GRILLED ASIAN FLANK STEAK

- In a small bowl, combine the first 8 ingredients. Pour 3/4 cup marinade into a shallow dish; add the steak and turn to coat. Cover; refrigerate for 4 hours or overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill steak, covered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting occasionally with reserved marinade. To serve, thinly slice across the grain.

- In a shallow dish, combine the first 7 ingredients; add steak and turn to coat. Cover and refrigerate overnight. , Drain and discard marinade. Grill steak, covered, over medium heat for 6-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes., Thinly slice steak across the grain. Drizzle with hoisin sauce; garnish with onions. Sprinkle with sesame seeds if desired.

GRILLED ASIAN FLANK STEAK WITH SWEET SLAW

Steps:
- Prepare barbecue (medium heat). Mix soy sauce, oil, 3 teaspoons ginger, and garlic in resealable plastic bag. Add flank steak and seal bag; turn to coat. Let stand at room temperature 30 minutes, turning occasionally.
- Stir sugar and vinegar in small saucepan over medium heat until sugar dissolves; remove from heat. Add jalapeños and remaining 2 teaspoons ginger. Place cabbage and 1/2 cup green onions in medium bowl.
- Pour vinegar mixture over and toss to coat. Season with salt and pepper. Let stand while grilling steak, tossing occasionally.
- Grill steak until cooked to desired doneness, about 6 minutes per side for medium-rare. Transfer to work surface. Let rest 10 minutes. Slice steak thinly against grain. Sprinkle 1/4 cup green onions over slaw.
MARLEE'S ASIAN FLANK STEAK
This recipe appeared in my local newspaper as part of a syndicated column "Fave Foods of the Famous." This recipe is from the Academy-Award-winning deaf actress Marlee Matlin. This is one of my favorite flank steak recipes, and worth the trouble to find Chinkiang Vinegar (try Whole Foods or The Fresh Market, if these stores are in your area).

Steps:
- In a bowl, mix vinegar, soy sauce, worcestershire sauce, orange juice, garlic, salt, pepper, and lemon pepper. (The orange should be the dominant taste, so add juice if needed).
- Place steak in container and pour marinade over it, then add onions on top. Let sit in refrigerator for at least one hour.
- Grill to desired level of doneness.

GRILLED ASIAN FLANK STEAK WITH SWEET NAPA SLAW
This is from Bon Appetit. I love flank steak and often make it marinated with equal parts soy sauce, vinegar and oil and then grill after 24 hours. This is a nice variation and the slaw is good too!

- Whisk together ingredients for marinade, pour over steak in a shallow dish or zip top bag. Allow to marinate for several hours or overnight (the longer, the better).
- For Gas Grill: Turn all burners on high and close the lid, allowing grill to warm up for about 5 minutes. Clean grates. Place flank steak in the front and center of the grill. Cook for 1-2 minutes, then flip. Continue flipping every 1-2 minutes, until done, about 10 minutes total cooking time.
- Place oven rack on highest position and turn on broiler. Line a baking sheet with foil and fit with a cooling rack if possible. Place steak on baking sheet and place under the broiler for about 4 minutes, until starting to brown. Flip and cook for another 4 minutes, or until cooked to desired doneness.
