transfer the blended salsa to a sauce pan and heat to medium. When it comes up to a simmer, reduce heat slightly and continue cooking for 7-10 minutes. Cooking the salsa will cook out the natural pectin and will yield a smoother salsa when refrigerated.

- I usually start by wiping off the Chile de Arbols with a damp paper towel. De-stem and de-seed the chiles, but don't worry about getting rid of every last seed. Note: it's best to use caution when handling hot chiles. Be sure to wash your hands after handling them or you can use gloves.
- I roast the chile pieces in the oven (400F) for 1-2 minutes until warm and fragrant. Alternatively you can flash roast them on a dry skillet.
- Add the roasted chili pieces to a bowl and cover them with the hottest tap water you've got. Let them reconstitute for 20-30 minutes. If they float to the surface you can use a small plate or bowl to keep them submerged.
- Husk the tomatillos and then rinse both the tomatoes and tomatillos. I usually remove the stems from both knowing that any juices leftover in the roasting pan will go into the blender.

- Remove the husks from the tomatillos and rinse in lukewarm water. Add tomatillos, chile de arbol and onion to a saucepan. Cover with water and heat to medium. When it comes to a boil, reduce heat slightly and cook for 10 minutes.
- Using a slotted spoon, transfer the tomatillo mixture to the blender. Season with salt. Blend on high for just a few seconds.
- Pour salsa into a sauce pan and heat to medium heat. Just bring to a light simmer and cook the salsa for 8-10 minutes. Cooking the salsa helps remove the natural pectins in the tomatillos and keep your salsa from clumping up when refrigerated. Once salsa cools you could add in some chopped onion and cilantro. It's an option.

- Place tomatillos and garlic in a medium heat skillet roast until soft and brown about 18 to 20 minutes. Garlic clove will roast faster remove and place in your blender or food processor. In a separate skillet quickly toast the Arbol pepper. It takes about a minute. This will be done fast since these pepper will burn easily and your sauce will have a bitter taste.
- Process tomatillos, Arbol peppers, garlic and salt in a blender until a slightly chunky sauce forms, adding some water in case it is needed. But usually, the tomatillos are very juicy. I do not add water.
