BASIC SWEET-ROLL DOUGH



Basic Sweet-Roll Dough image

Number Of Ingredients 9

1/2 cup whole milk
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
1/4 cup sugar
4 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 3/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon salt
1/2 teaspoon freshly grated nutmeg (optional)

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

This is the exact recipe we used at a local steakhouse where I worked for 15 years. It is great on pretty much any meat. You will probably want to use the conversion tool to make smaller batches. However, it will hold for a long time so if you like it make a nice big batch.

1 lb onion powder (sifted)
1 lb garlic salt
1 lb celery salt
1 lb paprika (sifted)
1 lb black pepper

Steps:

  • Mix well using a commercial mixer with a wire whisk if possible.
  • This makes enough for 1 week in a 200 seat steakhouse.

2 tablespoons shortening
3 tablespoons white sugar
1 cup hot water
1 (.25 ounce) package active dry yeast
1 egg, beaten
1 teaspoon salt
2 ¼ cups all-purpose flour

Steps:

  • In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
  • Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°)
1/2 cup sugar
1 large egg, room temperature
1/4 cup canola oil
2 teaspoons salt
6 to 6-1/2 cups all-purpose flour

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, egg, oil, salt, yeast mixture and 4 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide into four portions. Divide and shape each portion into 12 balls. Roll each ball into an 8-in. rope; tie into a loose knot. Tuck ends under. Place 2 in. apart on greased baking sheets. Cover; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°., Bake 15-20 minutes or until golden brown. Remove from pans to wire racks.

5 -6 cups flour
2 tablespoons sugar
2 teaspoons salt
1 tablespoon yeast
1/4 teaspoon baking soda
1 cup warm water
1 cup buttermilk, warm
2 teaspoons butter, melted
1 egg, slightly beaten

Steps:

  • Dissolve yeast in warm water; let stand about 5 minutes.
  • Add sugar, salt, soda and egg.
  • Add emough flour to make a stiff batter and beat about 2 minutes on medium speed of mixer.
  • Pour in warm buttermilk and melted butter.
  • Add enough flour to make a firm dough; knead until smooth and elastic, about 8 - 10 minutes.
  • Put in a large, buttered bowl and let rise until doubled, about 1 hour.
  • Punch dough down and let rest about 5 minutes.
  • Form dough into 24 balls and place in three buttered round cake pans. Rise, covered, until doubled in bulk.
  • Brush rolls with heavy cream or melted butter, if desired.
  • Bake at 350 for 25 - 30 minutes. Remove from pans and cool on wire rack.

You would never know that these rolls have cake mix as one of the main ingredients. These rolls are easy to make and delicious! Sometimes I don't use all white flour and put 1 to 1 1/2 cups of wheat flour in as well.

1/2 teaspoon salt
melted butter or margarine

Steps:

  • In a large mixing bowl, dissolve yeast in warm water.
  • Beat in the flour, dry cake mix and salt (do not knead). **When mixing if too dry you might want to add 1-2 tablespoons more of water at a time until you can get dough thoroughly mixed.
  • Place in a greased bowl.
  • Cover and let rise in a warm place until doubles, about 1 hour.
  • Punch dough down.
  • Divide dough in half.
  • Flour the surface where you are going to roll the dough out.
  • Roll each portion into a 12 inch circle.
  • Cut each circle into 12 wedges.
  • Roll up, beginning at the wide end.
  • Place point side down on greased baking sheets.
  • Brush with butter.
  • Cover and let rise until doubled, about 25 minutes.
  • Bake at 350 degrees for 12-15 minutes, or until golden brown.
