1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1 cup yellow cornmeal
1/2 cup butter
1 egg
3/4 cup milk

Steps:

  • Preheat oven to 375º F.
  • Grease muffin pan.
  • Mix dry ingredients together.
  • In a seperate bowl combine melted butter, egg and milk; mix well.
  • Add dry mix to wet mix and stir until just combined.
  • Spoon batter into muffin pan and bake for 15-20 minutes.
  • Serve hot.

1 cup cornmeal
1 cup all-purpose flour
⅓ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
1 egg, beaten
¼ cup canola oil
1 cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin pan or line with paper muffin liners.
  • In a large bowl, mix together corn meal, flour, sugar, baking powder and salt. Add egg, oil and milk; stir gently to combine. Spoon batter into prepared muffin cups.
  • Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.

3/4 cup chopped green pepper
3/4 cup chopped sweet red pepper
1/2 cup chopped onion
1/2 cup butter, divided
1-1/2 cups cornmeal
1-1/4 cups all-purpose flour
1/3 cup sugar
3 tablespoons cornstarch
2-1/2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
1 cup 2% milk
1 cup shredded Mexican cheese blend
CILANTRO BUTTER:
1/2 cup butter, softened
1 tablespoon minced fresh cilantro
1/4 teaspoon grated lime zest

Steps:

  • In a large skillet, saute peppers and onion in 2 tablespoons butter for 3-4 minutes or until tender. In a large bowl, combine the cornmeal, flour, sugar, cornstarch, baking powder and salt. Melt the remaining butter. Whisk in the eggs and milk until combined. Stir into dry ingredients just until moistened. Fold in pepper mixture and cheese., Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Meanwhile, in a small bowl, combine spread ingredients. Cool muffins for 5 minutes before removing from pan to a wire rack. Serve warm with butter.

1-1/4 cups all-purpose flour
3/4 cup cornmeal
2 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
1 egg
1 cup milk
1/4 cup butter, melted
1 medium carrot, shredded
1/3 cup chopped green pepper

Steps:

  • In a large bowl, combine flour, cornmeal, sugar, baking powder and salt. In another bowl, combine egg, milk and butter; stir into dry ingredients just until moistened. Fold in carrot and green pepper., Fill greased or paper-lined muffin cups two-thirds full. Bake at 425° for 14-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1 cup yellow cornmeal
½ cup white sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup buttermilk
½ cup butter, melted
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
  • Mix flour, cornmeal, sugar, baking powder, and salt in a large bowl. Add buttermilk, butter, and egg; mix well. Spoon the batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 12 to 15 minutes. Cool in the pans 10 to 15 minutes before removing from pan to cool completely on a wire rack.

1/2 tsp baking soda
1/2 tsp salt
2 eggs, beaten
1 c low-fat sour cream
1/4 c melted butter
1/2 c diced bell peppers (can use hot peppers, too)
1/4 c corn kernels
2 scallions, chopped

Steps:

  • 1. Pre-heat oven to 400. Mix first 6 ingredients in a bowl.
  • 2. Stir in eggs, sour cream and butter until just blended.
  • 3. Fold in peppers, corn and scallions.
  • 4. Spoon batter into well-greased muffin pan. Bake 15 - 18 minutes or until done.
