3 cups (420 g) all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 and 1/2 cups (3 sticks/340 g) unsalted butter, softened to room temperature
1 and 3/4 cups (350 g) granulated sugar
5 large eggs
1 tablespoon pure vanilla extract
1 and 1/2 cups (360 ml) buttermilk
3/4 cup sprinkles
1 and 1/2 cups (3 sticks/340 g) unsalted butter, softened to room temperature
1/8 teaspoon salt
5-6 cups (600-700 g) powdered sugar, sifted
5 tablespoons (75 ml) heavy cream
1 tablespoon pure vanilla extract

Steps:

  • Preheat oven to 350°F/180 °C. Butter three 9-inch cake pans that are at least 2-inch high, and line the bottoms with parchment paper.
  • In a medium bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, 3-4 minutes. Scrape down the sides and bottom of the bowl as needed. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract. With the mixer on low speed, add the flour mixture in three additions alternating with the buttermilk in two additions, beginning and ending with the flour mixture. Do not overmix this batter. The less you mix, the lighter the cake will be. Fold in sprinkles.
  • Divide batter evenly between prepared pans. Bake for 25-30 minutes until a toothpick inserted into the center of the cakes comes out clean. Allow cakes to cool for 15 minutes, then gently remove from pan and allow them to cool completely on a wire rack.
  • Frosting: In the bowl of an electric mixer fitted with the paddle attachment, beat butter and salt on medium speed until smooth and creamy, about 2 minutes. Add 5 cups powdered sugar, heavy cream, and vanilla. Beat on low speed for 30 seconds, then increase speed to high and beat for 2 minutes. Beat in more powdered sugar if frosting is too thin.
  • Assembly: If the cakes rose too much, cut their rounded top with a knife to make them flat. Set one cake layer on a plate or cake stand. Evenly spread a thick layer of the frosting over the cake to the edge. Top with the second cake layer and spread a thick layer of the frosting. Finish with the third cake layer. Spread frosting over the top and sides of the cake. Cake should be kept in the fridge, but bring it to room temperature before serving.

Water, vegetable oil and eggs called for on cake mix box
1/2 cup Betty Crocker™ Decors Rainbow Mix
1 container Betty Crocker™ Whipped Whipped Cream Frosting
1/3 cup Betty Crocker™ Decors Rainbow Mix
20 graham cracker squares (3-inch)
1/2 container Betty Crocker™ Whipped Whipped Cream Frosting
Additional Betty Crocker™ Decors Rainbow Mix

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Generously spray bottoms and sides of 2 (9-inch) round cake pans with baking spray with flour.
  • In large bowl, beat cake mix, oil and eggs with electric mixer on medium speed until combined. Gently fold in 1/2 cup decors. Divide batter evenly between pans.
  • Bake 20 to 25 minutes or until cake springs back when touched lightly in center. Remove from oven to cooling racks; cool in pans 5 minutes. Turn cakes out of pans onto cooling racks; cool completely, about 45 minutes.
  • Meanwhile, in medium bowl, stir together 1 container frosting and 1/3 cup decors.
  • When cakes are cool, level cakes with large serrated knife. Place 1 cake layer on serving plate or cake stand. Top with thin layer of frosting. Place second cake layer on top. Use remaining frosting to cover sides and top of cake.
  • Cut graham crackers into pieces with large knife; place randomly on sides of cake.
  • Transfer 1/2 container (2/3 cup) frosting to decorating bag fitted with large star tip. Pipe 12 rosettes around top edge of cake.
  • Use small round cookie cutter to cut 12 rounds from remaining graham crackers. Place additional decors in small bowl; place remaining frosting in separate small bowl. Dunk each cracker round in frosting then dip into decors. Insert each dipped cracker upright into 1 rosette on top of cake.
  • Sprinkle top of cake with additional decors. Store cake loosely covered at room temperature.

This is from Betty Crocker ... I am posting the recipe as it is on the website, but I didn't follow it exactly. I used Duncan Hines' butter golden recipe cake mix and frosting. I didn't use Betty Crocker sprinkles or icing either, and I didn't measure my sprinkles!! This is a very cheerful-looking cake, so it would probably go well with a child's birthday party. Prep time includes cooling time for the cakes.

1 (18 1/4 ounce) box betty crocker supermoist white cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 egg whites
1 (1 3/4 ounce) bottle betty crocker decors rainbow mix candy sprinkles
1 (1 lb) container betty crocker rich & creamy vanilla frosting
2 -4 different colors betty crocker decorating icing (in 4.25-oz tubes)

Steps:

  • Heat oven to 350°F Grease bottoms only of 2 (8-inch or 9-inch) round cake pans with shortening (do not spray with cooking spray).
  • In large bowl, beat cake mix, water, oil and egg whites with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Reserve 1 tablespoon candy sprinkles for decoration. Stir remaining sprinkles into batter. Pour into pans.
  • Bake 8-inch rounds 27 to 32 minutes, 9-inch rounds 23 to 28 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove from pans to cooling racks. Cool completely, about 1 hour.
  • Place 1 cake layer, rounded side down, on serving plate. Spread 1/3 cup frosting over layer. Top with second layer, rounded side up. Frost side and top of cake with remaining frosting.
  • Decorate top edge of cake with decorating icing in random squiggly pattern, overlapping colors. Sprinkle reserved candy sprinkles over top of cake.
  • High Altitude (3500-6500 ft): Use 9-inch pans. Bake 28 to 33 minutes.

1 cup unsalted butter, room temperature
1/3 cup vegetable oil
1-3/4 cups sugar
3 large eggs, room temperature
3 large egg whites, room temperature
1 tablespoon vanilla extract
3 cups cake flour
2 teaspoons baking powder
1 teaspoon salt
1 cup buttermilk, room temperature
1/4 cup rainbow sprinkles
1-1/2 cups unsalted butter, softened
4-1/2 cups confectioners' sugar, sifted
3 tablespoons heavy whipping cream
2 teaspoons clear vanilla extract
Soft pink paste food coloring

Steps:

  • Preheat oven to 325°. Grease a 13x9-in. baking dish. In a large bowl, cream butter, oil and sugar until light and fluffy, 5-7 minutes. Add eggs, then egg whites, 1 at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in sprinkles., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool completely on a wire rack., For buttercream, in a large bowl, beat butter until creamy. Gradually beat in confectioners' sugar until smooth. Add cream, vanilla and food coloring. Beat until light and fluffy, 5-7 minutes. Frost top of cake with frosting, and, if desired, top with additional sprinkles.

2-4 to 4 different colors betty crocker® decorating icing (in 4.25-oz tubes)

Steps:

  • 1. Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms only of two 8-inch or 9-inch round cake pans (do not spray with cooking spray)
  • 2. Make cake batter as directed on box. Reserve 1 tablespoon candy sprinkles for decoration. Stir remaining sprinkles into batter. Pour into pans.
  • 3. Bake as directed on box for 8-inch or 9-inch rounds. Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove from pans to cooling racks. Cool completely, about 1 hour.
  • 4. Place 1 cake layer, rounded side down, on serving plate. Spread 1/3 cup frosting over layer. Top with second layer, rounded side up. Frost side and top of cake with remaining frosting
