CONEY ISLAND HOT DOGS
The story of how the Coney Island hog dog got to the Midwest is pretty straightforward, but no one really knows exactly how the wiener first came to be topped with what is basically a hot meat relish. I have no idea how authentic this is, and have never been to Detroit, or even Flint. I have had Nathan's® version, which I enjoyed, but the word on the street is that it's not nearly as good as the relatives it spawned.

HUNGARIAN CONEY ISLAND HOT DOG SAUCE
This recipe uses paprika instead of chili powder as the base seasoning, and gives the sauce a distinct Hungarian goulash taste. As with all sauces, this one will be even tastier if refrigerated and then reheated and served the next day.

Steps:
- Sauté ground beef, stirring frequently to break the meat into small pieces, until brown. Remove from heat and drain grease.
- Sauté chopped onion, garlic and Hungarian pepper until tender. Add ground beef, marjoram and thyme. Stir to mix ingredients evenly throughout.
- Slowly add the tomato puree. Add paprika and again stir the mixture. Add vinegar, Worcestershire sauce and mustard. Add water to thin to preferred texture; not more than 8 oz. should be sufficient.
- Simmer sauce on low heat in a covered pot for about two hours. Allow sauce to cool and salt to taste. Hungarian peppers are the mildest of the hot peppers, and if you desire more heat, add Tabasco or your favorite hot sauce to taste, then reheat for about ½ hour.
- Serve over hot dogs on buns. Offer chopped Vidalia onion, and for an additional Hungarian touch, add a dab of sour cream on top of the hot dog.

Stir in the chili powder, cumin, salt, garlic powder, and celery salt and cook for an additional 3 minutes. Stir in the tomato sauce, water, mustard and Worcestershire sauce. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until thickened. (If the chili becomes too thick, add more water to loosen it up.)

CONEY ISLAND HOT DOG SAUCE - LEPP FARM MARKET
From leppfarmmarket.com
- Heat frying pan over medium heat, add ground beef. Cook until beginning to brown, breaking up as many clumps as possible. My favourite method for this is to use a potato masher to make it as fine as possible. Add chopped onions and continue to cook until beef is no longer pink. Add all the spices, mixing well until evenly distributed. Add water and tomato paste and stir. Reduce heat to low and simmer for at least 30 minutes. You may simmer it longer, but watch and add more water if necessary. Coney Island sauce is typically saucier than chili.
- Remove from heat. If you want the sauce as finely textured as shown in the photo, place all the sauce in the bowl of a food processor bowl and pulse a few times until it’s finely chopped. Or, if you’re brave, carefully pulse it in short bursts with an immersion blender. I have a few stains on my shirt from doing that, but it works!
- Grill hot dogs and buns. Place a hot dog in the bun, top with Coney sauce and additional toppings. Pass the napkins!
