- Melt butter in a small saucepan over med-low heat.
- Sprinkle sweet rice flour over the butter. Season with salt and pepper. Whisk and let bubble for 2 minutes.
- Gradually whisk in the chicken broth and milk.
- Allow the mixture to cook and bubble until very thick, whisking frequently, about 5 minutes.
- Remove from heat. Use in recipe or store in the refrigerator for up to 3 days.

CONDENSED TOMATO SOUP RECIPE (GLUTEN-FREE)
Inspired by another recipe on here and its comments, I refined this recipe to substitute (approximately) for one can of tomato soup without the milk or water added. This way, it can be used as a gluten-free substitute in recipes that call for Campbells' condensed tomato soup.

Steps:
- Place tomato paste in pan or bowl and gradually stir in water. Add remaining ingredients and heat to dissolve chicken base or bouillon. If you want reconstituted soup, you can add an additional 12 oz. of milk (my preference) or water. If you use the milk, you may want to add 1/4 t. baking soda to the condensed mixture and heat both before adding tomato mixture to milk to prevent curdling.

- Pour the tomatoes through a strainer with a large measuring cup underneath to collect the liquid. Set the tomatoes aside. Add chicken stock to the tomato liquid until you have 3 1/2 cups of liquid. Set aside.
- Heat a large dutch oven over medium heat. Add the onion and cook until softened, 5-7 minutes. Add 2/3 of the reserved tomatoes, bay leaf, and brown sugar. Cook for about 10-15 minutes, stirring occasionally until the tomatoes carmelize slightly and sizzle.
- Add the tomato paste and flour and cook for another 2 minutes while stirring. Pour in the tomato liquid/stock mixture while stirring and scraping the bottom of the pan. Add the remaining tomatoes then bring to a simmer. Cook for 5-10 minutes.
- Meanwhile, combine the cashews and water in a high-speed blender. Blend until smooth and creamy. Remove the soup from the heat. Add the soup the blender with the cashew cream and puree in batches until smooth. Alternatively, you can puree the soup using an immersion blender, then stir in the cashew cream. Add the baking soda, then season to taste with salt and pepper. Add more stock to thin if necessary. Enjoy!

- Put chopped tomato into a large stock pot. Mash them with a potato masher to extract some of the juice. Begin to heat the tomatoes on a low-medium temperature while you prepare the rest of the vegetables.
- Add the rest of the ingredients to the tomatoes, and bring the mixture up to a boil over medium - medium/high heat, stirring often, being careful not to burn.
- Once ingredients have come to a boil, reduce heat and allow the vegetables to slowly boil for another 2 hours, or until the vegetables are all very soft.
- Use an immersion blender to puree the mixture until smooth. Note: If you do not have an immersion blender, you will have to wait for your soup to cool before using your regular blender. Hot liquids in a blender can be very dangerous.
