CONGA SQUARES
My mother, Elaine, made these for us regularly for us in the 60's for after school treats. They are about 20 minutes from start to finish! The fun thing with this recipe you can add coconut, nuts, or butterscotch chips.

Steps:
- In mixing bowl: measure 2 cups brown sugar, vegetable oil, and eggs. Cream on medium for 3 minutes. Add vanilla. Slowly add white flour and baking powder and salt. Add baking soda mixed in hot water separately.
- Add chocolate chips, and walnuts if desired. (Or substitute coconut, nuts, or butterscotch chips.)
- Pour batter into a 14 x 17 inch pan. Bake for 10 minutes at 400 degrees F (205 degrees C) until just golden. Take out of oven just before you think they are done. They cool in the pan. Cut and serve. Try nutmeg and lemon flavoring for variety, reduce lemon to 1 teaspoon.

CONGO SQUARES
This recipe was given to me nearly 50 years ago, at a company picnic, and it's our family's favorite dessert. Now my grandchildren bake it for their families. When each of our three sons got serious about a girl, sure enough, I'd get a call from a young lady requesting "his favorite dish". I always gave the girls this recipe.

Steps:
- In a saucepan, melt shortening over medium heat. Stir in brown sugar. Cool slightly. Combine flour, baking powder and salt; add gradually with eggs to shortening mixture. Stir in the vanilla, chips and nuts (batter will be very stiff). , Spread into a greased and floured 13x9-in. baking pan. Bake at 350° for 25-30 minutes. Cut into squares while warm.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking pan. Set aside.
- In a large mixing bowl, combine butter or margarine and brown sugar; cool slightly. Beat in eggs, one at a time. In a separate bowl, combine flour, baking powder, and salt; add to sugar mixture and mix well. Stir in nuts and chocolate chips.
- Pour into prepared pan. Bake for 25 to 30 minutes. When almost cool, cut into 48 squares.

This recipe was passed down from my Grandmother, when my mother and her family lived in India in the 30's and 40's. If you like Toll House Chocolate Chip Cookies you will love this recipe. They are simlar to a blonde brownie with chocolate chips, and nuts.

- Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick baking spray.
- Beat the butter and sugar until creamy. Add the eggs and vanilla and beat again.
- Stir together the flour, baking powder, and salt and slowly add to the butter mixture until a soft thick dough forms.

- In a medium bowl, whisk together the flour, baking powder and salt; set aside.

- Preheat the oven to 350°F. Line a 9×13 pan with parchment paper and coat with nonstick spray. Set aside.
- In the bowl of your stand mixer fitted with the paddle attachment mix the butter and the light and dark brown sugars together for 2 minutes on medium speed. Add in the eggs, vanilla, salt and baking powder and mix for an additional minute on medium, scraping the sides of the bowl as necessary.
- Turn the mixer to low and add in the flour, mixing until just combined.
- Finally add in both kinds of chocolate and stir to incorporate.
- Spread the dough into the prepared pan and bake for 30 minutes or until the edges are set and lightly golden and the center appears slightly under-baked.
- Remove the pan from the oven and allow the bars to cool completely before cutting.
- Alternately you can chill the bars before cutting.

- Preheat oven to 350 degrees.
- Sift flour, baking powder and salt in a large bowl and set aside.
- In another bowl combine butter and brown sugar using a mixer until blended.
- Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
- Add vanilla and mix well.
- Add in the flour mixture and mix until combined, then fold in chips and pecans.
- Lightly spray a 9 x 13 inch pan with non-stick cooking spray and spread batter evenly into dish.
