Steps:
- Separately mix the spices for each dump.
- Gray the meat and drain grease.
- Slow boil meat in beef broth and 1 equal can of distilled water.
- Add Dump 1 and medium boil for 60 minutes.
- Add Dump 2 and medium boil for 45 minutes.
- Add Dump 3 and medium boil for 15 minutes. In last five minutes taste for heat-adjust as required.

My husband and I created this recipe together. He won a chili cook-off with this recipe at work. We always use venison, but you can use ground beef or turkey.

- In a medium Dutch oven over medium-high heat add the olive oil. Add the ground meat and cook, breaking up into pieces, until browned. Add the onions, bell pepper and jalapeno and cook until softened. Drain excess grease.
- Add the tomatoes, tomato sauce, cumin, chili powder, salt, cayenne, paprika and 1 cup water. Mix to combine.
- Add the kidney beans and black beans, mix and bring to a simmer. Cover and cook for 1-2 hours.
- Serve with desired toppings.

- Season beef with salt and pepper. Heat 1 T ghee in a very large pot over high heat. Brown beef in batches, taking care not to overcrowd your pan (each piece of beef should have space around it; too much in the pan will steam your beef, not sear it; searing and browning is what adds so much flavor). Add additional 1 T ghee as needed with each new batch.
- Add onions and garlic, cook, stirring frequently, until very soft and just starting to brown.
- Stir in tomato paste. Cook, stirring frequently and scraping bottom of pot with a wooden spoon, until tomato paste is caramelized, about 12 minutes. Add remaining ingredients and cook, stirring frequently, for 1 minute.
- Add beef back to pot along with 5 cups water; bring to a boil. Reduce heat to low. Simmer, stirring occasionally, until meat is tender, about 2-3 hours.

- 1. Saute hamburger, green pepper, red bell pepper, jalapenos in a pan. Add 1 teaspoon (each) of salt, pepper, and garlic powder. Add 1/2 tsp black pepper.
- 2. Drain the grease.
- 3. Into a large stock pot or Crock Pot, add the sauteed hamburger meat. Then add the rest of the ingredients.
- 4. Stir all and bring just to a low simmer. Reduce heat and cook for at least 1 1/2 hours on low. Stir gently and occasionally. You can do this on the stove or in a large Crock Pot. Either way works.
- 5. Thick, rich, slightly sweet/slightly hot chili! Very unique! Enjoy!! :D

- Heat oil over medium high heat in a large dutch oven.
- Add beef, onions, green pepper& garlic and cook until onion is tender (about 10 minutes), stirring frequently.
- Add tomatoes& their liquid, hot peppers, chili powder, salt& bay leaves and bring to a boil.
- Reduce heat to low, cover& simmer for 1 1/2 hours, stirring occasionally.
- Remove bay leaves.
- Stir in beans& their liquid and heat thoroughly.
- Serve in soup bowls; sprinkle with cheddar or monterey jack cheese (or a comb).
- Place under broiler for 1- 2 minutes to melt.
- Serve with your choice of sliced green onions, diced avocados, chopped green peppers, hunks of crusty bread, corn chips,saltine crackers or tortilla chips as accompaniments.

- Add a TBSP of oil to a large Dutch oven set over high heat. Season the beef with salt and pepper. In batches, brown the meat until you get it nice and crusty; about 2 to 4 minutes per side. I typically drain the pot in between batches, adding a bit more oil each time. Transfer the browned meat to a platter, plate, or baking sheet and set aside for now. Drain the pot once more.
- Reduce the heat to medium and add another TBSP of oil, followed by the onions. Season the onions lightly with salt and pepper (about ¾ tsp each). Cook the onions until tender, about 5 minutes.
- Add the garlic, chili powder, chipotles, cocoa, smoked paprika, oregano, cumin, and miso. Allow the spices to toast for about 3 to 4 minutes, stirring frequently.

- In a food processor add in half of the onion, half of the Anaheim pepper, one whole Fresno chile, half of one red bell pepper, half of one poblano pepper, 4-8 cloves of garlic, half or full jalapeno, and corn. Place the guajillo chiles, ancho chiles into hot water to soften. About 4 minutes, then and add chiles to the food processor and combine. Pulse until coarsely chopped. See video above
- Add some oil & butter to a large pot ( few tablespoons) and add the chopped onion and all the peppers, sweat for 3 minutes. Next step add in the chiles from the food processor and cook for another 2 to 3 minutes. (Releasing the peppers/chiles natural water & oils). Add the ground beef next and combine. Repeat with the cubed chuck roast or brisket and cook for 2 minutes. (Browning the cubed beef first brings more flavor) (If you use brisket expect longer cooking time till tender). Add all dry herbs & spices, plus Salt (Add salt to your tastes-Tbsp). Lastly, add the Beef stock. ( If you don't have beef stock or beef broth, use chicken stock instead).
- If using Chuck Beef allow the chili to cook at least 30 minutes up to a few hours or longer. If the chili reduces too much, add more stock or water. While cooking the chili, partly cover the top so it will not reduce too quickly.
